Heat a large pot over medium heat. Add the olive oil, onions, celery, bell peppers and garlic. Saute for 4-5 minutes. 2. Add the smoked paprika, thyme, oregano, bay leaf, tomato paste and apple cider vinegar. Cook for 1 minute. 3. Rinse and drain the beans. Pour them in the pot with the broth. Season to taste with salt and pepper. Let simmer for 15 minutes. 4. Remove ½ cup of beans to a bowl and, using a fork, mash them and stir back into the pot to enhance the creamy texture of the dish.
