Estate Argyros Assyrtiko Key Selling Points ESTATE ARGYROS ASSYRTIKO The estate vineyards for the Estate Assyrtiko are located primarily in Episkopi and Pyrgos, which are prime locations for Assyrtiko. While the average age of the ungrafted vines is 70 years old, some vines are over 200+ years old. In addition, the rootstock of some vines can be several centuries old! The vines are trained into basket-shaped bowls, a traditional technique called “kouloura.” The inorganic soil of the island of Santorini is naturally immune to Phylloxera and many other vineyard pests, reducing the need for synthetic herbicides & pesticides. Estate Argyros practices sustainable viticulture, using composted grape must as fertilizer, and plowing the vineyards with mules. They de- veloped their own Research and Develop- ment Department to regularly launch spe- cial projects to evaluate methods to im- prove cultivation techniques, vinification processes and varietal quality. Varietal Composition: 100% Assyrtiko Classification: PDO Santorini Vineyard Location: Akrotiri Village, 100+ year old vines Vinification: Classic white vinification. Skin contact method for 6 – 8 hours in low temperature. After careful pressing and the beginning of the fermen- tation in stainless inox tanks, the must is filled in oak barrels for the completion of the fermentation. Maturation: 2 years total (12 months in 225Lt medium toast and 12 months in the bottle Alcohol: 14.0% Total Acidity: 6.8gr/l pH: 3.15 Winemaker Notes: This wine features a golden color and a huge bouquet of toast, peach, bay leaf, honey, golden apple, spice, resin and purple flowers.
