Maja Blanca Recipe Maja Blanca is a Filipino dessert made from coconut milk, cornstarch, and sugar. Often called Coconut Pudding, this luscious dessert is easy to make and the ingredients are very common.Unknown to many, the original Maja Blanca Recipe does not include corn and milk. In this recipe, I added whole sweet kernel corn and condensed milk for added taste and a more creamy texture.Since Christmas season is just around the corner, this would make a very good holiday dessert especially during potluck Christmas Parties and Noche Buena as well. Preparing maja blanca is easy. All you need to do is follow each step indicated in this maja blanca recipe. It is important that you give the coconut milk sometime to cook; it is also recommended that you try your best to mix all the ingredients until the texture becomes as smooth at it can be. For better results, cook the corn a little longer to release its flavor. Try this Maja Blanca Recipe and let me know what you think. Maja Blanca Recipe Ingredients • 4 cups coconut milk • 3/4 cup cornstarch • 14 ounces condensed milk • 3/4 cup fresh milk • 3/4 cup granulated sugar • 15 ounces whole sweet kernel corn • 5 tbsp toasted grated coconut Cooking Procedure 1. Pour the coconut milk in a cooking pot and bring to a boil. 2. Add the sugar, condensed milk, and whole sweet kernel corn then stir until all the ingredients are evenly distributed. 3. Simmer for 8 minutes 4. Combine the fresh milk and cornstarch then whisk until the cornstarch is diluted 5. -

Barrio Fiesta With Shee Pagsuyoin and Mary Lim Maja Blanca (Coconut Pudding) Ingredients: 3 cans coconut milk (400 ml) 1 can evaporated milk (370 ml) 1 cup white sugar 1 cup cornstarch 1 can corn kernel (300g) Combine 1.5 cans of coconut milk, evaporated milk, sugar, and corn kernels in a saucepan over medium heat. Stir until sugar is completely dissolved. While waiting for it to boil, dissolve cornstarch in another 1.5 cans of coconut milk. Add into boiling mixture until fully thickened, stirring occasionally. Pour into a dish, and set aside to cool. Lumpiang Sariwa (Fresh Spring Rolls) Ingredients: 2-3 medium carrots, grated 1 lb mung bean sprouts ¼ lb sugar snap peas, slice into thin strips 1 extra firm tofu, slice into thin strips ½ lb ground pork 2 tbsps cooking oil 4 gloves garlic, minced 1 medium onion, chopped salt pepper peanut powder/ ground peanut sugar 8 tbsps oyster sauce 4 tbsps meat broth or water 4 tsps light soy sauce 3 tsps sugar spring roll wrapper Filling: Heat cooking oil in a frying pan. Saute garlic and onions. Stir fry ground pork. When pork starts to turn brown, add in vegetables, starting with carrots, sugar snap peas, tofu and mung bean sprouts. Simmer until crisp tender. Add salt and pepper to season. Transfer to a strainer. Drain and let cool. Mix peanut powder and sugar, then set aside. Sauce: In a small bowl, combine the oyster sauce, meat broth or water, soy sauce and sugar. Wrapping: Spread a teaspoon of peanut powder mix on the wrapper. -

Beatriz Dykes, PhD, RD, LD, FADA Background The Philippines is an archipelago (chain of islands) comprised of over 7,100 islands in the western Pacific Ocean. Originally inhabited by indigenous tribes such as the Negroid Aetas and the pro-Malays. Beginning in 300 BC up to 1500 AD, massive waves of Malays (from Malaysia, Sumatra, Singapore, Brunei, Burma, and Thailand) immigrated to the islands. Arab, Hindu and Chinese trading also led to permanent settlements during by these different groups during this period. In 1521, Spain colonized the Philippines, naming it after King Phillip II and bringing Christianity with them. The Spanish colonization which lasted 350 years, imparted a sense of identification with Western culture that formed an enduring part of the Philippine consciousness, unmatched anywhere else in Asia. The prevalence of Spanish names to this day (common first names like Ana, Beatriz, Consuelo, Maria and last names as Gonzales, Reyes, and Santos) reflects this long-standing influence of the Spanish culture. The United States acquired the Philippines from Spain for 20 million dollars after winning the Spanish-American war through the Treaty of Paris in 1898, introducing public education for the first time. During this period, health care, sanitation, road building, and a growing economy led to a higher standard of living among Filipinos and the Philippines became the third largest English speaking country in the world. Above all, the US occupation provided a basis for a democratic form of government. World War II had the Filipinos fighting alongside the Americans against the Japanese. The Death March and Corregidor became symbolic of the Philippine alliance with the United States. -
