The Gratin Dauphinois is definitely the most famous of all “Isérois” dishes. The expression was recorded for the first time in 1788 at a banquet but it existed long before that. This delicious course made from potatoes is at the same time creamy and meltingly soft. There are several variations of the Gratin Dauphinois but for the purists it is made without cheese or egg.

Peel and wash the potatoes. Bring the milk to the boil, take off the heat, add the salt, pepper and unpeeled garlic clove and leave to stand for 5 minutes. Cut the potatoes into 3 millimetre-thick slices (without washing them), lay in a saucepan, pour on the milk, bring to the boil and cook for 5 minutes. Butter a gratin dish, fill with the potatoes and even them out. Season the single cream with salt and a pinch of Cayenne pepper and pour over the potatoes. Finish off with the melted butter. Saint-etienne-de-Saint-Geoirs, the legend of mandrin known abroad for its international airport, Saint- Etienne-de-Saint-Geoirs is for the region’s inhabitants the city where Mandrin, a local hero nicknamed “the beloved robber”, grew up with his eight siblings. Born in 1725, Louis Mandrin was raised in a good family. Nothing destined him to become a smuggler until his father passed away when he was only 17 and left him at the head of his family. His trouble with the law, his brother’s hanging and the financial failure to provide mules for the French army fighting in Italy, lead him to rebel against the system.

Mandrin is a very popular character since he was opposed to the “fermiers généraux” who collected major unfair taxes on behalf of the king during the French “Ancien Régime”. Mandrin was also appreciated since smuggling enables the region’s inhabitants to get cheaper products than the ones sold on the market. The life of this complex character sometimes seen as an upholder of the law, sometimes as a shameless robber, ended in 1755, in Valence, where he was beaten to death.

Today, Mandrin’s legend is still alive in the heart of Saint-Etienne-de-Saint-Geoirs inhabitants. A place has been named after him, next to the ancient fortified house of Varanin, his mother’s house. Visitors can also see his ancient family home in front of the covered market. Every five years, the “Mandrinades” pay tribute to the memory of the “beloved robber”.
