Cooking with Faz Razeen Easy Chicken Parmigiana

Chicken Parmigiana, is a recipe that consists of breaded chicken breast covered in tomato sauce and mozzarella and Parmesan. The dish originated from Italy in the 20th century. It has been speculated that the dish is based on a combination of the Italian melanzane alla Parmigiana, a dish using breaded aubergine slices instead of chicken with a cotoletta - the word cotoletta is an Italian word for a veal breaded cutlet. Various breaded meat dishes prepared in Latin America were inspired by the cotoletta and are known as milanesa.

Serve: 2/3 Cooking Time: 60 minutes

Ingredients

2 Chicken breasts 2 Garlic cloves, finely crushed ½ cup of Bread crumbs Handful of grated Parmesan cheese Handful of chopped fresh parsley 1 egg, beaten 1-2 tablespoons Olive oil 350g Spaghetti pasta sauce 2oz (½ cup) sliced Mozzarella cheese

Method

Preheat oven to 180 C / Gas 4

Rub the chicken breasts with crushed garlic and salt and pepper, flatten with a mallet or back of a knife, cover and refrigerate for 2 hours in advance.

In a bowl, combine bread crumbs, Parmesan cheese and parsley, mix well. Dip chicken breasts in beaten egg and coat with bread crumb mixture.

Lightly grease a baking dish/tray. Place the coated chicken in a baking dish/tray and bake the chicken breasts in the oven for 40 minutes, or until chicken is fork- tender and juices run clear.

Pour ½ of the pasta sauce into a baking dish/tray. Place chicken over the sauce, and cover over with remaining sauce. Sprinkle parmesan cheese and place sliced mozzarella on top and return to the preheated oven for 20 minutes.

Serve with spaghetti or alternatively with vegetables. 12

Harbour Friends The Harbour Friends group meets every Wednesday evening at the Yacht Club from 7.30pm, simply to have a drink (tea and coffee also available) and chat in the first floor bar of the Yacht Club. We are Harbour residents, singles and couples, meeting together to make new friendships and generally celebrate life in the place we live. Everyone is invited to come along on a Wednesday evening to see what we do. We have use of the Yacht Club bar, and remember, we aim to be always friendly and welcoming. If you do come along and decide to join us, there’s a fee of £15 a year, after which you can also come to any of the organised events.

Please feel free to draw up a chair, introduce yourself and join in a conversation. There are no closed groups and existing members are aware of how daunting it can be as a new member - they of course would have been in the same position when they first came along. Please do not rely on HF members seeking you out – I’m afraid that, because we share the bar with yacht club members on a Wednesday evening, we might not know whether you are a yacht club or HF member.

If you are concerned about attending on your own, just let us know and we will arrange for an existing member to contact you and meet up at the door of the club. On Wednesday evenings there will be at least one committee member present for you to speak to with, or to ask any questions that you may have.

Dieppe It was early in June when 7 people went on a Harbour Friends’ Dieppe trip. We left the car at Newhaven and went as foot passengers, by Transmarche ferries, to Dieppe to stay at a local hotel.

Day 1 was spent viewing the delights of Dieppe itself, ending with a fish supper in the local restarant.

On day 2 we took the local bus to Treport, about 30 miles away. This is a lovely and interesting town which includes the funiculaire (lift) to the top of the cliffs. The weather was kind and the trip most enjoyable. Many thanks to Bryan Drewett for organising.

Bowls 20th June: 24 members went to Eastbourne Bowling Club for a 'bowls for fun' afternoon on 20th June.

As usual at this now annual event, the sun was shining brightly. Members received some coaching before taking part in a short triples competition - won by Mike Coleman, Jaqui Coleman and Des Davis. Followed by tea and cakes in the Clubhouse, a good afternoon was had by all. Well done to all.

Safari Lunch On the afternoon of Sunday 14th July, 24 Harbour Friends members enjoyed a Safari Lunch. This involved 4 groups of 6 people walking around both harbours, having starters, mains, desserts and coffee at different members’ homes. Continued on page 13 13

Many people took part, both singles and couples - and despite the earlier threatening weather the sun came out, and as a result many of the courses were served al fresco.

We all then met up at the final stop on South Harbour where tea, coffee, cheese & biscuits were available in the garden, and plenty of conversation engendered by the day’s food and conversations.

Once again it was a lovely afternoon of great eats and socialising, so thanks to Yvonne Leigh and Jenny Grover for organising this event for us, and we hope to be able to do it again next year. Thanks also to everyone who prepared the various courses.

Brighton and Hove Greyhounds 17th July This was a superb event, and one my husband and I had never been able to attend before. But the service and staff were first rate, the fun to be had with our prolific and costly bets (£1 each), and the excitement of picking the healthiest looking dog before each race, all added to the fun. And that’s not even to mention the lunch and bar. A good day had by all, thanks to Gloria for organising. Winner of the sweepstake was Jan Say, with Nina Turner and Jim Martin runners up.

The Shed project's aim is always to be led by the members, so if it does not currently provide something members want, suggestions are very welcomed. Sheds will be open on different days, but all will be open from 10am-4pm. The Eastbourne Shed is in Fort Lane and offers mainly wood based activities including general construction and woodturning. It’s workshop, however, would suit most craft type activities. This shed will be open Tuesday to Friday. Oscar Plumley is the Coordinator for this site.

The Langney Shed is based at the beautiful Langney Priory. Andy Fisher is the Shed Coordinator and it is open Monday, Tuesday and Wednesdays. It has wood and metal working facilities but its general-purpose workshop would, again, suit most creative and craft type activities.

The Hampden Park Shed is in the Brassey Parade shops near Hampden Park station. Jacqueline Isabeau-Doo is the Shed Coordinator for this shed. This shed will be providing a wide range of craft-based activities.

Anyone interested in joining or finding out more about the shed are encouraged to visit them. The shed’s Coordinators will be delighted to give a tour and show what is available.

Prospective members are welcome to attend some sessions initially to see if it is for them, maybe even complete a small project, and then should anyone wish to join there is a small subscription.

Eastbourne Fishermans Digital Camera Club

We have had a busy couple of months since our last report. The theme for our competition in June was Dusk to Dawn. The Judge for this competition was Tony Bentley and the winners were:

Our workshop for June covered how to take photos at dusk and included some time outside to put what was learnt into practice.

July’s workshop was a trip to Herstmonceux Windmill; a place well worth a visit. Many thanks to Sally from the Windmill for all her help in arranging this.

July’s competition was Open which meant Dawn in the Outback members were able to put in any themed photograph Steve Wood that they particularly liked. The Judge for this competition was Robin Harmsworth. The winners were:

We meet every second (workshops) and fourth Monday (competitions) in the month at The Fishermen’s Club in the upstairs room. Times are 7:15 for 7:30, usually finishing around 9.30, but some members do stay and have a drink and chat after. Anyone interested can either contact Steve Lashley, Chairman on 01323 478651 or just pop in on a Monday and come and see what we are about. We are a small friendly club and we all help each other with any problems we may have with cameras, processing etc. 17

Prom Turned into a Car Park As you can see from the photos below, the prom beside the water treatment works and further along towards the Sovereign Centre is being used as car park. Although certain groups are allowed vehicular access to the prom under EBC permits, the prom is now being used by anyone as a general car park.

The problem seems to stem from the fact the the access ramp from the waterworks roundabout has had its preventative, rising bollard damaged beyond repair. The local councillors are on the case and have been informed by EBC that a new barrier will be installed in the future to eliminate the problem. We suspect that the present bollard was deliberately vandalised to gain easy assess, so any new barrier needs to be much more robust.

A Celebration of Land and Sea

A Celebration of Land and Sea is a FREE event at Sovereign Harbour over the August Bank Holiday weekend.

Sovereign Harbour Yacht Club is, once again, pleased to be able to present their third annual Celebration of Land and Sea event. Starting on the evening of Friday 23rd August with one of the UK’s leading David Bowie tribute acts, this FREE family event boasts a brand new, all-weather Entertainments Marquee, BBQ Area and Bar and a host of local car, motorbike, motor-home and boat dealers displaying over 80 of their very latest models.

The event is held over the four days of the August bank holiday weekend and is run for charity with a percentage of the proceeds going to help the local Eastbourne lifeboat.

There is a wide-ranging live music schedule with great local bands, musicians and DJ’s playing under-cover every day, so a perfect place to grab a drink and chill-out with some live and local talent! The What’s-On schedule on the website also shows a local art show, children’s face-painting and a Meet and Greet a Greyhound event on the Monday.

Visitors to the event will also be able to try their hand at dinghy sailing in the harbour and will be able to watch the on-sea racing regatta from the nearby beaches.

The event is FREE for ALL visitors with plenty of on-site free parking and this year, the new all-weather marquee means that no live music performances will need to be cancelled due to the ‘summer’ weather!

A Celebration of Land and Sea starts on Friday evening 23rd August and runs until Monday 26th. The event opens at 10.00am daily.

Sovereign Harbour Photo Club

Well, aren’t we just loving the dry weather and light evenings. Summer always triggers our members to get out and about with their cameras and try to get creative.

A few weeks ago we started off our 3-monthly schedule at Seaford Head, with the classic views across to Beachy Head, the Seven Sisters and the coastguard cottages which manifests itself on so many computer screen-savers. A couple of examples are shown by our members on what was an ideal evening, with blue skies and sunshine.

I think everyone (including myself) got inspired recently, by the fantastic natural event of an electric storm over Eastbourne, with what turned out to be around 1000 lightning strikes. I had great success myself, with my camera firmly set on a tripod with a ten second time exposure, capturing repeated fork lightning displays, but inevitably, instinct says its time to go inside, just before the heavens opened. The media was saturated with very impressive examples and I even got one shown on BBC breakfast weather watchers.

The following week, we were indoors at our home base (Sovereign Harbour Yacht Club), where we undertook a request from them to photograph food. Their menu items, well at least some of them, so that it could be displayed on the menus and web site. A very successful evening transpired, with Andrew Barton at the helm, guided by our honorary member and mentor Ron McMillan, who used to undertake food photography professionally for many years. In good hands there then. I dare say regular visitors to SHYC will see the results publicised in due course. Many thanks to Andrew and Ron.

The following week, it was Bexhill, where the De La Warr Pavilion and surrounding area, makes an exceptional topic for architectural and abstract themed pictures. Again I’ve shown some examples by our members with varying amounts of artistic licence and editing (see next page).

This week, we continue the outside excursions, going to Lewis town, to capture some architecture again and street photography. There are some beautiful towns and villages in East Sussex, which just have to be exploited, for their potential.

Next week, we are outside locally, but doing natural light portraiture, but using reflectors, rather than flashes (break out the silver foil....lol).
