INGREDIENTS Let stand refrigerated 2-3 days before serving. 1 large jar herring (32 oz) 1 (32 oz) sour cream (prefer Breakstone – more expensive but worth the extra $) ½ cup mayo ¼ cup sugar ¼ cup lemon juice 1 large onion, sliced Peppercorns & whole allspice PASSOVER POSSIBILITIES FAUX BREAD & MUFFINS PASSOVER BAGELS SONJA KANTOR PASSOVER BAGELS CAROLYN HISER BLUEBERRY MUFFINS DANA KATZ BLUEBERRY MUFFINS CAROLYN HISER PASSOVER RECIPE CARD NAME OF RECIPE RECIPE FROM Passover Bagels Sonja Kantor from Arlene Biel NUMBER OF SERVINGS 4-7 PREPARATION Boil water and add oil.In a separate bowl, mix matzah meal, salt and sugar. INGREDIENTS Mix water and oil into dry mixture. 3/4 cup vegetable oil 2 cup matzah meal Mix in eggs, one by one. 1/2 tsp salt 1 T sugar Put a small amount of oil on 4 eggs your hands to avoid mixture extra oil for hands sticking to hands. Shape into bagels. Press center to make a hole. Bake on greased cookie sheet on middle rack at 350 for one hour. Bring oil and water to a boil and INGREDIENTS then add to matzo meal mixture 2 cups matzo meal and mix well. 1 tsp salt 1 T sugar Beat in eggs thoroughly, one at 1 cup water a time. ½ cup oil 4 eggs Allow to stand 15 minutes. With oiled hands shape into rolls and place on a well-greased cookie sheet. Bake at 375 for 50 minutes or until golden brown. Cream together margarine and sugar. INGREDIENTS Mix together all ingredients ½ cup margarine through the vanilla and then fold ¾ - 1 cup sugar in the frozen blueberries. 3 eggs ¼ tsp salt Put into muffin tins (paper cups ½ tsp orange juice make them easier to handle) and ½ cup cake flour sprinkle with cinnamon and ¼ cup potato starch sugar. 1 tsp vanilla 1 ½ cups frozen blueberries Bake for 35 to 45 minutes PASSOVER RECIPE CARD NAME OF RECIPE RECIPE FROM Passover Blueberry Muffins Carolyn Hiser NUMBER OF SERVINGS 4-6 PREPARATION Preheat oven to 325. Mix sugar and oil. Add eggs and beat mixture well. Combine all ingredients and mix well. INGREDIENTS Pour the mixture into a well- greased 7 x 11 inch baking pan. ½ cup margarine, melted 1 cup grated peeled sweet Bake for 45 minutes or until potatoes brown. 1 cup grated peeled carrots 1 cup grated peeled apples ½ cup matza meal 2 T sweet wine ½ tsp cinnamon ½ cup white sugar ¼ cup brown sugar PASSOVER RECIPE CARD NAME OF RECIPE RECIPE FROM Pastelle for Passover Cantor Janice Roger from Gladys Nisenbaum NUMBER OF SERVINGS 6-8 PREPARATION Preheat oven to 350 degrees. Saute onion in oil; drain. Add ground beef and cook until beef is browned. Add salt and pepper INGREDIENTS and 1 can of chicken soup. Cook until liquid evaporates. Cool meat mixture, then add eggs. 12 oz chopped onions 2 lb ground beef Lightly wet matza with warm 1 ½ tsp pepper water. Heat second can of 2 tsp salt soup and place in a square glass 3 eggs dish. Dip matza in soup and place 1 box matza (less 2 boards) on a plate until limp. 2-15oz cans chicken broth 4 oz crushed walnuts Heavily grease the bottom of a 9x13 pan; fit matza into it. Put in meat mixture and spread to cover. Cover meatwith a layer of matza. Sprinkle matza with oil and ground nuts. Add remaining chicken soup. Bake on the lowest rack of oven for 20 to 25 minutes. While oven is preheating, in a medium bowl, mix together INGREDIENTS almond butter sauce ingredients until combined. If your sauce is very thick, add a bit of warm For almond sauce water to make it spreadable. When I was in law school, I learned to cook vegetarian and enjoyed what I was making. It was mostly beans, grains and pasta, so not suitable for Passover. During Passover, I ate mostly meat. But the rest of the year, I was increasingly eating vegetarian. By 2009, I was eating meat so rarely that I was no longer able to digest it properly. When I ate meat, I would get indigestion and stomach cramps. I didn't mind it when the meal was special or particularly good, but I couldn't eat like that day-after-day. And then came Passover, when I didn't know any appropriate recipes that weren't meat for eight straight days. By the end of Passover that year, I was feeling very sick and realized that I needed to come up with vegetarian options for Passover. I spent the next year coming up with ideas and experimenting with them. Thus was born A Very Veggie Pesach, a series of vegetarian recipes for Passover posted on my rarely-used blog. The first year, I posted eight recipes: enough for each night of Passover. Some of them were vegan and many were gluten-free for my relatives and friends with celiac disease. I have added a few recipes every year and now have over 20 recipes in this book. These recipes are designed to satisfy a fairly strict Orthodox standard for Passover, relying on Passover guides from the Orthodox Union (OU), Star-K and the Chicago Rabbinical Council (CRC).

    INGREDIENTS: MACRINA BAKERY Makes one 10" tart LEMON TART 2-1/4 cups granulated sugar 2 tablespoons white cornmeal LEMON MERINGUE 1-1/2 tablespoons all-purpose flour 6 eggs TART 1 tablespoon freshly grated lemon zest 3/4 cup freshly squeezed lemon juice 1/4 cup whole milk 6 tablespoons unsalted butter, melted 1 pre-baked (10-inch) Flaky Pie Dough tart shell LAVENDER MERINGUE* 4 egg whites 1/2 teaspoon cream of tartar 1/2 cup sugar 1/2 teaspoon dried lavender, ground 3/4 cup powdered sugar, sifted DIRECTIONS: MAKING THE TART Prepare all of the ingredients and let them sit at room temperature for 30 minutes. Preheat oven to 325°F Sift sugar, cornmeal and flour into a large bowl. Crack the eggs into the sugar mixture one at a time, whisking between each addition. Continue whisking as you add the lemon zest, lemon juice, milk, and melted butter, making sure each ingredient is thoroughly incorporated before adding another. Make sure that your pre-baked tart shell is not cracked, then place it on a rimmed baking sheet. Pour the filling into the shell, until it reaches just below the top. Bake for 40 to 45 minutes, until the center is set and the surface is golden brown. Check the tart after the first 15 minutes of baking to make sure it is browning evenly. If one side of the tart is browning more quickly than the other, carefully rotate the baking sheet to even out the baking. Let the tart cool on a wire rack for at least 1 hour.

Allow to mix and begin introducing cold butter morsels. Stop mixing when it starts forming little crumbled pieces of dough. Pour out mixture onto a baking tray and bake for 12-15 minutes in the oven. Let cool. Preparing the meringue In a bowl mix together egg whites and sugar. Using a whisk, bring up the egg whites to 40°C on a double boiler, or slightly warmer than body temperature or until all the sugar is melted. Off the heat, using an electric mixer, beat the egg whites until stiff and cooled down. To serve To assemble serve a small amount of lemon cream using a piping bag at the bottom of glass jar.

    Classic Lemon Tart with Limoncello Strawberries Lemon tart has to be one of my all-time favourite desserts. Smooth, creamy and zingy, it really is a perfect way to end a meal and can be enjoyed all year round. I like to make the first of the year in January, a refreshing move forward after the heaviness of Christmas, then when strawberries come into season, I macerate some in Limoncello and serve them alongside the tart with added texture in the form of meringue kisses. Serving Size Serves 10-12 – Use a 23cm (9 inch) round, 3cm (1¼ inch) deep tin (pan) Cook Time Blind bake WHAT YOU NEED Base: 1 quantity of Sweet Shortcrust Pastry Lemon Custard 6 eggs 240g (8½oz/scant 1¼ cups) caster (superfine) sugar 4 lemons 170ml (6fl oz/¾ cup) double (heavy) cream Strawberries 300g (10½oz) strawberries, washed, hulled and cut into halves or quarters depending on size 2 tbsp caster (superfine) sugar 1 tbsp Limoncello (optional) To Finish Meringue Kisses (optional) Basil leaves (optional) Edible flowers (optional) WHAT TO DO Make, line and blind bake your pastry, reserving any leftover pastry for another use. Leave the pastry case (shell) to cool completely, trim off any excess and leave the case in its tin (pan). Turn the oven down to 120°C fan/140°C/275°F/gas 1. To make the lemon custard, crack the eggs into a large bowl and beat together using a fork, trying not to incorporate too much air while doing so. Add the sugar, zest of 1 of the lemons and juice of all 4, and finally the cream.
