RESEARCH AND DEVELOPMENT IN THE EUROPEAN UNION Kamut Enterprises of bvba (KEE) is one of 16 Small and Medium-Sized Enterprises (SMEs) involved in developing food products and pursuing health claims, along with 12 leading research organizations with expertise in health claims legislation, and food and health research.

The project is headed by BACCHUS (Beneficial effects of dietary bioactive peptides and polyphenols on cardiovascular health in humans), a collaborative project supported by EU grant funds with the research theme of “food, agriculture and fisheries and .” The purpose of BACCHUS is developing solu- tions such as improved dietary habits, including the increased consumption of foods containing bioactive substances purported to be beneficial for the cardiovascular health.

BACHUS supports European SMEs creating new food products, which boost cardiovascular health, using scientific evidence and tools essential for making health claims. The overarching goal of the work is to re- duce deaths due in the EU. Cardiovascular disease accounts for 47% in deaths in the EU and consumes a tremendous amount of health care resources.

SPOTLIGHT ON KAMUT® BRAND KHORASAN USER: THE BECKERS

Located in Woodstock, GA, the Bread Beckers started out selling simple bread-making equipment. Today, they are much more than just a kitchen store; they are a real food store, where customer education, service and sat- isfaction are the ultimate goal. Their story began in 1992 when Sue Becker started reading about widespread health problems in relation to our “modern” diet. The medical journal she was reading suggested that white and the bread on the shelves in most supermarkets today have little in common with the healthy whole grain of our ancestors. After her research, Sue was convinced enough to buy a grain mill and start making all of her family’s bread. They have created recipes that use the flour in a variety of baked good and the wheat berries for hot and cold salads. Whole Grains—Continued they do not mean that the product is “Whole Grain.” The Whole Grains Council website is a great resource for learning more about whole grains and features a database of products carrying the stamp.

Also beware that just because a food product is whole grain, it does not mean it is the healthiest food concontinued— choice for you. The Harvard School of Public Health recently released a report noting that “whole grain” labeling can be confusing and inconsistent and that “whole grain” - labeled foods can also include more and than is healthy. It is always important to read labels and select products that fit best with your diet and lifestyle. Chipotle , Avocado and KAMUT® Brand Khorasan Wheat Salad

Ingredients

Instructions

 Preheat oven to 350˚.  Cover the KAMUT® wheat with water and bring to a boil. Let cook until the KAMUT® Like us on Facebook, follow us on wheat is tender, roughly an hour*. Drain and set aside. Toss together the KAMUT® wheat berries, roasted carrots, avocado, and sunflower seeds. Whisk together olive oil, honey, and lime juice. Drizzle over KAMUT® wheat and lightly toss. Serve with a sprinkle of cilantro. Notes *It is recommend to soak KAMUT® Brand khorasan wheat before cooking, preferably overnight. This will cut down on cooking time.
