Guidance for Vegans GUIDANCE FOR VEGANS Effective from: 19/06/2017. The list contains Aldi own label products that are suitable for vegan diets. This list is based on products that do not contain ingredients derived or produced from animals. The products listed are therefore suitable for people who do not eat any meat, poultry, fish, shellfish, milk, milk products, eggs and honey. Controls are in place to minimise the risk of cross contamination with animal products. But a recently released report on gluten in ground spices from the Canadian Food Inspection Agency has called into question whether spices may be contaminated with wheat, barley, and/or rye. Watchdog Definition of Spice The Food and Drug Administration defines spice as “any aromatic vegetable substance in the whole, broken, or ground form…whose significant function in food is seasoningProperty rather than nutritional.” What some people think of as herbs, such as thyme and sage because they come from the leafy portionFree of the plant are included in the FDA’s definition of spice as are “spices” that come from the other portions of the plant (e.g., roots, flowers, and seeds), such as cumin and clove. Canadian Food Inspection Agency Report: Gluten in Ground Spices The CFIA tested 268 samples of ground spices. 23 samples were domestically processed and 245 were imported. CFIA defines domestically processed spices as including spices being ground and/or packaged in Canada. According to correspondence Gluten Free WatchdogGluten had with CFIA, samples were tested using the Ridascreen Gliadin R7001 assay and extracted with the cocktail solution R7006 and the addition of milk powder (there will be more information about the use of milk powder later on in this report).

    Don’t Pass the Salt! Low Sodium Seasoning Guide 1. Resist the urge to use salt in cooking or using the salt shaker. One teaspoon of salt is equal to 2,300 mg of sodium. 2. Use spices and herbs to flavor your foods to add interest and variety. 3. Herb Blends These herb blends can be found in your local store to add flavor to the foods you enjoy. Be sure to check the label to be sure they do not contain salt or sodium on the list of ingredients. How to cook with herbs and spices: Finding “Hidden” salt on a label To release more flavor and Sodium benzoate (a aroma, finely chop fresh herbs preservative) before using in the recipe. Vegetarians (also known as lacto-ovo vegetarians) don’t eat meat but do eat dairy and eggs; pescatarians (or pesco-vegetarians) eat fish but no other meats; and semivegetarians (or flexitarians) occasionally eat fish, poultry, or meat. Of course, many people call themselves vegetarians but follow eating patterns that diverge from these definitions. For example, some people may be nearly vegan, eating dairy and eggs only on rare occasions, and some may call themselves vegetarians but still eat small amounts of meat. Since there are many variations of a plant-based diet, it’s important for health professionals, including dietitians, to establish a person’s true eating pattern to accurately assess nutritional intake and status.7 Brief History of Plant-Based Eating While plant-based eating may appear to be a new trend, it actually dates back to ancient times. Commercially, free glutamate is available in form of monosodium glutamate (MSG) crystal. Seasoning or premix may also contain free glutamate or MSG. The aim of the present study was focus on the determination of the usage and potential/actual exposure of consumers to free glutamate from condi- ment and seasonings. There were several steps of the study, i.e. survey, laboratory analyses, data analyses, and evalua- tion of total exposure of free glutamate from condiment and seasonings. The survey was conducted to the 110 house- holds in Bogor (rural) and 112 households in Jakarta (urban). The samples of condiment/seasoning were analyzed by using high performance liquid chromatography (HPLC) with fluorescent detector. The condiment/seasonings were categorized into 15 types, i.e. sweet soy sauce, salty soy sauce, fermented soybean paste, tomato sauce, MSG, premix seasoning, fermented fish/shrimp paste, chili sauce, ready to use seasoning, seasoned flour, dip and sauce, mayonnaise and mustard, spread, oyster and fish sauce, and teriyaki and others.
