    Introduction My name is Aren Lane and I am from the Grass Valley Creek 4-H club. This book is my Emerald Star Project for 2008. It is a collection of the above-average recipes from 4-H Favorite Foods Day since 1978. Favorite Foods Day is an annual 4-H County Event that is held the same day as 4-H Achievement Day. Kids bring their favorite foods. The 4-H members are separated into junior, intermediate, and senior categories. Each group is judged by three judges. They judge you on how well you present your food, how appealing your food is to the eye, and how good your food tastes. Although these recipes are excellent, some of the earlier ones didn’t include all of the ingredients needed to make the complete recipe, so where needed, I listed the missing ingredients in italics. However, overall I am confident that this recipe book is complete and contains both usual and unusual types of food. So I hope that you enjoy this book, and that you cook some top-notch food.     Lenten Applesauce Cake 2 cups flour 1 tsp baking powder 1 cups sugar ½ cup margarine, melted (or 1 tsp cinnamon vegetable oil) ½ tsp nutmeg 1-lb can applesauce ¼ tsp ground cloves 1 cup nuts 1 tsp baking soda 1 cup raisins (optional) Preheat oven to 350 ºF. Sift dry ingredients together. Add wet ingredients, nuts and raisins. Mix well. Pout into a greased and floured 9x9x2 baking pan. Bake at 350 ºF for 45-50 min. Recipe can be doubled using a larger baking pan. Pear Date Streusel Bars Makes 3 dozen bars 1 can (16-oz) pear halves in ¾ cup packed brown sugar extra-light syrup, drained and ½ t baking soda juice reserved ¼ t salt 8 ounces chopped dates ½ cup margarine 1 cup flour powdered sugar (optional) 1 cup quick-cooking oats 1. Finely chop pears. Heat pears, reserved pear juice and dates to boiling over med-high heat. Reduce heat, cook uncovered, stirring occasionally, until thickened. Cool slightly. 2. Preheat oven to 350 ºF. Mix dry ingredients in large bowl. Cut in margarine until mixture resembles fine crumbs. Reserve 1 cup crumbly mixture for topping. Press remaining mixture in bottom of greased 13x9x2 baking pan. Bake for 15 minutes. 3. Carefully spread date mixture over crust. Sprinkle with remaining crumbly mixture; press lightly. Bake about 30 minutes or until light golden brown. Cool completely. Sprinkle with powdered sugar. Cut into 2x 1 ½-inch bars. Lenten Orange Cake 1 cup refined sugar 1/2 tsp baking soda 1 cup vegetable oil 1 cup chopped walnuts 1 cup orange juice 2 1/4 cups all purpose flour 1 tsp baking powder Preheat oven to 375 ºF.
