  • Atlantic Salmon Alert
ALERT FOR ATLANTIC SALMON IN SOUTHEAST ALASKA WATERS Please report any observations of this non-native species to the nearest ADF&G office. Over the past few years, ADF&G has verified harvests of Atlantic salmon in Southeast Alaska salt waters. Atlantic salmon are not native to the Pacific Ocean; they are raised in areas along the West Coast outside of Alaska, and their presence in Southeast Alaska waters is biologically undesirable. Anglers have reported catching Atlantic salmon in several of Southeast Alaska's freshwater systems. Alaska sport fishing regulations do not limit harvest of Atlantic salmon, but if you catch one, you can help us determine their status by bringing the entire fish to the nearest ADF&G office for biological sampling. The illustrations below will help you distinguish Atlantic salmon from native Alaska species. • Krill Oil and Astaxanthin
Krill Oil and Astaxanthin Krill are small reddish-color crustaceans, similar to shrimp, that abound in cold Arctic waters. They survive in such cold, frigid temperatures because of their natural anti- freeze, the polyunsaturated fatty acids EPA and DHA. EPA and DHA are bound to molecules called phospholipids (especially phosphatidyl choline) that act to help transport nutrients into cells and change the structure of animal cell membranes. Studies show that these combined fatty acids have better absorption into the cell membranes throughout the body, especially the brain, as compared to other types of fish oils. Although it has less EPA/DHA content than most fish oils, krill oil seems to be almost twice as absorbable. Unlike fish oil, krill oil also contains a very potent antioxidant, astaxanthin, which helps prevent krill oil from oxidizing (turning rancid). Astaxanthin is a red pigment found in different types of algae and phytoplankton. It is astaxanthin that gives salmon and trout their reddish color. It is considered to be one of the most potent natural antioxidants, almost 50 times stronger than beta-carotenes found in fruits and vegetables and 65 times better as an anti-oxidant than vitamin C. Krill oil is composed of 40% phospholipids, 30% EPA and DHA, astaxanthin, vitamin A, vitamin C, various other fatty acids, and flavanoids (anti-oxidant compounds) Human studies indicate krill oil is powerful at decreasing inflammation throughout the body, especially in the brain. It reduces C-reactive protein, a marker for heart disease. Tests indicate it has a powerful anti-inflammatory remedy for rheumatoid as well as osteoarthritis.

  • A Preliminary Study on the Stomach Content of Southern Bluefin Tuna Thunnus Maccoyii Caught by Taiwanese Longliner in the Central Indian Ocean
CCSBT-ESC/0509/35 A preliminary study on the stomach content of southern bluefin tuna Thunnus maccoyii caught by Taiwanese longliner in the central Indian Ocean Kwang-Ming Liu1, Wei-Ke Chen2, Shoou-Jeng Joung2, and Sui-Kai Chang3 1. Institute of Marine Resource Management, National Taiwan Ocean University, Keelung, Taiwan. 2. Department of Environmental Biology and Fisheries Science, National Taiwan Ocean University, Keelung, Taiwan. 3. Fisheries Agency, Council of Agriculture, Taipei, Taiwan. Abstract The stomach contents of 63 southern bluefin tuna captured by Taiwanese longliners in central Indian Ocean in August 2004 were examined. The size of tunas ranged from 84-187 cm FL (12-115 kg GG). The length and weight frequency distributions indicated that most specimens were in the range of 100-130 cm FL with a body weight between 10 and 30 kg for both sexes. The sexes- combined relationship between dressed weight and fork length can be described by W = 6.975× 10-6× FL3.1765 (n=56, r2=0.967, p < 0.05). The subjective index of fullness of specimens was estimated as: 1 = empty (38.6%), 2 = <half full (47.37%), 3 = half full (3.51%), 4 = >half full (5.26%), and 5 = full (5.26%). For the stomachs with prey items, almost all the preys are pisces and the proportion of each prey groups are fishes (95.6%), cephalopods (2.05%), and crustaceans (0.02%). In total, 6 prey taxa were identified – 4 species of fish, 1 unidentified pisces, 1 unidentified crustacean, and 1 unidentified squid. The 4 fish species fall in the family of Carangidae, Clupeidae, Emmelichthyidae, and Hemiramphidae.

  • How Batter Formulation Can Modify Fried Tempura-Battered Zucchini Chemical and Sensory Characteristics?
foods Article How Batter Formulation Can Modify Fried Tempura-Battered Zucchini Chemical and Sensory Characteristics? Montserrat Martínez-Pineda * , Cristina Yagüe-Ruiz and Antonio Vercet Faculty of Health and Sports Science, University of Zaragoza, Plaza Universidad, 3. 22002 Huesca, Spain; [email protected] (C.Y.-R.); [email protected] (A.V.) * Correspondence: [email protected]; Tel.: +34-974-292759 Received: 18 April 2020; Accepted: 7 May 2020; Published: 13 May 2020 Abstract: Tempura-fried vegetables are widely consumed and are greatly appreciated because of their characteristic dry and crispy crust, flavor and a golden–brown color. This study examined the effect of slice thickness, frying time and partial ingredient substitution in tempura batter with maltodextrin, ethanol, baking powder and cornflour on the rheological characteristics, moisture, oil uptake, color, texture and sensory characteristics of tempura-fried zucchini. The results showed an improved golden–brown coloring of the crust without affecting oil uptake when maltodextrin was included in the batter formulation. Moreover, dough viscosity and % pick-up lowered with maltodextrin addition. The partial substitution of water and wheat flour with ethanol, cornflour and baking powder resulted in a crispier and rougher crust that remained more stable over time but with less moisture and higher oil uptake. The substitution of certain tempura batter ingredients depending on the desired purpose could represent an interesting strategy to improve the quality of battered fried vegetables. Keywords: coating; ethanol; hydrocolloid; maltodextrin; oil; crispiness; tempura-batter; organoleptic characteristics 1. Introduction Despite variations in culinary traditions around the world [1] fried products are appreciated worldwide, in part due to their palatability.

  • TJ's Perfectly-Grilled Fish
TJ’s Perfectly-Grilled Fish Buy only fresh fish! Get Dallas’ freshest fish at TJ’s Fresh Seafood Market.SALMON, SWORDFISH, SEA BASS, TUNA and HALIBUT all grill great! Gimme some skin Buy your fish “skin on”… it will hold together better and seal in moistness and flavor. Don’t like the skin? Don’t worry, it will likely stick to your grill (if not, it will come right off after cooking.) Clean your machine Brush and oil your grill after it is hot to ensure fish won’t stick to the grill. Never too late to marinate Keep fish moist by marinating it for 20-30 min. TJ’s has many marinades for quick, no fuss flavor. You never need to marinate fish longer than this. For best dish, don’t grill cold fish When grilling, it’s best not to grill cold protein. So pull from the fridge and marinate at room temp (see above) 20-30 min before you grill. Feel the heat Ignore your grill’s temperature gauge. Put your hand an inch above the hot grill. If you can’t get your hand that close, it’s too hot. If you don’t have to pull away after 2-4 seconds, it’s too cold. Honey, leave the lid up! Grilled fish requires one-directional heat. Closing the grill simply bakes your fish. For once, your wife will be glad you left the lid up! Perfect timing Most fish can be cooked 6-7 min per side over medium heat (“feel the heat” for right temp).
