Christmas Dinner BACKGROUND Joanna Carter As in many countries, Christmas dinner is very important in England. The main meal is usually eaten at lunchtime or early afternoon on 25th December. In the past, people ate roast sirloin of beef but nowadays a typical dinner consists of roast turkey or goose, served up with stuffing, bread sauce, cranberry sauce and gravy. Stuffing is put inside the turkey and is made of bread crumbs, sausage meat, onion and herbs and spices. Bread sauce is a white sauce to pour over the turkey with bread crumbs, cloves, nutmeg and cream in it. Gravy is simply the ‘juices’ that come out of the meat while it’s cooking and cranberry sauce is like sour jam made from….. cranberries! Many vegetables accompany the meat such as peas, carrots, beans, cauliflower, Brussel sprouts, roast potatoes and parsnips. Parsnips are vegetables that look like big yellow carrots but taste more like potatoes. Some people have Yorkshire pudding with their Christmas dinner. This is also traditionally eaten with roast beef and is a type of savoury cooked batter. If you are still hungry after all that, Christmas pudding and mince pies follow the main course. Christmas pudding, otherwise known as plum pudding, or figgy pudding dates back hundreds of years in Great Britain. It is a rich mix of dried fruits such as raisins and figs, nuts, flour and brandy and is round and dark brown when cooked. The pudding is usually made some weeks before the festive period and all the members of the family should stir the mixture with a wooden spoon and make a wish. -

Serves: 8 Time to prepare: 15 minutes Cooking time: Rare: 20 minutes per 450g/1lb plus 20 minutes Medium: 25 minutes per 450g/1lb plus 25 minutes Well: 30 minutes per 450g/1lb plus 30 minutes Ingredients: 2.7kg/6lb lean rib of beef, French-trimmed and chinned, boneless rib, or topside joint 15ml/1tbsp English mustard powder Salt and freshly milled black pepper 1 small red onion, peeled and cut into quarters 1 bulb garlic, cut in half widthways For the best Yorkshire puddings: 175g/6oz strong plain flour Pinch salt 2 large eggs, beaten 5ml/1tsp fresh thyme leaves 300-400ml/10-14floz milk 30ml/2tbsp sunflower oil or beef dripping For the best gravy: 25g/1oz plain flour 450ml/¾pint good hot beef stock, homemade, if preferred, or water 300ml/½pint full bodied red wine For the best horseradish relish: 90ml/6tbsp horseradish sauce or 75ml/5tbsp fresh horseradish root, peeled and grated 45-60ml/3-4tbsp crème fraîche 15ml/1tbsp wholegrain or Dijon mustard Juice of ½ lemon For the best roast potatoes: 1.8kg/4lb floury potatoes, e.g. Desiree, Cara, or Maris Piper, peeled and cut in half 100ml/3½floz sunflower or olive oil or 100g/4oz beef dripping, goose or duck fat Salt Method: 1. 2021 Bulk Beef Order Info • Whole, half, and quarter sides of beef are sold by the live weight and custom processed in your name to your specifications. o Whole beef, side or beef, or split side - $2.25 lb. live weight o Hanging weight (what the beef weighs hanging in the cooler) is about 60% of live weight. With this ratio, 2.25 lb. live translates to $3.75 lb. hanging weight. o Our beef is processed at Thompsons Meat Processing in Floyd. They charge 80 cents per pound of hanging weight, plus $75 per whole, or $37.50 per half or $18.75 per split side. Additional processing fee include: ▪ Burger patties - $1.20 lb. w/ 20 lb. minimum ▪ Single wrapped steaks - $10 per whole, $5 per half, $2.50 per quarter (no additional fee if you select 2 or more steaks per package) ▪ Cubes steak - $12 per whole, $6 per half, $3 per quarter ▪ 0rgans – $10 per whole, $5 per half, $2.50 per quarter Pricing Example for Half: For a 500-pound half of a 1000-pound steer, the purchase price will be $1,125. Prime Rib Tips Prime Rib (standing rib roast) is a popular centerpiece of many holiday meals. These simple tips will help you make a memorable meal for family and friends. Select • How much do I need? A good rule of thumb is to plan on 1 bone per 2 people. That can equate to about 10 oz. of cooked prime rib per person. Keep in mind there will be a small amount of shrink while cooking, so buy a little extra to ensure you have some leftovers for those shaved prime rib sandwiches the next day. • Bone or No Bone? While the bones do add a great flavor, it’s not necessary to cook a bone-in rib roast. If cooking a boneless roast reduce total cooking time by 20-30 minutes. • When choosing a size, don’t buy anything under a 2 bone portion, as this is more of a thick steak style cut and will be difficult to roast and keep from drying out. Prepare • Place roast into a large pan, drain any juices and set at room temperature for 20 minutes. • Liberally rub all sides with your choice of seasoning blend. • Allow the rub to sit on the roast for another 20 minutes, then wrap in plastic wrap and place on a cookie sheet. Refrigerate wrapped roast for 16-24 hours. -
