Tujuan dari penelitian ini adalah mengetahui pengaruh penggunaan bahan baku sikhye berbasis beras amilosa tinggi dan rendah yang ditinjau dari karakteristik sensori, fisik, kimia, dan mikrobiologi sehingga dapat bermanfaat dalam pengembangan produk yang berkontribusi dalam pembuatan minuman fungsional. Penelitian diawali dengan uji pendahuluan pembuatan sikhye, formulasi yang digunakan 100 g tepung barley giling, 100 g beras atau ketan, dan 2000 ml air. Tepung barley dicampur dengan air di dalam baskom dan diremas-remas hingga warna campuran menjadi putih keruh. Kemudian campuran tersebut didiamkan dan ditutupi menggunakan kain saring selama 6 jam dalam suhu ruang agar didapatkan rendaman malt. Tiga puluh menit sebelum waktu perendaman selesai, beras atau ketan diolah dengan cara menambahkan air secukupnya ke dalam panci dan dipanaskan dengan api kecil selama 15-20 menit hingga beras berubah menjadi nasi setengah matang.

    STUDIA ORIENTALNE 2021, nr 2 (20) ISSN 2299-1999 https://doi.org/10.15804/so2021209 Haesung Lee1 Joseon Literati’s Righteous Principles (Yiriron) as a Moral Practice in the Political Realities – Its Meaning and Limitation in a Historical Context Introduction:Dohak – the Joseon Neo-Confucianism Neo-Confucianism flourished as a central ideology and absolute social order during the Joseon dynasty (朝鮮 1392–1910). “Neo-Confucianism” is a gen- eral term commonly applied to the revival of the various strands of Confucian philosophy during the Chinese Sòng dynasty (宋 960–1280 C.E.), re-exam- ined and reconstructed by Zhu Xi (朱熹, 1130–1200 AD.) It provided Koreans with philosophical speculation, moral and social norms, and a most strongly functional lifestyle. However, the terms of Joseon Neo-Confucianism con- note some specific characteristics, compared to classic Confucianism and the Chinese version of “Neo-Confucianism”2. The term of Dohak (道學 Chin. Dàoxué) – Dao (Way) Learning – already existed in classical Confucian context. However, in Korea, it is generally called Dohak (道學), which concerns Neo-Confucianism of the Joseon dynasty in a holistic scale. Plaintiffs bring this action individually and on behalf of a class (“Class”) consisting 3 of all persons and entities who directly purchased Korean Noodles from Defendants1 in the United 4 States and its territories (collectively, “U.S.” or “United States”) from May 1, 2001 to December 31, 5 2010 (the “Class Period”). Korean Noodles is an instant noodle soup product consisting of dried 6 instant noodles paired with a seasoning packet and dehydrated vegetables, packaged in a bag (or 7 pouch), cup, or bowl. 8 2. This action arises out of a conspiracy among the Defendants and their co-conspirators 9 spanning over a decade to fix, raise, maintain and/or stabilize the prices of Korean Noodles sold to 10 Plaintiffs and members of the Class in the U.S. and elsewhere. 11 3. At an initial meeting at the Renaissance Seoul Hotel in December 2000 or January 12 2001, the Korean Defendants conspired and agreed to a specific protocol that would be followed to 13 implement factory-level price increases.
