This book lists over 500 expressions of fine Scotch whiskies collected from each of our whisky regions: Speyside, the Highlands, the Lowlands, Islay, Campbeltown and the Islands. A wide diversity of flavours to suit every palate and every time of the day or night! Such a large selection – one of the largest in Scotland – may appear somewhat daunting, but part of the pleasure is browsing through the list, then comparing the tasting notes with what you yourself find in each whisky. The knowledgeable bar staff are ‘whisky ambassadors’, here to help and advise you, whether you are a connoisseur of the ‘golden nectar’ or just beginning your journey of discovery. I recommend you order two or three different drams; nose and taste them – remember ‘flavour’ is a combination of smell and taste, and of the two, smell is most important in appreciating the qualities of any whisky. Discuss the characteristics of each; seek further recommendations from the staff; explore and enjoy! Malt whisky is the quintessence of Scotland. It recollects the land of its birth with every sip – peat hags and bog myrtle, the sun on the loch, fine rain on the mountain, white beaches and salt spray: the fugitive aromas of the land itself. It also speaks of the people of Scotland, the tough farmers who developed the art of distillation, the intrepid smugglers who kept the still fires burning in the face of the law, the remarkable entrepreneurs who built a world market for Scotch in the later decades of the nineteenth century. Campbeltown
Campbeltown
Campbeltown is the smallest whisky producing region with only 3 distilleries currently in operation. Often overlooked as a region, this town was once the whisky capital of the world with 28 distilleries operating alongside each other.
Campbeltown distilleries, though they are few, offer a variety of single malts. Springbank alone offers 3 distinct styles of whisky each with differing levels of distillation and peat influence.

Lowlands
Lowland whisky has had a somewhat turbulent past with the style of the whisky being heavily influenced by Irish immigration and the implementation of tax. This meant that initially it was perceived to be very fiery and aggressive. It was not learnt until later that leaving these young and spritely whisky’s to mature would create a very light, delicate and floral style.
Sadly many lowland distilleries have fallen away over previous decades but a recent resurgence will see the number of Lowland distilleries rise significantly with 3 new distilleries opening within Edinburgh alone.
Historically lowland whiskies were solely associated with a light and floral style but with the recent addition of distilleries such as the peaty Ailsa Bay, a wider ranging portfolio of flavours are now available. 7

Highlands
The Highlands are geographically the largest whisky producing region in the country and are said to offer the greatest variations of style.
Historically much harder to tax than lowland distilleries, Highland distilleries enjoyed much more scope to produce “better quality” whisky. This was due less intense investigations from the tax authorities which allowed Highland distilleries to produce their whisky in a more refined manner.
The Highlands region showcases an impressive range of internationally acclaimed distilleries such as Glenmorangie and Oban as well as hidden gems such as Deanston and Edradour. It is a fantastic region for beginners and experts alike.

This relatively small area of land is the most densely occupied region producing the largest quantity of Scottish Whisky. Because this area produces such a vast quantity it qualifies as a region by itself separate from the Highlands.
Speyside is home to some of the biggest and most prestigious names in the industry such as the Macallan and Glenlivet. It is also home to a large number of unsung heroes that are vital within the blending industry such as Linkwood and Longmorn.
Generally thought to be a heavily sherry cask influenced region there are also other flavour profiles that can be discovered.

The whiskies produced in this region are rich with stories of smuggling, secret stills and hiding from the tax collectors.
The islands cover the most northern parts of Scotland to the most western, allowing for a very diverse spectrum of flavours.
Often, but not always, heavily peated as coal is not available, this tends to a stronger, richer whisky that is often not for the faint- hearted. Rich with spice and oaky notes these whiskies match their hard, harsh climates.

Islay
At the time of writing Islay currently has 8 distilleries producing whisky with at least 2 more set to take this number into double figures within the next few years.
With this said, Islay’s whisky production is likely to increase by 35% over the next five years, according to estimates from Islay Community Council.
What is truly remarkable is that even before this expansion, the Island paid £196m in excise tax in 2016 (excluding gin).
Not bad for an island with a population of just over 3,000.

The World of Blended Whisky has picked up a bad reputation for producing cheap, often inferior whisky.
This couldn’t be further from the truth and some fine examples of beautifully created blends are listed in the following pages.
The art of blending is, to this day still something that is done manually, with the experience of a highly trained individual, whose job it is to create a consistent and recognizable taste.
This takes years of training and practice and relies on a great sense of smell and a fantastic palate.

A champagne cocktail prepared the old fashion way. Glenkinchie 12yo sweetened with brown sugar and bitters topped up with Ruinart champagne.
The Grandmorangie
Glenmorangie Original, vanilla liqueur, and Grand Marnier all gently stirred and presented chilled with an orange zest.
