Ramen Noodle Stir Fry

RAMEN NOODLE STIR FRY Ingredients:

1/2 c. chopped broccoli

1/2 c. chopped cauliflower

1 carrot, sliced thin

2 pkgs. chicken-flavored Ramen noodles (with seasoning packets)

Nonstick vegetable spray NOTE: can use other flavors of Ramen noodles!

1 Tbsp. soy sauce

1 2/3 c. water

Procedure:

______1. Wash broccoli and cauliflower; cut into small bite-size pieces. Peel and slice

carrot very thin. (BLA, BLU) Remember to stabilize/secure cutting board!

______2. Before opening the Ramen packets, crush packet and break up the noodles;

pour noodles into a bowl and set aside. (G)

______3. Spray skillet with nonstick vegetable spray. Place skillet on burner; using

medium-high heat, heat pan for 30 seconds. Add vegetables to pan. (R)

______4. Stir fry the vegetables (with a wooden spoon) for about 1 minute. (G,R)

______5. Stir in the broken noodles, contents of the seasoning packets, soy sauce and

water. (BLU)

______6. Bring mixture to a boil. Lower heat to medium-low and simmer, with the lid

on, for 3-5 min. or until most of the liquid has been absorbed, stirring twice. (BLA)

______7. Serve and ENJOY! Yield: 4 servings

SAFETY POINTS:  Practice safe knife handling skills when slicing vegetables.  Use dry potholders when handling hot pans.  Lift the pan lid away from you when checking cooking progress.
