A note from Charlie Chawke, the Proprietor. Nestled in one of The Chawke Pub Group’s most iconic venues, with our 3 Copper Pot Stills over-looking it, Searsons Whiskey Bar has built 7 storeys of Whiskey from around the world to satisfy all curiosities & palates.

We are the proud custodians of the ‘Charlie Chawke’ Single Cask Edition, the oldest Midleton Single Cask ever released & we are the only bar in the world to have 2 Full Collections on display, every Vintage Release from 1984 - present day.

This Whiskey Menu has been curated by Irish Whiskey Specialist & Group Development Manager, Mark McLaughlin alongside Bill Chawke, General Manager of Searsons. You will find features of highly recommended whiskeys from Bill & the team at Searsons throughout the Menu with teasers from Mark on the whiskey themselves. IRISH WHISKEY

Irish Whiskey is a distilled spirit made from a mash of malted cereals (with or without other grains), water, and yeast. It is fermented, then distilled, and matured in wooden casks, such as oak, for no less than 3 years, on the island of . It must be bottled at no less than 40% abv.

There are 4 distinct styles of Irish Whiskey:

Pot Still Whiskey: This is a unique style of whiskey to Ireland, generally produced using a mixed mash of at least 30% malted and 30% un-malted , however they can use up to 5% other grains, e.g oats, rye, wheat. It is distilled in pot stills, and matured for at least 3 years in wooden casks.

Malt Whiskey: This style of whiskey is made from 100% malted barley, distilled in pot stills, and matured for at least 3 years in wooden casks.

Grain Whiskey: Generally made from a mixed mash containing up to 95% maize or wheat, continuously distilled in Column stills, and matured for at least 3 years in wooden casks.

Blended Irish Whiskey: Any style of whiskey containing 2 or more of the above component whiskeys which have been matured for at least 3 years in wooden casks and bottled at no less than 40% abv.

2019 marked the release of our first Single Cask Bottling in collaboration with the Midleton Distillery, the Pinnacle of Irish Whiskey. Carefully selected by father & son, Charlie & Bill Chawke, alongside Midleton Master Distiller Brian Nation, this is truly one of the rarest Single Cask Irish whiskeys to be released. Bonded on the 4th of July 1990, this First-fill bourbon cask, filled with Single Pot Still distillate, matured for 28 years before being bottled at natural for The Chawke Pub Group in spring 2019. The cask yielded just 168 bottles, making it the oldest & rarest Single Cask expressions for the Midleton Distillery.

TASTING NOTES

Nose: Rich toasted wood with a bold nutty character at the forefront while delicate hints of citrus zest develop overtime, giving balance to the mild pot still spices that remain constant in the background. Taste: Rich in fruit notes with sweet pears developing into more exotic fruits of peach, apricot and man- go. Delicate sweet vanilla works in tandem with the pot still spices and subtle tannins adding a sense of balance and structure. Finish: Rich and lingering with the fruit constantly building overtime while the pot still spices fade, letting the toasted oak linger until the very end.
