On an otherwise quiet Tuesday night on Fleming Street last week, peals of laughter and the familiar sound of glass- es clinking spilled out into the street every time the door of 508 Fleming St. swung open. The insider crowd eagerly anticipating the opening of The Roost cocktail bar had, after months of con- struction, finally come home to, well, roost. The Roost, formerly known as Baby Cheapee’s Liquor Store, is nothing like its predecessor aside from the fact that the boutique bar will continue to sell package liquor. “We wanted to keep the liquor store aspect of the business because there aren’t any in the immedi- ate area,” explains owner Maria Sharpe. “We’ll also sell wine, but we put great care into making sure we carry things different from the options carried by Fausto’s and UVA across the street.” The aesthetic of The Roost comes, in true random Key West fashion, from a float that Mrs. Sharpe bid on in last year’s Smallest Parade in the Universe event during Fantasy Fest. The float, built by Kris Roehrig and his talented team at Bone Island Originals, is an old-school shrimping boat called the Black Conch. “My husband Rob and I saw the boat during the parade and we

“...that’s where the name The Roost really came from. To us, it means a nest or a cozy place and I really think we’ve accomplished what we had intended.”

Maria Sharpe, owner of The Roost both knew we had to have it!” laughs Mrs. Sharpe. “It sat in our living room for a while and, after we bought the bar, we thought, ‘Wouldn’t it be cool to create a bar that looks like the inside of a boat?’ So, we called Kris and he and local woodworker Jimmy Wray showed us some incredible commissioned work they were doing on a real boat. We loved it and Kris and his team did an impeccable job translating our vision through the lens of their boat-building aesthetic.” The bar itself already has a comfort- able, lived-in feel despite being open a matter of days. “We wanted to create a cozier, upscale cocktail bar unlike anything we have in Key West,” says Mrs. Sharpe, “and that’s where the name The Roost really came from. To us, it means a nest or a cozy place and I really think we’ve accomplished what we had Some other accompanying small dishes include: Cavier, top left, organic roasted tomatoes and fresh mozzarella served with crunchy bread- intended.” Even the walls, a rich shade sticks, top right, and handcrafted chocalate treats, above, by local chocolatier Stephanie Pino. of turquoise, were painted and textured by brilliant local artist Karen Wray to organic ingredients wherever possible.
