How Beer is Made

hat happens when the ingredients of beer—malted barley (malt), water, W yeast and hops—are combined? Let’s take a virtual tour through a brewery and see. Whether you visit a giant like Anheuser Busch, or your local brewpub, the steps are more or less the same. The first ingredient, malted barley, would make a perfectly respectable breakfast cereal: crunchy, bready, slightly sweet. The brewer mills the malt, cracking the grains between rollers to expose more surface area. Then, just as tea leaves or coffee grounds are steeped in water to extract their flavors, the malt is heated with water in a large kettle called a “mash tun.” The hot water pulls the sugars from the malt into a solution known as “sweet liquor.” The Magic of Fermentation The brewer rinses the malt (“sparging”) and strains it to get Cooled to the right temperature, and chock full of sugar, wort the last of the sugars into solution. The “green” beer is transferred to conditioning tanks to age. If the beer is an ale—a beer produced by a yeast that works at relatively warm temperatures—it can be ready to drink within days. If it is a lager, produced by a yeast that works at lower temperatures, it will need conditioning (“lager- ing”) at a cooler temperature for several weeks or longer. At this point, the beer is almost ready for you. In a brew- pub, you can order beer from serving tanks adjacent to the fermentation tanks—as fresh as beer can be. A distributing brewery puts its beer into bottles or kegs at this stage, either bubbling with the natural CO2 the yeast releases into the brew, or with the carbonation augmented in the beer or at the point of dispense. Either way, you should end up with a glass of fresh beer, packed with complex aroma and flavor. Take a moment to gaze through the golden, amber or mid- night liquid. World Beer Festival Raleigh 13 BEHIND THE SCENES

Behind the Scenes with the Brew Crew

t has been my great pleasure to be associated with All All beer must be segregated for early and late sessions as it About Beer Magazine over the past fourteen years as both comes in: half for each session. Overall, we handle about 1000 cases and 400 kegs of that gaggle of grunts that slings kegs, cases of beer, and bags of beer, some of which arrive late into the evening. All beer must ice, and generally supplies the muscle to keep the festival run- be placed strategically in the reefer and, by the end of the ning. night, the 45-foot trailer is filled to the brim. By my estimates, It is, however, a bit more complicated than simply lugging we move 10 tons of bottled beer (twice), 15 tons of kegged consumables. It is a three-day job, Friday through Sunday, and beer (twice), 3 tons of fresh water, and 12 tons of ice. Add to requires a mixture of hectic effort, on-the-fly decision making, that the innumerable number of discard buckets and other strategic planning, and composure during chaos. We are in the pieces, and it adds up to well over 65 tons, just on Friday and eye of the storm—or at least that is how it appears from our Saturday. Keeping 8,000 beer lovers happy is no small feat. seat—as the festival itself runs smoothly and without incident year after year. Following is a nuts and bolts account of our The Saturday Marathon World Beer Festival weekend. Saturday is when the real fun starts, usually around 7 a.m. As The festival weekend begins on Friday morning for me, my my motley crew gradually assembles in the morning, we get chosen right hand man, and a few members of my 25-member busy putting fresh water, bus tubs, and slop buckets out on the crew. A refrigerated truck is used to keep the beer cold during floor. This is also the perfect time to give the place a once-over the entire run of the event, keeping the beer in optimal condi- and make sure that nothing is missing and that we know tion and reducing the demand for ice. The reefer truck arrives where everything is. Another crew has been busy overnight early on Friday, and is parked so that we can easily load it with getting the booths set up with tables, chairs, and signage, mak- beer delivered during the day, and so it can be unloaded freely ing our job a lot easier. Festival maps and pamphlets are at our during the entire day on Saturday. disposal for easy deployment of everything, including beer.

14 World Beer Festival Raleigh First session beer goes out onto the floor around 9 a.m. The chain gang stretches from inside the truck to just outside, and the cases are loaded onto fifteen hand trucks, and quickly wheeled to the booths. Kegs go out at 10 and ice at 11. The energy is amaz- ing to watch over these few hours. During the festival, The Crew (clad in our official bright red Brew Crew festival t-shirts for visibility) is responsible for main- taining ice supplies, emptying slop, and retrieving additional beer. A subset of the crew concentrates on servicing the VIP, Brewers Hospitality, and All About Beer Tasting tents. Occasional requests by band members and restaurant workers are also hon- ored. We are a commando squad of sorts, ready to spring into action on every request. At times I feel like Vince Lombardi, barking orders and observing the tactical wherewithal of my min- ions. The jokes are predictably bad for the full 18-hour day.

The Home Stretch During intermission, which is a mere two hours, we get busy again setting up the second session with reserved bottled beer, additional ice, and any requested kegs, and generally making sure that everything is ready to go for the later crowd. The second ses- sion is often a bit more, shall we say, animated, but our duties remain the same. I pray that my shoes and barking dogs last another six hours. I crack open my tenth pint of drinking water. Inevitably, we encounter mechanical issues during the event, mostly in the form of bruised and battered hand trucks with flat tires and loose wheels. A bicycle pump and basic tool kit fix most of the issues, but as always, a roll of duct tape and a crescent wrench are the saviors throughout the long and rugged day for other repairs. Saturday evening, post-festival, is spent rounding up leftover beer and supplies, and securing it either on the reefer truck or our rental cargo truck. My crew and I are visibly spent, but always manage to squeeze a little extra effort out of our aching muscles to finish the job. After peeling a layer of grime and beer and sweat soaked clothing from my body, a hot shower and a beer back at the hotel is in order. Sunday morning is attended by a few brave crew members, when we unload the beer and supplies in Durham. After that, we celebrate another festival success with a well-earned pint and lunch at The Federal in Durham, reflect a bit, and discuss the event. A glass of beer never tastes as divine as that one.
