El Shobaki FA*,Tahani Kholief, Hamed IM and Doaa Fouad. Food Science and Nutrition Department, National Research Centre, Dokki Giza, Egypt. ABSTRACT This study aims to modify some fast meals purchased in the Egyptian market to make them be of higher nutritional value and less hazardous to health. The meals are two of plant origin namely koshary and Tamia and two of animal origin namely pizza and Hawawshi. Assessment of the health value was made by following the Glycemic index (GI), Glycemic load (GL) and lipimic response (LR). In addition a feeding experiment was done to evaluate the health impact of two of these modified meals on alloxan diabetic rats. Results showed that modification of these meals brought about reduction of the GI, GL and LR. Feeding experiment showed that rats fed on the modified koshary and pizza have lower values of the lipid parameters as compared to control diabetic rats. In conclusion, GI, GL and LR of 4 fast meals are given. The modification of meals was effective as proved by the feeding experiment which showed that animals fed on the modified meals have better blood glucose tolerance and lipid profile. As a family, we have decided to move away from the traditional model of the mother spending most of the day in the kitchen preparing the iftar and losing precious time which can be spent on beneficial acts during Ramadan. A few notes: • Recipes are credited where possible • I have not included basic curry/bhaji recipes – use your usual ones or many available online (or substitute with your basic home cooked meals) • I have not included any food which requires deep frying as we prefer not to do this. However, you can of course adapt the menu as you wish • The 'iftar basics' are a mix and match selection of foods we normally eat and can be varied (or use your own favourites) • It is best to plan ahead and create a shopping list of foods you will need during Ramadan and buy them now (especially non-perishable foods such as oil and tinned items) and then do a weekly shop of fresh food • As we are focussing on eating well rather than feasting, the recipes are repeated during Ramadan, and we will often make enough to last the next day to avoid cooking every day.

India’s Food Supply Chain During the Pandemic Matt Lowe∗ G V Nadhanaely Benjamin N. Rothz December 3, 2020 Abstract We document the impact of India’s COVID-19 lockdown on the food supply chain. Food arrivals in wholesale markets dropped by 62% in the three weeks following the lockdown and wholesale prices rose by 8%. Six weeks after the lockdown began, volumes and prices had fully recovered. The initial food supply shock was highly correlated with early incidence of COVID-19. We provide evidence that this correlation is due more to state-level lockdown policy variation than local responses of those in the food supply chain.
