Bear Soup Salmon Mousse BEAR SOUP & SALMON MOUSSE A Cookbook of the Alaska Department,. of Fish & Game © Alaska Department of Fish & Game THANK YOU Over the past several years, many of you have written, called, or stopped by and asked for a cookbook. Now, thanks to many employees of the Alaska Department of Fish and Game, their families, and friends, we have a cookbook, Bear Soup and Salmon Mousse. It has been a long time in the making; we hope the wait has been worth while. We like to think that the best of Alaska eating is included in these pages. Most of the recipes in our book have been shared by department staff, past and present. Unfor tunately, space did not allow credit to be given to all those who deserve it. The list of con tributors would be very long, but we would like to say thank you to all who have been so generous in sharing recipes and suggestions. Without the cooperation of many, there would still be no cookbook. Those recipes which were provided by the Cooperative Extension Service, University of Alaska, are credited. We appreciate the generous assistance of the agency's staff and are grateful to them. We are happy to be able to offer you our cache of recipes. From Alaska's hearth we wish you good eating. 1 TABLE OF CONTENTS Thank You.............................. 1 Beverages Rose Hip Tea ......................... 9 Russian Tea ........................... 9 FOOD FROM THE SEA: SALMON CYCLE 3-5 (LESSON 7-9) Elder Quote: “Salmon was put up in many ways: smoked or air-dried, and cut up in little pieces and stuffed in a seal or sea lion stomach which had been dried, it was also salted. There is a little fish that you find under the rocks, we ate them while hunting. You find a rock which you can turnover and you generally will find a fish under it. They would smoke and dry the salmon after it came up the streams to spawn, it is not fat and it had to stop eating. The bright salmon are fat molds and turns rancid. But the ones from the streams have lost most of the fat, you smoke or dry them they get hard as a board.” Bobby A. Stamp (Born in 1926 to a French Canadian father and Dorothy Vlasoff from Nuchek. He moved to Chenega at the age of seven where he lived a subsistence lifestyle and was taught cultural values and lore by the village Elders. He died in 2005.) Diabetes Self-Management Education | Section H-1 When planning a menu consider the amount of naturally occurring fat and sugar in a food, and the amount of fat and sugar added during preparation. These are the two main factors for consideration in healthy food selection and preparation. Low-calorie sweeteners in food preparation Functions of sugar Sugars, in addition to sweetening, can have several other functions in a food product. Among these functions are “browning or carmelization” of foods, production of a softer, less graining or coarse texture of foods, and to thicken liquids. Low-calorie sweeteners cannot do these other functions of sugar. When using low-calorie sweeteners, these functions will be lost and the recipe may need to be modified to produce a quality product.
