- 122 - - 123 - Neopolitan Beans and Pasta This is a favorite old recipe when things came (Pasta e Fagioli Napoletana) from Grandmas’ garden, but if you’re lucky Jayne / Aorangi you can still find organic peas around, which (Serves 6) is imperative for Peapod Soup. Peas can be used elsewhere, as this only calls 350g canellini or borlotti beans cooked for the peapods. Did you know that botani- 250g pasta ‘maltagliati’ or ‘pasta mista’ cally peapods are a fruit? So I guess this is a 1 clove garlic fruit soup! 1 stalk of celery 6 cherry tomatoes 600g peapods (from 1kg. total appx.) basil 2 potatoes e.v. olive oil 4-5 spring onions or 1 scallion sale and popper e.v. olive oil salt and pepper · If using fresh beans cook al dente · Strain beans and place in saucepan · Clean peapods of head and center filament · Cover with fresh water · Cut peeled potatoes, onions and well · Add garlic, celery, tomatoes, basil washed peapods into pieces · Once boiling simmer for 10 min. · Cover with enough water to cover well · Raise heat · Bring to a boil then lower to simmer · Add pasta and oil, and cook for 10 min. · Cook for about 1hr. or until all is soft · Add pepper, check salt · Strain or pass through a sieve to obtain · Turn off, let stand for 5 min. and serve cream without the filaments · Serve with a drizzle of olive oil and Always a hit! homemade croutons
