A diet based on large quantities of fruit and vegetables has a positive impact on our health. A vegan diet is based on plants and has increased in popularity over the recent years. Health is the most central reason for choosing a vegan diet. Meat free diets in India can be traced back to the Indus Valley Civilization, and Indian culture shows a great respect for animals in various cultural texts. Every major Indian religion viz. Hinduism, Buddhism and Jainism encourage ahinsa that is non-violence toward other living beings. In modern India bakery products have made a way into our homes. Cakes, Breads, Puddings, Pie etc. are a common thing which can be now found in every household list. The challenge is each of these products contain animal based product and people who are following veganism cannot consume them. Vegan baking is a challenge because of the use of various products like eggs, milk, etc. in normal recipes. Several Chefs and companies are working on products that are vegan. Everyday more substitutes are coming and Market is growing with a steady pace. Objective: To study and find out the trend of vegan baking in Metropolitan Cities of India and spread awareness about Vegan Baking. Methodology: The study was conducted by a random sampling survey from cities Kolkata and Delhi, taking the opinions of consumers through a self-designed questionnaire who have opted for Veganism, & their needs.

  • Vegan History
    Vegan History Veganism has origins that date back to ancient India and Mediterranean societies. Vegetarianism is known to be mentioned by the Greek philosopher and mathematician Pythagoras around 500 BC.(1) Veganism can be traced to the Indus Valley Civilization in 3300-1300, particular to northern and western ancient India. An early known vegan was the Arab poet al-Ma’arri, 973-1057 AD. He based his view on equal justice not only for humans, yet for animals as well. His philosophy was based in health, the transmigration of souls, and animal welfare. (2) In the 19th century vegetarianism became a significant movement in UK and USA, with a minority of vegetarians avoiding all animal foods. In the early 1800’s poet Percy Bysshe published “A Vindication of Natural Diet” and a London doctor, William Lambe said “water and vegetable diet could cure cure anything from tuberculosis to acne.” (3) Around 1830 many vegan communities were established. The Temple School opened in 1834 in Massachusetts in the USA, and Fruitlands in 1844. 1838, in England James Pierrepont Greaves founded the vegan community the Concordium at Alcott House. Then in 1843 members from the Alcott House formed the Vegetarian Society in UK. In this time vegetarians opposed veganism, calling it impractical and thought it may oppose their vegetarian crusade. In 1944 when The Vegetarian Society didn’t support the emerging Vegan movement, Donald Watson started his own publication called The Vegan News, and coined the word vegan. For vegetarians, take a slice or two or three of cheese or spinach pizza and pile on the veggies from their small but quite healthily adequate fresh veg offerings.
