The family is credited with the revival of two ancient Cretan varieties, Dafni and Plyto while a third “vineyard treasure”, the indigenous Melissaki, is recently added to the credits. Surrounded by the idyllic setting of the vineyards and the Lassithi mountains we offer you the opportunity to enjoy nature and discover local varieties and wines distinguished by the uniqueness of their origin and heritage. Its name derives from the laurel (bay leaf) plant, which is called “Dáfni” in Greek, as the wine produced resembles these aromas. Skin contact for about 14 hours, then tank fermentation at 18-20degs. Then matured on lees for a few months gaining depth of flavour and floral aromas. Varietal Composition: 100% Dafni Alcohol by Volume: 13% Tasting Notes: Bright yellow colour with glints of Green. Aromas of herbs such as laurel and rosemary with notes of flower and fruit, typical for this variety. Dry and harmonious with a balanced acidity. PLYTO - PSARADES Classification: Protected Geographical Indication Crete The Plytó grape variety was saved from extinction by the Lyrarakis family, when it was planted in the "Psarades" family vineyard at 480m altitude in central Crete in the early '90s. Timing the harvest is the most important decision for the winemaker. This year we achieved to make 3 harvests in the vineyard, based and focused on the average organoleptic characteristics perceived in 3 different stages of the maturation of the grape (green harvest at the end of July, first harvest at the first week of September and the last at the last week of September). In that way, by using 5% of unripe grape juice as well as 8% of a late harvest juice in the final blend, we managed to enhance the complexity of the wine. For the winemaking we followed the principals of classic white fermentation as well as aging 7% of the wine in 500lt new french oak. Fermentation is achieved by using selected yeast from a complete organic habitat (Bio Certificate). Only yeast derivatives were applied for the stability and natural fining of the wine. Varietal Composition: 100% Plyto Alcohol by Volume: 13% Tasting Notes: Bright yellow colour. Intense fruity aromas with hints of orange peel and both flowery and creamy notes. The dry in style mouthfeel with elegant citrus flavours and a straight line of steely acidity lends complexity to the honey yellow fruits. Originally on the “Vóila” plain and subsequently in the extended surroundings, we discover exceptional vineyards where the great grape variety Assyrtiko thrives. The harvest was performed by hand seeking to obtain a proper fruit maturity. Skin contact was carried out at 12°C for 16 hours. Fermented in a stainless steel tank, this wine had a slow fermentation rate that lasted for more than 15 days. Varietal Composition: 100% Assyrtiko Alcohol by Volume: 13.5% Tasting Notes: Bright platinum colour. Pure floral aromas with ginger spices and delicate notes of ripe citrus. Marvelously ripe grapes have given this wine a crispy and rich mouthfeel with a mineral and chalky character. THRAPSATHIRI - ARMI Classification: Protected Geographical Indication Crete "Armi" is the word we use in the cretan dialect to define the top of a mountainside. The vineyard called “Armi” in our area faces the east and lies at an altitude of 500 meters. The medium fertility soil combined with the continuous influence of beneficial winds, compose a unique microclimate. In these special conditions, the Thrapsathiri variety can perfectly express the wealth of its aromas and taste. This wine can age well. The vinification starts with whole bunch pre-fermentation maceration followed by barrel fermentation in new French and American oak. Directly from the press, the free run juice was led into oak where fermentation and maturation on lees lasted for about 2 months. Only selected yeasts from a complete organic habitat (Bio Certificate) were used for the fermentation and stability of the wine. Varietal Composition: Thrapsathiri 100% Alcohol by Volume: 13.5% Tasting Notes: Bright yellow colour. Aromas of fresh citrus fruit are coupled with tobacco and liquorice notes from the aging in barrel. In the mouth, the flavour of nuts and cream are combined with a crispy texture and a persistent aftertaste of orange peel and quince. Altitude, with sandy, stony soil. The head-trained pruning in combination with the north-east exposure of the vineyard and plenty of sunshine, ensures that the grapes reach optimum ripeness at the time of harvest. Very thorough cultivation helps us achieve extremely low yields, succeeding in vinificating a very concentrated wine with a deep red colour and an excellent structure, which will age for a long time. The wine was aged for 12 months in both old and new oak barrels, then stored in bottles for 9 months before being released. Varietal Composition: Mandilari 100% Alcohol by Volume: 13% Tasting Notes: Deep, intense red colour. On the nose, complex aromas of juicy plums, toffee and liquorice are superbly balanced by the chocolate and vanilla notes of it’s storage in oak. In the mouth it is well concentrated, with a lively lingering finish.
