Aged rum offers a full spectrum of flavors ranging from butterscotch and cinnamon to tropical fruits and tobacco-­ • Sciced·Elavored Rum • Tequila Anejo • best enjoyed straight or on the rocks for casual sipping. • Wli\aRum Rum is a sugar cane distilled spirit that is directly influenced by terroir, tradition and technique. Most rums are bottled directly from the still, but some are aged in charred oak barrels. Typically. these barrels were previously used to age bourbon (from the U.S.) or scotch, cognac and sherry (from Europe).

In some cases, the rum is allowed to blend and mature in another barrel for a second maturation. This rum is designated as "single barrel". Occasionally distillers will top off their barrels with rums of the same age. Or in the case of a "solera", with rums that is one year younger. Bottling occurs straight from the barrel. In the U.S., the age is determined by the youngest spirit in the bottle, and must be indicated by an age statement.

The distillation process , the barrels , and warm climates produce rums that are darker color and richer in flavor, mellower and more aromatic than clear rums .

The spirit of choice by pirates and princes, rum has earned its place in history: In 1493, Columbus brought sugar cane to Hispaniola. 140 years later, in 1636 - Sugar became the chief crop of Barbados and of all the Caribbean islands. Soon after, in 1687 - Rum is officially adopted as the daily ration for the Royal Navy: 50 years later (1740)- The Royal Navy's dilutes rum rations with water, calling it "grog". At that time, Massachusetts had 63 distilleries that produced rum made from molasses. (Another reason why the British colonies in New England were very important to Britain.)

After the American Revolution, the British enforced a naval blockade to the Caribbean, restricting access to sugar plantations in the West Indies. So what did the American colonists do? They used their chief crop com to make bourbon, marking the beginning of bourbon's popularity and the decline of distilleries in the Northeast.

Flash forward to 1980- when rum outsold vodka in the United States and outsold whiskey for the first time since the earty nineteenth century.

The Tasting: The Fifty Best held a "blind" tasting of 20 premium aged rums/rhums agricole and 4 gold rums with 19 pre-qualified judges. Strict tasting rules were applied. The order of service was established beforehand by lottery. Each of the rums were poured into fresh glasses from new sealed bottles, and served at slightly above room temperature. Only ice water and neutral unsalted chips and crackers were available to cleanse the palate.

Gold rums , aged rums and aged rhums agricoles were tasted in groups , with medals awarded on the basis of the judging panels' rating of all rums from that group. The judges wrote down their impressions of each product on score sheets. The scoring was done on a 5-point system, with 5 as the best. Double-Gold and Gold medals were awarded according to a set range of final point scores received from the judges. Scores were exceptionally high overall, and there were no Silver or Bronze medals awarded in this tasting.

The tasting notes that follow are summaries of the judges' opinions, with all replicated commentary eliminated. The countries of origin are identified for each brand.

An ode to the Italy, some Italians may dip their biscotti in dessert wine, but "Ave Maria" combines the pleasures. This icy concoction combines homemade Madagascar vanilla grappa with Faretti Biscotti liqueur, Bailey's Irish Cream liqueur and a dash of cinnamon. When you think about rum you think probably think about pirates, treasure and maybe a college party or two. The one thing that you do not think of is rum, as a fine distilled cane spirit. In the next couple of years if you are thinking about rum, you may be thinking differently. One type of rum that is helping out the push for rum to be considered among the best in the rum category is Rhum Agricole. Rhum Agricole is a type of category made in the French area of the Caribbean. One of these countries Martinique has helped rum by being one ofthe few countries in the world to have a AOC (Appellation d'Orgine Controlee) mark in the rum industry. Rhum Agricole is made by fermenting and distilling from pure and very fresh cane juice and comes out at 70 percent alcohol. Many of them are also aged for years in oak barrels for added flavor. If you are looking for a fine sipping rum then, for the moment, you can still find one in a decent price range with high quailty . • Made by the tequila company Patron, Pyrat rum made in the Caribbean with hints of honey comes in at 267 dollars a bottle. • El Dorado rum company has 350 years of experience that they bring into each bottle of 21 year old special reserve rum. Made in Guyana it comes in at 92 dollars a bottle. ·Vizcaya VXOP Cask 21 rum, which is aged in oak barrels that are used to age bourbon first. Is made in small batches in 'methode agirocle' way. It has a flavor profile of brown sugar, maple and butterscotch. It is made in the Dominican Republic and comes in at only 39 dollars a bottle. Rum is a drink that is up on the rise and one that no matter if you like it in your cocktail or if you just want to sip, is one to watch for the future. Happy drinking and drink safe.

There was no shortage of libations or locations to drink them this year, as some of our favorite new bars opened up and trends like session beers, local ciders and spirits, and cocktails on tap became popular. Like we did last year (http://www.baltimoremagazine.net/2013/12/11/my-favorite-drinks-

Spring: In the beginning of the year, we spent a lot of time at Dylan's Oyster Cellar (http~//www.baltimoremagazine.net/2014f3/20/cocktails-at­ dylans-oyster-cellar), which was thenlocated adjacent to Dooby's (http://www.doobyscoffee.com/) in Mt. Vernon (now you can find Dylan shucking down the street at the newest Ryleigh's Oyster location (http://www.baltimoremagazine.net/2014/12/15/open-shut­ ryleighs-oyster-local-pie-dangerously-delicious-avam)). While we went for the oysters, we stayed for the cocktails, including the Cellar Sour (vodka, egg whites, orange bitters, simple syrup, and fresh lemon juice) which was an ideal, citrusy accompaniment to salty, briny oysters.

A bit later in the season, Blue Pit BBQ (http://bluepitbbg.com/) opened. Well sort of. The Woodberry spot made an ingenious move (http://www.baltimoremagazine.net/2014/8/I/2014-best­ of-baltimore-fun): Before it could officially open its kitchen (thanks, BGE!), Blue Pit opened its bar by hanging a "Whiskey Open" sign out front. Soon, the buzz around its awesome drink-program started and the very first cocktail we tried was a strawberry-rhubarb Old Fashioned, pictured. Perfectly sweet, tart, and boozy. Now Blue Pit features rotating Old Fashioned recipes, depending on what's in season.

Summer: The "summer of Anthem" became a running joke amongst our friends, as Union Craft Brewing (http://www.unioncraftbrewing.com/) released its creamy, goJden ale to commemorate the 2ooth anniversary of the penning of the National A-nthem. We enjoyed Anthem-at Orioles games, while picking crabs (http://www.baltimoremagazine.net/2014h/local-beer­ pairings-for-crabs), and-most especially-during the Star­ Spangled Spectacular fireworks show, pictured.

Another summer favorite was the watermelon crush at The Food Market (http://www.thefoodmarketbaltimore.com/). We found this one while fighting the crowds at HonFest and stopping at Food Market's truck parked outside the restaurant. The combination of Green Mountain lemon vodka, watermelon puree, kiwi syrup, and crushed ice was a refreshing way to beat the heat and just a definitively beautiful cocktail.

Fall: When the chill of fall rolled in, so did the highly anticipated opening (http://www.baltimoremagazine.net/2014/g/io/bookmakers­ cocktail-club-opens-tonight) of Bookmaker's Cocktail Club (http://www.bookmakersbaltimore.com/) in Federal Hill. Though the spot has experienced some chef changes since opening, the bar program has remained strong under the helm of Ryan Sparks. One of the first cocktails we got to enjoy was The Federale with Espolon Blanco tequila, Becherovka (herbal liqueur), cinnamon, lemon, grapefruit, and a mint sprig. Enjoying spicy, aromatic flavors in the plush Bookmaker's space was fitting for many fall evenings. We also recommend the bar's cocktails on tap or anything combined with its house-made tonic.

This fall, we also got to explore some local wineries and distilleries in the area, including Millstone Cellars (http://www.millstonecellars.com/) in Monkton and Lyon Distilling (https://www.facebook.com/LyonDistilling) in St. Michael's. Both outfits are producing spirits for

the love of the craft and, in particular, we like Millstone's Bonfire-a spicy mead with wildflower honey-and Lyon's white rum, pictured, which has some sugar cane notes and a hint of molasses sweetness.

Winter: Hot cocktails can be sort of tricky. A lot of them are just boozy teas that we associate with getting over that nasty winter eold. But we think we discovered the ultimate exception in \Vit & Wisdom (http://www.witandwisdombaltimore.com/) 'shot buttered rum cocktail, pictured, right, with Pyrat rum and a concoction of brown sugar, butter, honey, vanilla, nutmeg, allspice, and cinnamon-that is all topped with house-made maple whipped cream. We find it hard to imagine anything more decadent this time of year.

Of course, we can't forget that Flying Dog Brewery (http://flyingdogbrewery.com/) had one of the most inspired holiday collaborations (http://www.baltimoremagazine.net/2014/11/5/flying-dog-partners-with-otterbein-for-holiday­ collection) by teaming up with Otterbein's Bakery (http://www.otterbeinsbakery.com/) to make cookie-beer pairings. Our favorite of the lot was the Roasted Peanut Brown Ale, which pairs with, admittedly, one of the best cookies on the planet. Washing down the Otterbein chocolate chip cookie with a sip of this 5-percent-ABV brown ale with nutty characteristics is like one giant candy bar experience.

Is that store-bought eggnog and generic brand of rum in your glass looking a bit lackluster? We thought so.

The good news is, you don't have to be a professional bartender or mixologist to improve your holiday cocktails. But, to give you a few ideas and recipes for Holiday entertaining, KNPR's State of Nevada thought it would ask two local professionals for some advice when · ~ ~ it comes to making cocktails.

Mariena Mercer, property mixologist for The of Las Vegas, has three festive beverages that you can enjoy at home this Holiday season. While, Jeff Grindley of Atomic Liquors, recommends a simple hot toddy to deal with the cool desert winters.

Recipe:

2 ounces of butternut squash puree

11/2 ounces cinnamon-fig-infused Four Roses Bourbon

1 ounce homemade pecan liquor topped with toasted marshmallow foam, or use a brand such as Praline Pecan Liqueur.

Assemble all ingredients; add ice; shake and strain.

Mercer said for a garnish just add toasted coconut shavings.

Immaculate Conception

Simply described as "I come bearing gifts."

Recipe:

1 ounce of Amaro Meletti Liqueur

1 ounce chai-infused Punt e Mes Italian vermouth

1 ounce Woodford Reserve Bourbon

2 dashes old fashioned bitters

Mist of Frankincense and Myrrh aroma.

Add all ingredients, stir and then strain into a 10 ounce martini glass with edible gold as a garnish.

And so it is that tomorrow, the day before Christmas, now also has the distinction of being ... National Eggnog Day (this follows on, surely, from National Soy Latte Day, lnternational Beans on Toast Week and Worldwide Creamed Corn Month). But let's face it, no one who isn't named Ebeneezer or Dick Cheney is going to grumble at an excuse to down more of the holiday season's favorite sugary glop> are they? Especially if there's plenty of rum and bourbon on hand to fi ll it with that special hol iday cheer-and perhaps a pint or two of Jeni's Splendid Ice Creams Middlewest Whiskey Eggnog on hand.

So, with the big day upon us, here is our exclusive guide to nagging it up in style. Let's just hope Santa leaves us a gym membership under the tree.

Heat milk with cloves, cinnamon, vanilla in a medium saucepan until almost to a simmer. Whisk egg yolks with sugar until thickened, slowly whisk in milk to temper. Return mixture to saucepan and stir over low heat for 3-5 minutes until slightly thickened. Strain mixture into a large mixing bowl, stir in heavy cream. Using a nutmeg grater or microplane, grate nutmeg into eggnog. When chilled, stir in rum and bourbon (add more to taste if necessary). Pour in glasses and garnish with freshly grated nutmeg.

CLASSIC EGGNOG

1 vanilla bean

4 egg yolks

2 eggs

25/8 cup sugar

3/4 cup cornstarch

1 teaspoon nutmeg

6 tablespoons bourbon

Pastry Cream:

3/4 qt heavy cream

4 sheets gelatin

2 puff pastry sheets (iox12)

Combine milk, sugar, vanilla bean, nutmeg in a large pot and bring to a simmer. In the meantime prepare the eggs and yolks and place in a bowl. Whisk in the remaining sugar until smooth and then the cornstarch. When the milk is ready, slowly temper into the egg mix. Return to pot and cook over medium heat constantly whisking until the mix is very thick and bubbling. Remove from heat and immediately whisk in the bourbon. Transfer to a plastic lined sheet pan and cover with plastic and let cool in refrigerator.

Preparing the Creme leger. Bloom the gelatin in ice water for a minimum of 12 minutes. Once the pastry cream is cold transfer contents to a large mixing bowl. Whisk until smooth and creamy and set aside. Whisk the heave cream to a stiff peak. Lastly take one cup of the pastry cream and heat over a double boiler. Once it is hot to the touch add gelatin and whisk smooth. Fold all components together until evenly incorporated. Cooling the puff pastry Place the sheet of puff pastry onto a parchment lined sheet tray and bake at 300 degrees F for 8 minutes, remove from oven and let cool. This is known as killing the puff". Once cool transfer to a cutting board and cut the puff into 4 1/2 x 1 1/2 rectangles. Return to a parchment lined sheet tray, place another tray on top so the puff will rise evenly. Place in a 325 degree F ove n fo r 45 minutes until fully cooked, Jet cool.

Final assembly: Once set transfer the creme legere to a piping bag fitted with a medium round pastry tip. Pipe 3 to 4 tubes of creme onto a puff rectangle coating the whole surface. Place another puff rectangle atop the first, pipe a second layer of creme and place the third puff rectangle on top Du st the top layer with powdered sugar and serve.

Fast-forward a few centuries to rum respectability - specifically, to Rob Burr's patio deck in Coral Gables, in South Florida.

From the waterfall pond to the tiki bar, Burr's deck sets a mood not for swilling rum, but for tasting it. Not the way spring-breakers chug Caf)tain Morgan, but the way cognac drinkers sip Napoleon: Not with Coke (or gunpowder) but neat, in a snifter.

Burr, his wife, Robin, and their son Rob Burr Jr. are one of the most expert teams of rum aficionados in South Florida. Their house is a virtual repository of the stuff. Says Rob Burr Sr., "There are probably a thousand er 1,200 rums sitting around here."

The Burrs appraise all of it, pouring their notes into the authoritative Rob's Rum Guide. Those tasting notes lay the groundwork for the annual Miami Rum Renaissance Festival, or Miami Rum Fest, which they'll host this weekend at the Doubletree Hotel near Miami International Airport.

The event, which drew 12,000-visitors last year, has become a central stage for what you might call the rum revolution - the recent ascent of high-end, premium rum. Don't let the name Rum Fest fool you. It's not a college beach bacchanal; it's rum for grown-ups, for people who know that most aged rums today are distilled as masterfully as fine cognacs and single-malt Scotches.

"We'd call it a renaissance," Burr Sr. says. AB he puts it, part of the festival's mission is to "change the perception of rum. It's perceived as ordinary when in fact it's fascinating."

The trend is most of all a Caribbean coming-of-age party. There's hardly a country or island in the basin these days that doesn't produce an upmarket aged rum - whose prices can range from $25 to $250 or more per bottle.

Among some of the best: Santa Teresa 1796 from Venezuela; Matusalem from the Dominican Republic; Bielle Rhum Vieux from a speck on the map called Marie­ Galante.

Many rum master blenders are now industry rock stars. Lorena Vasquez blends one of the most acclaimed rums, Zacapa, in Guatemala. "These rums," she says, "have become some of the Caribbean's most prized ambassadors. They're a marvelous reflection of our culture."

But if this is about a new boom in the spirits industry, it's also about a new bond between the Caribbean and South Florida. Very little rum is actually made in Miami. Still, as the Rum Fest suggests, rum reputations are made here. The city today is rum's premiere showcase, as evidenced by the more than Bo fine rums on the menu at Ortanique, a Caribbean restaurant in South Florida.

"It's almost a natural for Miami and South Florida to be the mecca of rums," says Joel Garcia, Ortanique's bar manager. "It's always been the depot for the Caribbean, whether it's the melding of people or the melding of spirits."

Despite the almost cult following these rums are building in the 21st century - reminiscent of the craze for The Glenlivet and similar silJ...")' Scotches at the end of the 20th - sales of premium rums aren't yet blowing away cognacs or single malts. But they are rising year after year. And ironically, that's partly because rum in general carries a younger, hipper cachet than those other spirits do.

That may help explain why spirits giant Bacardi of Puerto Rico released its own line of premium aged rums last year. The most expensive, called Paraiso, sells for $250 a bottle.

"This really for us was a critical move to share with the world what we believe rum can truly be," says Toby Whitmoyer, vice president for rum at Bacardi USA

Imbibing rum the way wine connoisseurs savor Bordeaux might sound pretentious. But spend a tasting session with the Burr family, and you do realize how rich and complex the spirit's character can be when it's not tied to a mai tai or when it's liberated from a Cuba libre.

The bounty their noses and palates glean from rum - from dried fruit to cola notes, pineapp1e to vanilla, chocolaty port to balsamic-y wood - seems to capture all the fl avors of the Caribbean.

Like the Burrs, Vasquez of Zacapa likes to point out that rum is a product of terroir - not just its prime material, sugar cane, but the soil, climate and faster barrel aging involved in the tropics. "To achieve those special aromas and flavors," Vasquez says, "we're as careful as cognac-makers are."

Makes sense. After all, many argue rum's real renaissance started in 1862, when French cognac-maker Dupre Barbancourt, heartbroken over his wife's death, emigrated to Haiti and helped refine the way rum is made.

Hence one of Rob Burr's favorite new bottles: "A special 150-year anniversary of Rhum Barbancourt," he says. "This is actually closer to cognac."

But it's rum. Vive la difference.

Better than rums costing twice as much Absolutely the best rum available in the US, the ONLY rum that approaches the quality of Arundel, from the Island of Tortola in the British Virgin Islands. Th is isn't from the Callwood Distillery but it's the next best t hing, since Callwood doesn't export.
