RAISING THE STEAKS

With its classic, unpretentious relaxed charm The Butcher Shop & Grill is where good food, wine and lots of laughter meet in a blend of what has become a South African institution. In the heart of Sandton, The Butcher Shop & Grill on Nelson Mandela Square is more than a 'steak place'. Look closely, as many regulars do, at the unmatched quality of the produce and outstanding value for money as well as at the menu where meat is as much a delight as fish, poultry and wine.

The Butcher Shop & Grill is the only steak restaurant to have received a coveted maximum of three stars in the Rossouw's Restaurants 2009.

Raising the steaks? Well yes, that's what we do for a living, and then some.

Hit rrunrh. a coolinq property ~ Picture yourself lying back in a steaming tub or stepping into a piping hot shower to soak away the tension of a tough day. W ith the world facing a global energy crisis, wouldn’t it be wonderful to know that every deliciously relaxing drop of warmth was a gift from the sun - pollution-free and requiring virtually no electricity?

O f all the amenities we take for granted, like lights and hot water, the biggest domestic energy guzzler on the planet is water heating. In fact, your geyser accounts for over one third of your monthly electricity consumption, And it’s burning more than just a hole in your budget - greenhouse gases that are emitted in the electricity generation process are also burning a hole in the earth's atmosphere.

Small wonder eco-minded home owners are turning to solar water heating. Energy from the sun is free and, above all, unlimited, so it places almost no burden on our planet’s natural resources. A 150 /solar water heater saves 4.5kWh of electricity per day, in turn saving 821kg of coal per yean It's also incredibly cost effective - with solar energy you can save up to 70% o f the electricity used by your geyser so your home installation can pay for itself fully in as little as seven years.

Solar water heating works on a simple principle - the sun’s energy heats up cold water passed through thin tubes. The water then expands which forces it through the pipes, into an insulated geyser fo r use as required. In some solar w ater heating systems, a small low-voltage pump assists the flow of water

Energy-efficient design means solar water heating systems require relatively little direct sunlight In sunny SA, there's more than enough solar energy on tap to ensure hot water even during overcast spells.

Solar w ater heating systems are easy to install (no builder's mess!) and they can be installed from scratch o r retro-fitted to existing hot water pipe systems. New geysers are recommended however - the purpose-built geysers in solar water heating systems keep water hot for longer than

‘I have been an employee of the Beverly Hills' Hotel for 45 years (even before the hotel joined the Southern Sun group), first as a waiter and wine steward, then as supervisor and now as maitre d'. I was only 19 when I was personally employed by Sol Kerzner, Apart from the excellent working conditions, it was always my interest to meet people from all over the world and find out more about them, which is why I have stayed here so long. ‘Many famous people have checked in over the years: Tom Jones, Cliff Richard, Engelbert Humperdinck in the early days, and now all our national soccer teams as well as the English football side. This is the favourite hotel of all the "big times". 'I have so many stories of celebrity guests, yet what was most exciting for me was when Sol Kerzner visifed the Beverly Hills earlier this year. He came to say hello to all the old staff. He remembers me well - I also assisted with the opening of Sun City all those years ago - and he asked me to show him round the hotel and point out all the old parts. I was overjoyed and It made me feel very special."

'I travel a lot for work and I have always chosen to stay in Southern Sun hotels. Mainly because I know the brand - when I was a child and my family went on holiday, my parents would only ever choose Southern Sun hotels - but also because of the level of service. 'it's difficult to describe exactly why I feel this loyalty towards Southern Sun, but if I had to I would say it's the personal investment the staff have in the guests. For example, at one point I was staying at the Southern Sun Grayston Sandton and I was supposed to go to a formal function. I didn't have cufflinks and when I mentioned this to the GM, he took his cufflinks off and gave them to me! Just like that. Another time, I fell severely ill while I was travelling. I went to the doctor and he told me I couldn't even travel home. I needed to be in bed. Once again the Southern Sun Grayston Sandton cam e to the rescue. They made up a room for me (they were fully booked at the time) and looked after me for four days. When I eventually got home, the housekeeper phoned me to find out if I was better. That blew me away. Their loyalty is unquestionable. ’And then of course, it's the little things: the quality of the pillows, the crisp sheets, the great amenities, the room service. 'I have a rule that when I stay at a hotel it must be at least as good, if not better, than staying in my home and I've always found Southern Sun's minimum standard is phenomenal,'

'I have had a long relationship with Southern Sun and what always strikes me about the group is how readily their staff members will go beyond the call of duty, whether you are at the Sandton Sun or the Beverly Hills Hotel, They really understand service excellence, the hospitality industry and what makes clients return again and again. I think this is why, when times are tough for everyone and the hotel industry is really feeling the pinch, they keep going and doing well, The group recently hosted the IPL, and they were fully booked when some establishments were finding it hard to fill their beds. 'I have often said that The Palazzo Montecasino is my home away from home. I regularly have my business meetings there or meet up with friends for lunch as it's not far from where I live and work. So it really made sense to hold my 35th birthday there. I wanted a celebration with a difference. 'We started on the Friday with a fantastic pyjama and book review party for my girl friends in the presidential suite. The book was The Shack by William P Young, this is a read that blessed my soul. In their rooms the girls were presented with special monogrammed robes that the Palazzo had made as a special gift. 'The chef created a truly eclectic and special menu from all my favourite things. So we had sushi but with an African twist, and we all tried our hand at making the sushi, which was great fun. Strawberries, candyfloss, and a cheese fondue were on offer. The p ie ce de resistance was my birthday cake made of cheese. Now I really love my cheese! Of course bubbly was flowing all the way. 'On the Saturday I had a magnificent luncheon on the terrace overlooking the exquisite formal garden and fountain. The guests were the 35 special people who have had the biggest im pact on my life. The theme was white, so everyone was dressed in white and the decor and table setting were all in white. It was a truly special day, one that I will remember for many years to come. 'I am a stickler for detail, I drive everyone (and myself) mad as I want things to be perfect. And the staff at The Palazzo went out of their way to make my weekend everything, I wanted it to be. This is why they have become like family to me.’

southernsun.com 77 DR ALI BACHER Former South African cricketer and cricket administrator

'I have stayed at Southern Sun hotels throughout my cricket career, both as a player and as an administrator. When I became an administrator, such was the excellent relationship between Southern Sun, cricket and myself, that I ca n 't recall ever signing a contract with them. We'd meet, shake hands and that was it. And it worked. They have some very special people who go the extra mile to ensure that all your needs and requirements, as a sporting team in particular, are met at their hotels. Individuals whose outstanding service I will never forget are Karen Kruger, Neil Fraser, Helder Pereira and Ron Stringfellow. 'One of the most memorable occasions was when they had the hotel rights for the 1999 Cricket World Cup. The branding inside the hotels was the best I've seen in world sport. Now I've stayed in Olympic hotels, but I've never seen branding inside a hotel. Such was their commitment to the Cricket World Cup. 'Where they have excelled, is that as sport becam e more professional, with bigger squads and more professional advisers staying with the teams, so they have advanced and met the requirements. They just know how to look after sporting teams. From a personal point of view, my family and I will only stay in Southern Sun hotels, without a doubt. They give us fantastic service and they really make us feel welcome.'

'I have seen my share of hotel rooms, but the staff at Southern Sun hotels have always gone out of their way to help us - and they back us as one of our official supporters. 'One occasion that stands out was when we arrived back in South Africa after winning the Rugby World Cup. We got together at the Crown Plaza where they presented gifts for all the guys and their wives or partners and kids. This was just another gesture that shows they are worlds apart from any other hotel group. 'My favourite hotel is the Beverly Hills in Umhlanga. I love being right on the beach. All the staff know my family so when we spend time there they always make us feel like royalty. The food they serve the Boks is also top- notch which makes sitting right on the beach while eating dinner that much more special.'

'I've worked with Southern Sun for close on 20 years now to provide excellent service to our clients and theirs. We do a lot with them. We've worked together on many events including the Cricket World Cup 2003, the IPL and, most recently, 2010, We depend on each other for many things and through our relationship we provide excellent service and good value to our clients and to each other. We share thousands of corporate clients and hundreds of thousands of travellers. 'The great thing about Southern Sun is that no request is too big or too small. We've had some very strange requests over the years and we have always been able to accommodate people with the help of Southern Sun. 'Their can-do attitude and the fact that they are flexible, always happy to help out and open to new ideas is very valuable. You'll never simply be passed along to another person if you have a problem, they work together to help you sort it out. They also push us hard. But this improves the service we can offer so, in the end, we all have a better product. 'In these times it is essential that you surround yourself with people you can trust and rely on. Southern Sun more than provides this kind of partnership for us.' PHOTOGRAPHY: SARAH WOODS/HSMimages, CHRIS LAURENZ, STEVE KARALLIS, GALLO/GETTYIMAGES, NICK BOULTON

outh Africa’s leading hotel group’s long-standing support of the fashion industry is well known. In June this year, , __ Southern Sun stepped up its commitment to the local industry by staging its own swimwear show at the Arise Africa Fashion Week. According to Southern Sun’s managing director Graham Wood, creations from the likes of Craig Port, Dax Martin Swimwear, LoveWaterLove and Tracy B, ‘reflect Southern Sun’s association with style and vibrancy’. The event is also aligned with Southern Sun’s dedication to entrepreneurship, job creation and economic development. As Wood says, ‘This is also a platform to create awareness, foster investment and build businesses’. It is 2 0 10!Time to celebrate Africa’s humanity, football lovers from across the globe arrive in the country for the FIFA World Cup™, their first point of contact - the Department of Home Affairs National Immigration Branch.

During the 2 0 10 FIFA W orld Cup™ an estimated 790 000 travellers are expected to visit South Africa over a four week period. This convergence of travellers will place an extra burden on already busy ports o f entry in South Africa. W ith this in mind, the Department o f Home Affairs (DHA) is implementing several measures to ensure that entering and leav ing South Africa is a simple, easy yet secure experience. The measures include the Event Visa, Dedicated Lanes, Advance Passenger Processing, Temporary Joint Border Clearance, Immigration Liaison Officers Concept and Mobile Border Units,Volunteer programme and Travel document readers.

South Africa will be the first country in the history of the FIFA World Cup™ to offer an Event Visa to nationals traveling from specific non - visa exempt African countries (Coun tries which still require visas to come to SA).The event visa will be offered to spectators with proof of purchase o f a FIFA match ticket. The event visa was successfully piloted during the FIFA Confederations Cup South Africa 2009 tournament at the South African embassy in Egypt. These visas are issued to qualifying travellers at no cost. Accredited FIFA delegates will travel visa free if they come from non-visa exempt countries.

Express Dedicated Lanes are designed to ensure that travellers arriving at our shores to participate in the event either as spectators, players o r FIFA delegates receive priority treatment upon arrival in South Africa .This concept is also supported by queue marshals/ volunteers who welcome and usher travellers to the correct lanes. These were also piloted successfully during FIFA Confederations Cup South Africa 2009 at ORTambo international A irport and Cape Town International Airport. The benefits of the dedicated lanes include:

• A reduction in traveller queue con gestion at Immigration points within International Arrivals Terminals • Faster processing of selected travel ler types and better management of increased volumes • Dedicated Immigration staff alloca tion at priority ports of entry • Improved assistance to travellers with the deployment of volunteers

home affairs Department: Home Affairs REPUBLIC OF SOUTH AFRICA Another measure being put in place is Advanced Passenger Processing, also de signed to process people arriving in South Africa faster

Temporary Joint Border Clearance: The Temporary Joint Border Clearance pro vides a mechanism to manage and facili tate the smooth flow of people through our land borders during high focus events. A successful pilot between South Africa and Mozambique has been in operation for some years now; this concept enables travellers to be processed within a con trolled and secure co-located facility. The primary objectives include strengthening o f high risk offshore control, ensuring that people have the right doc uments before boarding an aircraft, preventing boarding of travelers in possession of forged documentation and swapping o f travel documents and boarding cards after check in and proactive management of event related risk. The ILOs will form close relationships with foreign airline officials, immigration authorities, police, consular staff and other relevant official bodies to ensure proper coordination between them and Home Affairs' Immigra tion branch.

Another measure that the Department of Home Affairs is working on is the deployment o f Mobile Border Units.

How to influence people Time magazines 2009 Time 100 - The Worlds Most Influential People - included our former health minister Barbara Hogan and South Alrican artist William Kentridge. Of Hogan, Time says, 'To understand the dignity and power of Barbara Hogan, one must first have some understanding of what she is made of: profound experience, dedicated service to her homeland, unflinching courage, conviction and compassion. Then we look at how much she achieved in her relatively short term as health minister, and we stand up and applaud.' Kentridge earned his position from the video, theatre, painting and animation he has used to capture and its legacy.

Making the Lions whimper So while it was not a complete walkover, it felt really good to see the British & Irish Lions leave the country defeated. Our Springboks continue to make us tremendously proud to be backing them (they are the world champs after all). The British & Irish Lions supporters were understandably not as thrilled with the outcome and dirty play was shouted about loudly. So you can imagine our delight when former England captain Will Carling told a blog’s readers that they should stop whingeing about the results and hail the effort of both teams in what were some high quality rugby matches. As we go to print, the Tri Nations is about to start. The Boks have the advantage of the draw - here’s hoping we have more to shout about come September. ______I

But, wait, there's more... Our athletes are having a rather splendid year. Greg Minnaar won his third world title in mountain bike downhill racing, Cassius Baloyi won his sixth world title in , Brian Mitchell was inducted into the Boxing Hall of Fame, Tyla Rattray became a motocross world champion, and South Africa dominated the world surf-ski championship.
