USEFUL TIPS

• Wash before using: It is important to wash each knife before using it for the first time. Add 1/2 cup of vinegar to a sink full of hot soapy water, wash, rinse, and dry them. This initial washing removes any traces of oils or polishing compounds. • Knives should never be used for anything other than their intended purpose. They should NEVER be used as a screwdriver, can opener, box cutter, or any other type of . Misuse will damage the cutting edge and can be dangerous. Make sure that your customers are aware that attempting to cut through bones by hitting or pounding the top of the blade or otherwise misusing their knives will void the warranty. • Knives should be used with a suitable cutting surface. Even high-quality knives lose some of their sharpness through regular use, and unsuitable cutting surfaces such as porcelain or metal will blunt a knife prematurely. A good cutting surface, such as a wooden cutting board, should be easy to clean and sufficiently pliable.

KNIVES CHARACTERISTICS

The following knives have been specially selected to meet virtually any everyday cutlery need.

• Meat Cleaver (15 cm/6” blade): Designed to cut through bones and joints, the meat cleaver is the best choice for tough cutting jobs like cutting frozen that would easily damage lesser blades.

• Chef’s Knife (20 cm/8” blade): Ideal for dicing, chopping, and slicing. Vegetables, fruits, and meats can be quickly and easily cut into chunks, cubes, strips, and bias cuts. Chopping greens for salads or stir-fry, mincing nuts and candies, are easily accomplished using an even, rocking motion.

• Slicer (20 cm/8” blade): A long flexible knife for carving extra thin slices of boneless meat, such as roasts, hams, and poultry, and for cutting thin slices of cake, pastry, and cheese.

• Bread Knife (20 cm/8” blade): Made for cutting perfect slices of all types of breads, bagels, and pastries, or even soft fruits and vegetables like tomatoes.

• Fillet Knife (18 cm/7” blade): Although a chef’s knife, slicer, or butcher knife can be used to fillet a fish, these larger more rigid knives often leave behind the meat closest to the bone. The fillet knife, with its long flexible blade, is specifically designed for the task of easily separating delicate flesh from the bone with little loss of edible fish.

• Santoku Knife (13 cm/5” blade): Combines the duties of a chef’s knife and a vegetable cleaver. Use for precision tasks such as paper-thin slicing, mincing, and dicing. The ‘Granton edge’ release pattern (scallops on the blade) makes it ideal for slicing sticky foods like cheeses.

• Utility Knife (13 cm/5” blade”): Multi-purpose knife for everyday tasks such as slicing cold cuts or sandwiches, fruits, and vegetables. Good for jobs for which the Chef’s Knife is too large and the Paring Knife too small.

• Paring Knife (9 cm/4” blade): Designed for peeling fruits, and vegetables with ease. The sharp point removes blemishes from produce, eyes from potatoes, veins from shrimp, and the tops from strawberries. Useful for cutting decorative radish or cucumber rosettes; pickle fans, carrot spirals, and other fancy garnishes.

• Steak Knives (set of six) (13 cm/5” blade): The Steak Knives’ serrated blades slice through meats effortlessly, without mashing or tearing.

CARE INSTRUCTIONS

• Knives should be hand-washed immediately after use under warm running water with a little detergent and then dried carefully using a soft cloth. Knives should not be stored without being properly dried. • Elite Cutlery knives are NOT safe and should never be cleaned using an automatic dishwasher. • All instructions are available in the RW341 Use & Care booklet.

Knife Sharpening Advise your customers that it is important to keep their knives sharp for best results.

• The knife sharpener in the Elite Series Cutlery Set has two slots, one for routine slot #1 (carbon steel blades) sharpening, slot #2 (ceramic discs) and one for restoring the shape of the edge, slot #1 (carbon steel blades). • Slot #1 (carbon steel blades) should be used only if using the slot #2 (ceramic discs) does not sharpen the blade adequately. Note: Serrated knives, such as the Bread Knife and Steak Knives, generally do not need sharpening. slot #2 (ceramic discs)
