Supardiyono, M.Si, Akt) MOTTO dan PERSEMBAHAN ”Nothing you can do, but you can learn how to be you in time” (The Beatles) ”Ia membuat segala sesuatu indah pada waktunya, bahkan Ia memberikan kekekalan dalam hati mereka” (Pengkhotbah 3:11) iv ABSTRAK ANALISIS KEPUASAN DAN LOYALITAS KONSUMEN GUDEG (Studi Kasus Warung Makan Gudeg “Yu Djum” Jl.Wijilan No. 31) Adrianus Fitranto Wibowo UNIVERSITAS SANATA DHARMA YOGYAKARTA 2008 Tujuan dari penelitian ini adalah untuk mengetahui kerakteristik konsumen Gudeg “Yu Djum”, atribut kuallitas pelayanan yang paling menentukan konsumen dalam memilih Gudeg “Yu Djum”, mengetahui seberapa besar kepuasan terhadap fasilitas dan pelayanan Gudeg “Yu Djum”, serta hubungan antara apakah semakin tinggi tingkat kepuasan terhadap kualitas pelayanan akan semakin tinggi tingkat loyalitas konsumen. Penelitian ini berupa studi kasus yang dilaksanakan di Rumah makan Gudeg “Yu Djum” Jl Wijilan no 31 Panembahan Kraton Yogyakarta dari bulan Juli sampai Agustus 2008. Dalam penelitian ini teknik pengumpulan data yang digunakan adalah wawancara, dokumentasi dan angket berstruktur. Sampel yang digunakan adalah sebagian dari konsumen Gudeg “Yu Djum”. Sampel yang diambil berjumlah 100 responden. Metode analisis data yang digunakan untuk mengetahui karakteristik konsumen adalah analisis persentase, untuk mengetahui atribut kualitas pelayanan konsumen dengan teknik analisis prioritas kepentingan, untuk mengetahui tingkat kepuasan konsumen terhadap pelayanan yang diberikan dengan teknik indek kepuasan pelanggan dan mengetahui hubungan antara kepuasan terhadap loyalitas konsumen dengan teknik Korelasi Produk moment. Dari analisis persentase diperoleh hasil yaitu mayoritas konsumen adalah jenis kelamin wanita sejumlah 51%, kelompok usia 31- 40 tahun yaitu sebesar 47%, tingkat pendidikan responden perguruan tinggi 44%, kelompok penghasilan atau uang saku per bulan Rp.500.001,00-Rp.1000.000 sebanyak 33%, status pekerjaaan responden PNS atau ABRI sebanyak 28%. Dari hasil Indek kepuasan pelanggan konsumen Gudeg “Yu Djum” pada dimensi reliability, responsivness, assurance dan empathy berkisar antara 6 - 55 yang mengindikasikan konsumen puas,. Dari analisis korelasi produk moment diperoleh hasil bahwa kepuasan konsumen terhadap loyalitas adalah positif. v ABSTRACT THE ANALYST OF SATISFACTION AND LOYALITY OF CONSUMERS OF GUDEG (Case Study in Warung Makan Gudeg “Yu Djum”) Adrianus Fitranto Wibowo SANATA DHARMA UNIVERSITY YOGYAKARTA 2008 The aim of the research were to know identity characteristic of consumers Gudeg “Yu Djum, the attribute of service quality which very importance to consumers choice Gudeg “Yu Djum., to identity the level the satisfaction toward facility and the services of Gudeg “Yu Djum and to identity the correlation between the level of satisfaction and level of loyalty. The research was a case study at do in Gudeg “Yu Djum at wijilan street no 31 Panembahan Kraton Yogyakarta from July up to August 2008. The techniques of data collection in the research were interview, documentation and questionnaire. The data analysis technique used was product moment correlation. The result of the research were majority consumers were women, 31 – 40 years old, having income Rp.500.001,00 -Rp.1000.000, work as PNS are ABRI. from satisfaction service index it can be indicated that consumer were satisfy, and the correlation between satisfaction and loyalty was positive. vi KATA PENGANTAR Terpujilah nama Yesus, Maria dan Santo Yusuf, atas segala berkat dan karunianya yang telah diberikan sehingga penyusunan skripsi dengan judul ” Analisis Kepuasan dan Loyalitas Konsumen Gudeg Yu Djum” Studi Kasus Pada Warung Makan Gudeg “Yu Djum”. Henry Yuliando) TINJAUAN SOSIO EKONOMI GUDEG DAN PREFERENSI KONSUMENNYA DI KOTAMADYA YOGYAKARTA Stephanus Sri Hedy Agung Putra'), Wahyu Supartono"), Henry Yuliando") Abstract Gudeg is the most popular javanese food in Yogyakarta, which is divided into two types; wet and dry. The difference of them depended on their moisture content. Its moisture content caused differences on the product attributes. Aims of this research were identifying the socio-economic aspects of gudeg producers and measuring consumer preferences level. The research on the gudeg producer was conducted and analysed by using Bivariate Correlation and Joint Correlation (Partial Correlation) procedures. Based on the results, it could be stated, that the differ- ence types of gudeg influenced by profit, price and marketing area. Consumers research was conducted by using attitude index analysis. The results were, that dry gudeg lead attitude index by 0.655 and wet gudeg by 0.104. It meant that the consumers more preferred to consume dry gudeg than wet gudeg. Yogyakarta juga sangat sering dikunjungi oleh masyarakat Indonesia untuk berlibur. Kuliner-kuliner tradisi khas Yogyakarta diantaranya Gudeg , Mie Lethek, Sate Klathak, Jadah Tempe, Brongkos Jogja, Tiwul, Mangut Lele, Kipo, Oseng Mercon dan Sate Kere. Kurangnya pengetahuan masyarakat Indonesia terhadap kuliner-kuliner tradisi khas Yogyakarta yang seharusnya menjadi warisan budaya yang dilestarikan, menjadikan masyarakat hanya mengetahui gudeg sebagai kuliner tradisi khas Yogyakarta. Penyelesaian dari masalah adalah dengan membuat kampanye informasi dan menggunakan konsep AIDMA. Media yang digunakan yaitu billboard, internet, Media cetak, video, dan gimmick. Tujuan dari perancangan kampanye informasi ini adalah diharapkan adanya perubahan perilaku yang ditunjukan oleh target audience yang awalnya tidak mengetahui menjadi mengetahui dan dapat melestarikan kuliner-kuliner tradisi khas Yogyakarta. Perancangan ini menggunakan teknik Fotografi dengan spesifikasi Food Photography dengan menggunakan beberapa angle foto dan bluring background masing-masing makanan. When I was just a kid, I would be very confused whenever I watched adults encourage children on American TV shows to eat their veggies. I am not a vegetarian, but I have always loved eating my vegetables; they were always cooked so deliciously! It was not until I lived in the States, where my dose of vegetables could only come from bland boiled vegetables or raw leafy salads, that I understood why children would not prefer to eat healthily. Although with time I eventually adjusted to eating a healthy yet zesty salad, I would still take my tasty terong balado any day. Thus, I have listed a few of my favorite Indonesian vegetarian dishes. Vegetarians, I hope my choices do not disappoint! Let us begin with a local favorite – gado gado, an Indonesian salad of boiled vegetables and eggs topped with a tasty nut sauce. What makes gado gado different from Western style salads, however, is that there is more sauce than vegetable, meaning that each vegetable would be well coated with the nutty topping. Vegetables may include string beans, tempeh, potatoes, corn and cabbage. Gado gado is definitely worth a try, as it is practically an Indonesian staple. It is a dish that you can find in almost any vendor, whether that be a fancy restaurant or a hawker stall on the side of the road.

Di Indonesia khususnya di Pulau Jawa saja terdapat banyak jenis makanan khas di setiap daerah masing-masing. Sebagai contohnya di daerah Jawa Barat yang terkenal dengan makanan khasnya yaitu oncom, peyeum, karedok, dan sebagainya. Sedangkan di daerah Jawa Tengah yang terkenal dengan makanan khasnya yaitu gudeg, timlo, soto kudus, lumpia dan lain-lain. Dan di Jawa Timur Terdapat makanan khas yang terkenal bernama yaitu rawon dan rujak cingur. Diantara banyaknya variasi makanan di Indonesia terutama di Pulau Jawa terdapat juga variasi jajanan pasar khususnya Provinsi Jawa Tengah yang mempunyai jenis jajanan pasar yang terkenal yaitu pia bathok, jenang ketan, jenang sumsum, jenang kudus, dodol, ketan bubuk, jenang grendul dan lain-lain. Salah satu jenis makanan makanan yang diambil dalam topik pembuatan mesin untuk tugas akhir ini adalah jenang grendul. Jenang grendul dipilih karena salah satu pembuat jenang grendul ini meminta perancangan mesin pencetak yang selama ini proses produksi dilakukan secara manual yaitu dengan tangan. 1.2. Perumusan Masalah Di Jawa Timur banyak variasi jajanan pasar khususnya jenang grendul. Jenang grendul terbuat dari adonan berbahan dasar campuran tepung ketan dengan ketela yang dibentuk bulat dan dimasak bersama adonan jenang grendul yang dicampur dengan gula merah. Pembentukan bahan adonan berbentuk bulat ini dilakukan secara manual yaitu dibentuk dengan tangan, sehingga proses produksi memerlukan tenaga kerja dan waktu yang banyak.Keterbatasan produksi ini mengakibatkan rendahnya tingkat kuantitas produk jenang grendul.

Chinese migrants in Indonesia have in- troduced their food culture to Indonesians for some centuries and now Indonesians might find it difficult to recognize whether they are now lo- cal, fusion or Chinese food. The acceptance of Chinese food in Indonesia serves an example on how soft diplomacy and culture negotiation has completely succeeded. Chinese food has already blended with Indonesian culture and Indonesians nowadays are acquainted with. This study will use literature as main resources. Historical and anthropological approach will be used in analyzing the data. This paper tries to focus on three mains issues, which are the history of Chinese migration in Indonesia, the his- tory and acculturation of Chinese food in Indonesia and culture nego- tiation through food. In conclusion, the acceptance of Chinese food in Indonesia culture is part of the success of soft diplomacy and culture negotiation between Chinese migrants and Indonesian leads to the per- mission of other form of diplomacy.
