Konkol Submitted in Partial Fulfillment Of the Requirements For the Degree of Doctor of Education June 14, 2013 iii ABSTRACT Traditionally cooking is considered to be women’s work, yet the vast majority of professional chefs, particularly in the upper echelons of restaurant work, are men. These curious gendered patterns stimulated interest in delving more deeply into the gendered nature of restaurant work. Existing research on this topic has concentrated on the front of the house (dining room) but has not addressed the gendered nature of the male-dominated back of the house (kitchen).

AN ABSTRACT OF THE THESIS OF Patricia Louise MacAodha for the Master of Arts in Anthropology presented November 6, 1991. Title: Waitperson/Customer Interaction as an Example of Community. APPROVED BY THE MEMBERS OF THE THESIS COMMITTEE: Sharon A. Carstens, Chair Daniel J. Scheans Julie F. Nemer ,...-- This thesis draws from research done in a particular urban setting, and illustrates the foundations of a type of social structure called "respite community". "Respite community" is a specifically urban phenomenon which can be defined as temporal, ad hoc, face to face, an aggregate of people who seek temporary relief 2 from social stresses and support through socialized interaction. The model proposed for identifying the "respite community" includes, at minimum, the following seven components: 1. There is an aggregate of people who have in common at least one consistent meeting place where they gather on a regular (frequently daily) basis, and where they become acquaintances, then familiars, then participants in an on-going group.

  • Kitchen Confidential, He Prepares the Reader for the Grim Details Ahead
Name: ____________________________________ Period: _____ Date: _____ Sometimes a seemingly innocent profession isn’t always what it seems. In the intro to Anthony Bourdain’s book Kitchen Confidential, he prepares the reader for the grim details ahead. Excerpt from Kitchen Confidential By Anthony Bourdain Don't get me wrong: I love the restaurant business. Hell, I'm still in the restaurant business - a lifetime, classically trained chef who, an hour from now, will probably be roasting bones for demi-glace and butchering beef tenderloins in a cellar prep kitchen on lower Park Avenue. I'm not spilling my guts about everything I've seen, learned and done in my long and checkered career as dishwasher, prep drone, fry cook, grillardin, saucier, sous-chef and chef because I'm angry at the business, or because I want to horrify the dining public. I'd still like to be a chef, too, when this thing comes out, as this life is the only life I really know. If I need a favor at four o'clock in the morning, whether it's a quick loan, a shoulder to cry on, a sleeping pill, bail money, or just someone to pick me up in a car in a bad neighborhood in the driving rain, I'm definitely not calling up a fellow writer. I'm calling my sous-chef, or a former sous- chef, or my saucier, someone I work with or have worked with over the last twenty-plus years. No, I want to tell you about the dark recesses of the restaurant underbelly - a subculture 3 whose centuries-old militaristic hierarchy and ethos of 'rum, buggery and the lash' make for a mix of unwavering order and nerve-shattering chaos - because I find it all quite comfortable, like a nice warm bath.

  • Mike Rellergert Executive Chef Nomad Las Vegas
Mike Rellergert Executive Chef NoMad Las Vegas St. Louis native Mike Rellergert grew up in the kitchen making homemade pizzas and pastas with his Sicilian grandmother, along with working at a restaurant during his teenage years. Today, as executive chef of NoMad Las Vegas, Rellergert brings the same passion he had when cooking as a child to the NoMad kitchen by putting his own personal touch on dishes and connecting with people though food. Rellergert landed his first job at a local Italian restaurant in his hometown as a dishwasher at the age of 15 and within just six months, earned a position as a cook. He gained experience working in the kitchen for the next four years before transitioning into a more challenging role as a sous chef at Chez Leon, a classic French restaurant in St. Louis. His time working in the French kitchen taught him meticulous technique and attention to detail, which further instilled his passion to pursue an education in cooking and led to aspirations of becoming an executive chef. Rellergert began culinary school at L’ecole Culinaire in St. Louis in 2006 and simultaneously took on the role as chef de partie at An American Place by Larry Forgione. As he continued to work his way up the culinary ranks, he remained connected to those he met throughout his professional journey. A former colleague was working as a pastry chef in Manhattan and told Rellergert about the opening of NoMad New York. Intrigued by this new concept, Rellergert applied and was offered a position to join the opening team in 2012.
