INGREDIENTS PREPARATION FOR ROCKEFELLER MIXTURE 6 Large Shucked Oysters Heat oil over medium heat, add shallots and cook until translucent. Deglaze with chablis. Reduce until 50% of liquid remains in saucepan. Add spinach, heavy cream 2 Large Minced Shallots and key lime juice. Cook lightly until spinach is wilted and soft. Use immersion 2 Tbsp Olive Oil blender to combine ingredients. Mix until smooth and vibrant green. Add parmesan 2 Cups Chablis White Wine cheese and 1/2 cup of the Panko bread crumbs to thicken mixture and form a light 2 Cups Heavy Cream paste. Add salt & pepper to taste.
