Located in the Tarn departement of France - a 3hr drive south east from Bordeaux and about 70km north east from Toulouse - his tiny distillery produces what might very well be the most magnificent expressions of fruits liquor/sweet-wine and eau-de-vie. The man farms biodynamically 20 hectares (ha) divided as such: 3 hectares of vine dedicated to growing endemic grape variety: - 1.8 ha of Mauzac Rose - 0.5 ha of Prunelart - 0.7 ha of Folle Noire 2.5 ha of fruit trees: - 0.7 ha of Greengage - 1.3 ha of Pear trees - 0.5 ha of a field blend of fruit trees such as sour cherry trees, quince trees etc... 1.5 ha of truffle grove (and depending on the year, 5 ha of sunflowers and 4 ha of other cereals. The rest of the land is made of woods) The adventure started in 1967 when Laurent’s father started his one-man traveling distiller operation: while his dad had been growing some fruit trees for the family’s consumption, he made a living going from one village to the other, distilling the fruits small growers and families would have harvested from their garden.

Natural Wine is farmed organically and made without adding or removing anything in the cellar. No additives or processing aids are used, and intervention is kept to a minimum. They are unfined and unfiltered, resulting in a living wine with character and personality - sometimes with cloudiness and a slight effervescence. what about biodynamic? The idea behind biodynamics is that everything in the universe is interconnected, including the moon, planets and stars. Biodynamic farming is completely organic, but also follows a special lunar calendar. Additionally, biodynamic wine allows no ‘manufactured’ additions, even organic ones. For example, commercial yeast won’t be added to the wine, instead harnessing naturally occurring yeasts from the grapes and winery - the ultimate expression of terroir. ​ ​ The issue of... ​ ​sulphites Sulphur dioxide (SO2) is used by many winemakers to preserve wine and prevent oxidation. Natural wine has no added sulphur (although some may naturally occur). Apart from the fact that the idea of pumping chemicals into your wine is a bit unpleasant, the use of SO2 has been linked to allergic reactions, asthma and much worse hangovers. Green(er) Wine You wouldn’t want to eat badly reared meat or unsustainable fish, so why drink wine that is full of chemicals and bad for the planet? At Farmyard our wines are chosen with ethics and sustainability in mind. All wine has an impact on the environment, but, just as with food, there are ways to drink greener. The aim of the study was to modulate, through common viticultural practices, the volatile composition in these two molecules of Fer red wines from a temperate climate wine region with very cool nights, located in the southwest of France. Methods and results: Three viticultural practices (leaf removal 10 days after berry set, removal of lateral shoots, and delayed harvest 7 days after the control) were investigated in 2015 and in 2016. Rotundone concentrations up to 69 ng/L were found in experimental wines. IBMP concentrations were below perception level in wines from 2016 and below detection level in wines from 2015, a vintage with particularly hot climatic conditions between berry set and bunch closure.
