What about making a LIGHT WELLINGTON CHRISTMAS CAKE?
225g Self Raising Flour 225g Mixed dried fruit +rind of a large orange grated fruit 110g Local Butter 110g Caster Sugar 1 egg (suggest Margaret’s) 2 Tablespoons Milk 3 Tablespoons **Wrekin Ale 1 Teaspoon Cinnamon 1 Dessertspoon Demerara Sugar
METHOD Rub butter into the flour until the mix resembles breadcrumbs Stir in the caster sugar, dried fruit and cinnamon Gently mix the egg, milk and ale together Promote your local goods and services IN STORE Add the liquid to the dried ingredients and stir and fold to a soft consistency Put into a lined 2lb loaf tin and sprinkle with demerara sugar gently patted down Bake for 11/4 hours at 180degrees / 160degrees fan or Gas Mark 4 £10 Monthly Check that a skewer comes out clean and your cake is cooked. Allow to cool, remove from tin and serve sliced with the rest of the chilled Wrekin Ale.
