Wednesday, 10:30 a.m.: Outings As the four were getting to know one another they discovered that Thursday, 9:00 a.m.: Kal, Joe and Dora had all gone to the same school, in Tombstone, Professional Appointments Arizona. In addition, the three of them had lived, of all places, in Friday, 9:30 a.m.: Shopping a tiny town called Huachuca City, Arizona. If that was not enough to show how small a world it is, they also learned that Micki had served in the Salvation Army in Ketchikan, Alaska, where Joe had been in the Coast Guard and Fire Department. There is never a moment of silence when the four members of Hessler Heights Management Team get together. They enjoy each other’s company and have similar mindsets and management styles. There is excitement in the air with the anticipation of getting to know the new residents and enjoying a life shared together. Kal has been deemed the head of the household and his message to future residents is the same one he greeted Joe and Dora with years ago, “I sure hope you can make it in time for dinner!” Hawthorn Teamwork Makes the Dream Work! As the team at Hessler Heights prepares for opening, we have been receiving assistance from the entire Hawthorn Community. Whether it is ordering supplies, unloading and organizing inventory or just a quick check-in call, the Hawthorn Heart has been on full display. Allyson Terry was part of the Hawthorn team that came from Home Office to assist us in getting shipments unloaded and Allyson Terry showing put away. Allyson works in the culinary off her Easter treat! Communication in action! department in Vancouver, Washington. The Hessler Heights managers presented her with an Easter delight in order to show their appreciation. Teamwork in action! Staging area for culinary small wares

New Resident Spotlight Arlene was born and raised in Chicago, Illinois, which she now refers to as a “concrete jungle.” Since leaving Chicago, she has traveled to and lived in many states across the U.S. and has visited Ireland, Australia, Puerto Rico, Mexico, Costa Rica, and the Amazon. Traveling to the Amazon jungle is probably not on most people’s bucket list, but Arlene, a nurse for approximately 45 years, went there on a medical mission. Most recently, she has called Amissville, Virginia, in the foothills of the Blue Ridge Mountains, home. Arlene has had three different careers. She was trained and worked as a nurse in hospitals and intensive care units for many years. Her second career, as she calls it, was working as a Director of the Medical Unit in a corrections facility. She laughs when she explains that in training staff, she had to emphasize to not believe everything you hear about the aches and pains of the patients. Of course, this is contrary to what most nurses learn; however, often the patients at the correctional facility had ulterior motives in seeking medical attention. Finding Peace in Labyrinth Gardens Often, a garden is a tranquil place to get lost in your thoughts. For hundreds of years, labyrinth gardens have offered a space to do just that. A labyrinth is a single, twisting path that leads to a central point. Unlike a maze, a labyrinth is not designed to trick you with multiple turns that often lead to dead ends. Instead, walking along a labyrinth is intended to be a meditative experience. Since you don’t have to make any decisions on which way to go, you can simply focus on the rhythm of your steps or reflect on your feelings. Some of the earliest labyrinths were designed inside sacred buildings, with tiles on their floors inviting visitors to follow a path while contemplating faith and life. As labyrinths moved to outdoor spaces, many evolved into mazelike patterns. The past several decades have seen a renewed interest in true labyrinth gardens. Research from Harvard Medical School shows that walking a labyrinth can reduce stress and anxiety, regulate blood pressure and breathing, and even ease pain. To take advantage of these healing qualities, places including hospitals, places of worship, spas and playgrounds have incorporated labyrinths on their grounds. Some homeowners have built labyrinths in their backyards. Since the pathways can be created with plants, stones or tiles, each labyrinth garden is a unique spot for meditation. Features such as benches and fountains are often added to create a further sense of calm. Hessler Heights has included its own boxwood labyrinth garden in the shape of a nautilus on the grounds in the back of the building. We look forward to many contemplative moments with our residents.

Finally, throughout the years, Arlene has worked and continues to work as an artist. She began as a child doing paint-by-number kits and in school took a few courses. When her children were young, she did some paintings for her husband. As an officer in the Marines, word got around about her paintings. Before she knew it, Arlene was being commissioned by other officers’ wives to do portraits and various paintings. The momentum grew into art shows and more commissions and continues to this day. She works with all media, including watercolor, oil, acrylic and chalk. She enjoys painting everything from landscapes, seascapes and sunsets to whatever a client commissions. The accomplishments Arlene is most proud of are her three children — Christine, John and Monica — and her eight grandchildren. We can get by preparing meats, starches and veggies; however, are sometimes sadly forgotten. Sauces serve many purposes to any meal that you are preparing, be they sweet or savory. They might add a complementary flavor or texture to the main dish to help balance it out, take it to the next level or even add to the visual presentation to say the least. Texturally, you might consider the combination of a sweet, sticky fruit chutney alongside salty, charred meats or a slick garlic aioli on a crunchy crostini. Sauces might also enhance a dish by matching its flavor, rather than contrasting. This is a little trickier to do; it works best when the main dish is mildly seasoned — think of baked chicken and chicken gravy, or broiled white fish with anchovy butter melted over the top ... yum! Executive Chef Craig Alexis Sauces are also a lifesaver to overcooked meats. A dry chicken breast or fish fillet becomes edible again with a pat of compound butter melted on top, or covered in a cream sauce. That’s not to say we should aim for overcooked as an excuse to make a buttery sauce, but it’s a good trick to remember. In a nutshell, sauces make things fancier than they were before. Hopefully this article will assist you in becoming a “saucy” cook! Okay enough chitter chatter and let’s get started! We’ll begin with an uncooked, super easy sauce that goes great over grilled, roasted or baked meats and seafood and also goes well with boiled or roasted potatoes, steamed green beans and summer squash, and fresh sliced tomatoes. And, wowza! it’s stupendous on a simple cheese omelet. It’s a spicy Argentinian sauce called and there are endless variations: Chimichurri Ingredients: • 1/2 cup minced, packed cilantro or (or a mix • 1/4-1/2 teaspoon crushed red pepper flakes, of both) depending on your taste for the hot ‘n’ spicy • 6 tablespoons red wine vinegar • Optional: 1/4 cup minced onion (white, yellow, red, • 2 tablespoons olive oil or shallots) Instructions • 2 cloves garlic, minced (2 teaspoons) • Combine all ingredients and let stand at room temperature for at least 10 minutes and up to 2 • 1/2 teaspoon dried oregano hours before serving. • 1/4 teaspoon salt • This will keep refrigerated up to 48 hours.
