Chinese Executive Chef of Jade, Leong Chee Yeng, showcases his artistry in a series of Lunar New Year specials while new Executive Pastry Chef, Siddharth Prabhu, debuts a line of contemporary takeaway goodies.

From 22 January to 2 March 2018, dine on a smorgasbord of reunion lunches and dinners. This year’s highlights by Chinese Executive Chef of Jade, Leong Chee Yeng, include Prosperity Pineapple Tarts shaped like bulldog terriers, Poached Yellow Capsicum, Mushroom and Pork Dumplings, and a brimming Eight Treasures Pen Cai with 18 premium

Chef Siddharth Prabhu, who has recently joined The Fullerton Hotels Singapore as Executive Pastry Chef, will also debut a series of contemporary cakes at The Fullerton Cake Boutique – perfect for toting along when you’re visiting family and friends. The Sugee Pineapple and Coconut Cake (S$68^ per kg) features a semolina sponge layered with pineapple compote and coconut mousse while the Persimmon Maple Walnut Cake (S$68^per kg) carries similar nutty profiles with a persimmon pound cake studded with candied maple walnuts. REUNION DINING AT THE FULLERTON HOTELS SINGAPORE

Jade’s Reunion Set Menus

A celebration must-have, the Eight Happiness Gold Rush Yu Sheng is prepared with a lavish twist, featuring house-made Champagne Jelly with edible gold leaves to represent the ushering of wealth. Honey Pineapple or “ong lai” – literally translated as “prosperity has arrived” – is incorporated into the dressing, adding a sweet-sour balance to complement the freshly sliced Salmon. Priced at S$78* (for 5 persons and below), S$118* (for 6-8 persons) and S$138* (for 9-12 persons); orders should be made one day in advance. Take- away options are available.

Taking a leaf from the design of vibrant blue and yellow Chinese imperial robes, Poached Yellow Capsicum, Mushroom and Pork Dumplings are individually hand-folded from dough that has been naturally dyed yellow and blue from saffron and blue pea flowers respectively. They are stuffed with minced pork and green peas, then poached to plumpness, representing bags of gold. Priced at S$16* per person (3 pieces) or S$38* per portion (8 pieces).

Inspired by his hometown of Malaysia, Chef Leong simmers fresh Boston Lobsters with Rich Stock, then sears them over high heat with chilli and curry leaves to lend the crustaceans a lightly spicy yet aromatic touch. Cubes of pumpkin and yam are stir-fried into the umami sauce till tender for sweet-savoury textures. Priced at $88* per portion of approximately 700g of lobster.

Constantly seeking to improve this signature year-on year, Chef Leong has incorporated new additions into the Eight Treasures Pen Cai: Fuzhou-style fish balls are entirely hand- made with mackerel that has been beated, mashed and moulded, then stuffed with a savoury minced pork filling. These are combined with pork belly braised with five-spice and bean paste until fork-tender and 16 other ingredients, such as Roasted Duck, Poached Prawns, Ten-head Abalone and Dried Scallops. Priced at S$78* per person (minimum 6 persons are required for an order. A one day advance notice is recommended).

Jade’s 2017 Reunion Set Menus are priced from S$88* per person for a 5-course menu.

The Lighthouse Restaurant’s Marco Polo 4-Course Lunar New Year Menu

Like a modern day Marco Polo, The Lighthouse Restaurant’s Chef de Cuisine Carlo Marengoni stirs the nest with a deft fusion of Italian and Chinese flavours. Traditional chicken ragout takes an Asian spin in an appetiser of Tagliolini Orientali while mains feature a symbol of the popular Chinese saying 大鱼大肉 with Grouper Fish Fillet, Ginger, Garlic, Coriander and X.O. Sauce. The meat component is a Honey-Lacquered Pork Belly with Apple Purée and Onions Braised with Rock Salt.

The Lighthouse Restaurant’s Marco Polo 4-course Lunar New Year Menu is priced at S$118* per person for dinner.

The Clifford Pier’s Reunion Dinner Buffet and Weekday Set Lunches

Heritage cuisine at The Clifford Pier is re-interpreted for the eve of Lunar New Year with a full buffet offering on 15 February. Think Longevity Noodles, Prosperity Chicken Money Bags, Pork and Chive Dumplings and a Giant Fa Cai Yu Sheng Salmon so families dining together can still toss to tradition.

The Weekday Set Lunch is anchored on the offering of Mandarin oranges to relatives and friends. In Tempura Shrimp Fritters, fresh prawns are juxtaposed against the flavour of Orange-Sambal Glaze to usher luck and prosperity. Golden Mandarin Orange Crisps dress a Yuzu Mini Salmon Yu Sheng, while a house-baked Orange and Ginger Rum Baba are complemented with Red Date and Longan Compote for an auspicious sweet ending.

La Brasserie’s Josper Grill Specials

La Brasserie’s bistro fare dons festive ingredients for the new Dog Year. Tiger Prawns are accented by Chilli-Orange Glaze and Crispy Cereal Crumble, then fired in a Josper Grill over apple wood until perfectly charred and juicy. The repertoire stays Oriental with Cote De Bouef, a 500g teriyaki balsamic glazed rib-eye on the bone with fresh scallions and garlic confit.
