THE SPICE LIST THE STORY The seed was planted in 1995… THE FOOD BASKET was inspired by a taxi ride I took from Calcutta airport in 1995 on my first trip to India. I was overwhelmed by the fragrant aroma of spices and herbs that filled the air as the taxi drove through a bustling market on outskirts of the city. Leaning out of the window of a 1950s Ambassador taxi on that balmy evening, I inhaled the intoxicating mix of culinary spice and heat – and my passion for food was ignited. After many months of sampling the most flavoursome food in Mongolia, Tibet, China, Burma, India, Nepal, Pakistan, Iran and Turkey, I struggled to find any inspiring flavour in my food back home in Europe. So I purchased a spice rack and my obsession to create the perfect blends took flight. Today, my food is influenced not just from Asia, but from all over the world, from where the spices and other ingredients we use in our blends are sourced. He mentioned an unrelated walnut tart recipe he discovered during a training session he conducted in Pakistan. From a crowded handmade pottery vase, he pulled out orangewood hand-carved forks from a desert bazaar in Morocco and a spatula from London. He took down his mother's copper pot from a hanging rack. Near it is an Indian metal plate for heating chapatis. He brought the plate (called a tava) from India, where he was a Peace Corps volunteer in the mid-1960s. Before he left on his two-year stay, his mother, Virginia, made sure he had the necessary survival skills: cooking with basic ingredients. "She said, 'There are some things you've got to be able to cook all around the world. You can get butter, eggs and milk, probably, so you've got to be able to cook with those,' " recalled the 60-year-old who moved to Santa Barbara in 1999. His father, Don, was a master with sandwiches, soups and meats. An adventurous cook, his mother was forever exploring other cuisines. But it was egg custard and spinach soufflZˇ that she chose to ready him for the trip. In Central India, he taught the locals his mother's recipes. Molecular composition of recipes in a cuisine reveals patterns in food preferences. Indian cuisine encompasses a number of diverse sub-cuisines separated by geographies, climates and cultures. Its culinary system has a long history of health-centric dietary practices focused on disease prevention and promotion of health. We study food pairing in recipes of Indian cuisine to show that, in contrast to positive food pairing reported in some Western cuisines, Indian cuisine has a strong signature of negative food pairing; more the extent of flavor sharing between any two ingredients, lesser their co-occurrence. This feature is independent of recipe size and is not explained by ingredient category-based recipe constitution alone. Ingredient frequency emerged as the dominant factor specifying the characteristic flavor sharing pattern of the cuisine. Spices, individually and as a category, form the basis of ingredient composition in Indian cuisine. We also present a culinary evolution model which reproduces ingredient use distribution as well as negative food pairing of the cuisine. Our study provides a basis for designing novel signature recipes, healthy recipe alterations and recipe recommender systems. The name refl ects the pungent taste, which resembles a peppery compound of cloves, cinnamon and nutmeg or mace. Good with eggplant, most fruit, pumpkins and other squashes, sweet potatoes and other root vegetables. Combines well with chili, cloves, coriander, garlic, ginger, mace, mustard, pepper, rosemary and thyme. AAnisenise The aroma and taste of the seeds are sweet, licorice like, warm, and fruity, but Indian anise can have the same fragrant, sweet, licorice notes, with mild peppery undertones. The seeds are more subtly fl avored than fennel or star anise. Good with apples, chestnuts, fi gs, fi sh and seafood, nuts, pumpkin and root vegetables. Combines well with allspice, cardamom, cinnamon, cloves, cumin, fennel, garlic, nutmeg, pepper and star anise. BBasilasil Sweet basil has a complex sweet, spicy aroma with notes of clove and anise. The fl avor is warming, peppery and clove-like with underlying mint and anise tones. Essential to pesto and pistou. Good with corn, cream cheese, eggplant, eggs, lemon, mozzarella, cheese, olives, pasta, peas, pizza, potatoes, rice, tomatoes, white beans and zucchini. Combines well with capers, chives, cilantro, garlic, marjoram, oregano, mint, parsley, rosemary and thyme. BBayay LLeafeaf Bay has a sweet, balsamic aroma with notes of nutmeg and camphor and a cooling astringency. Fresh leaves are slightly bitter, but the bitterness fades if you keep them for a day or two. Fully dried leaves have a potent fl avor and are best when dried only recently. Good with beef, chestnuts, chicken, citrus fruits, fi sh, game, lamb, lentils, rice, tomatoes, white beans.

Many cold dishes, like the two introduced here, are extremely easy to make and can be made in advance, so the cook can concentrate at the last minutes, on the hot dishes that must be served fresh from the wok. Silken tofu with avocado Tofu or bean-based product is one of the most beloved sources of protein for many vegetarians. In this collection, I purposefully introduce a wide variety of bean-based foods, among which, silken tofu is easily the most delicate one. Ingredients: 7 oz Silken tofu 2 tbsp Light soy sauce diluted with 1 tbsp water ½ tsp Sesame oil 1/2 Perfectly ripe avocado, sliced. Directions: Turn the block of silken tofu out on to a serving dish. Cut the block into 1/8-3/8 in slices. Then push down gently so the slices lean towards one end of the dish. Pour over the diluted soy sauce and sesame oil.
