La variedad sinensis es de hoja pequeña, produce tés brillantes, frescos y malteados, y se cultiva principalmente en zonas frías de China, Taiwan y Japon. La variedad assámica es de hoja grande, produce tés con sabor suave, herbáceo, energético y malteado, y se cultiva bajo la sombra de arboles en regiones tropicales como India, Nepal, Sri Lanka y Kenia. Los tés más exquisitos son aquellos que provienen del brote y primeras hojas recolectadas manualmente en laderas montañosas de suelos ácidos, a 1800m de altura y de clima húmedo de 10º-35ºC de temperatura. La cosecha al amanecer durante la primavera y el otoño, producen los mejores tés del mundo. La diferencia entre el té blanco, verde, amarillo, oolong, negro y puh’er (té oscuro), no esta en la planta, si no en el proceso de producción. Nos referimos principalmente a las etapas de producción de té: secado, marchitamiento, oxidación, fermentación, entre otras. Cualquier otra infusión caliente diferente al té de Camellia sinensis es conocida como infusión, y proviene de muchas otras plantas. Además de más de 80 variedades de tés, en Tea & Nature también tenemos una variedad de infusiones y roiboos de buena calidad. Aunque hay una extensa plantación de té en las islas Azores, las únicas plantas para consumo comercial en Europa continental están en Galicia. Aunque actualmente hay muchos países productores de té negro, los provenientes de Assam, Darjeeling y Ceylon son los más Té negro famosos y de mejor calidad. El té negro es completamente oxidado y presenta una amplia gama de grados (clasificación). Comúnmente el té negro se consigue muy triturado en bolsas individuales que producen infusiones oscuras y muy fuertes, y que en algunos casos se necesita añadir leche y/o azúcar para consumir. Sin embargo, existen tés negros de hoja completa u hoja rota de altísima calidad que producen licores dorados y delicados con sabores y aromas frutales; por ejemplo, los de máximo grado SFTGFOP1 y GFBOP1. El proceso de elaboración de té negro se caracteriza por la ruptura de las enzimas de las hojas durante el marchitado y enrollado, para dar lugar a la oxidación completa. Posteriormente se secan y se clasifican las hojas (enteras o rotas) para ser envasadas para el consumo. Durante el proceso de oxidación se generan los polifelones theaflavinos (dan notas intensas en el sabor), seguidos de los thearubiginos (dan notas suaves y dulces en el sabor). Es decir, mientras mas largo el proceso de oxidación, mas suave, redondo y con mucho cuerpo será el té en boca. Beneficios para la salud La cantidad de compuestos con actividad antioxidante en el té negro puede ser ligeramente mayor al del té verde; sin embargo, al compararse con alimentos tradicionales, la diferencia es mucho mas impactante. Según estudios recientes, los sistemas respiratorio, inmunológico y digestivo del cuerpo humano se benefician cuando se consume té negro.     NEWSLETTER 4Q 2019 Page 1 Tea Exporters Association Sri Lanka 4Q 2019 SRI LANKA TEA PRODUCTION – JANUARY TO NOVEMBER 2019 Sri Lanka Tea Production for the month of November 2019 totalled 23.9 million kg, showing a decrease of 0.9 million kg vis-à-vis 24.8 million kg of November 2018. High Grown teas have shown a fairly significant growth YOY followed by Mediums, whilst Low Grown teas show a decline as against November 2018. The January-November cumulative production for 2019 of 278.1 million kg, however shows a marginal gain of 0.5 million kg against the volume of 277.6 million kg of January-November 2018. On a cumulative basis, Medium Grown teas have shown a growth, whilst Low Grown teas have remained static. High Grown teas, however, show a decrease compared to January-November 2018. The January-November 2019 cumulative CTC production totalled 21.6 million kg, showing a marginal decrease of 0.3 million kg when compared to 21.9 million kg of January-November 2018. On a cumulative basis, all elevations have shown a negative growth YOY. The summary of category wise tea production for the January - November 2019 period with comparative figures of last year is appended below.
