PREFACE. ‘ Nothing is so Lovely in Woman as her Study of the Household.' This work is designed to be a Guide, and it affords oppor- tunities of gaining information, especially in the Art of Indian Cookery. As the chief promoter of man’s happiness is woman, it should in be the hands of every Female Economist ; the most enlightened will find some useful hints in its pages. The Compiler, an Anglo-Indian, has had the advantage of intercourse with those best experienced in the subject, and is in- debted to several Anglo-Indian families, to whom he tenders his best thanks for the many rare and useful Recipes herein introduced. The store of useful information it contains makes it a very desirable Reference-Book, and a most valuable Gift-Book, i ^-The recipes have been carefully selected, and have been com- piled with the view of meeting the requirements not only of Residents in India but of English and Anglo-Indian Families at Home, who will find in it reminiscences of olden days. It teaches Habits of Economy, the way to turn everything in best account these are among the Household-affairs to the ; things which every Mother should teach her Daughters. X PREFACE. It is adapted for constant use, not merely for one year, but for many years ; a Compilation of permanent reference, an every- day Book in the hands of a careful House-wife. ‘ All Books of Cookery, all helps of Art, All critic learning, all commenting notes, Are vain, if void of genius thou wouldst cook !’ —Old Writer. CHAPTER I. ON DIET IN INDIA. THE Irishman and the Hindu can live and thrive on a dietary almost entirely vegetable—the one on potatoes, the other on rice — although inhabiting very different climates. But in both countries the amount of vegetable food required to sustain life is very great, especially in the colder climate. It has been proved that an Irishman wants many pounds weight of potatoes with milk to keep him in health. The quantity of rice con- sumed by the Asiatic, although less in proportion, is also very great. The three staple kinds of food are exemplified by bread, meat, and vegetables, and a man does not reach his full development of health and strength unless the three are blended in his dietary as nature evidently intended they should be blended. The un- due consumption of animal food is only permissible in intensely cold climates, in order, we presume, that the consumer may, by the organic combustion of its carbon and hydrogen, create the heat he requires to resist the bitter cold.

VEGETABLES: Ostia is famous for its cabbages, but we also have carrots (white), turnips, red and white onions, radishes, celery, leeks, mushrooms, beets, sorrel, mallow, truffles, chard, chick peas, broad beans, gourds, squash, broccoli, watercress, chives, spinach, lettuce, watercress, chicory, rocket, endive, fennel, artichokes, thistle, asparagus, olives and garlic. We also eat the green 'tops' of butcher's broom, clematis, rue, purslane, mallow, wild radish and even thorn. II. FRUIT: Ostia is famous for its melons but we also have figs, dates, apples, plums & prunes, pears, cherries, pomegranate, quince, grapes & raisins. More exotic are peaches, apricots and lemons. I have only seen an orange once, and I have never tasted one... they are extremely rare! III. FISH & SEAFOOD: sole, bass, mackerel, sturgeon, tuna, turbot, red mullet, anchovies, sardines, shark, eels, oysters, clams, lobster, octopus & squid. IIII. NUTS, GRAIN & PULSE: almonds, walnuts, pine nuts, hazelnuts, chestnuts, pistachio nuts, lentils, barley, wheat, spelt. Oh dear! I'm sure I've forgotten one or two... V. MEAT & GAME: goat & kid, mutton & lamb, beef & veal, pork, rabbit, venison (deer), boar, chicken, geese, ducks, pigeons, quail, peacock, little songbirds and dormice. Very fiddly to prepare, those mice! And of course snails. Some people say that if you feed them on mint-flavoured milk you get minty snails. Personally I've never found that to work. VI. DAIRY etc: goat, sheep and cow milk, yogurt, cream, soured cream, buttermilk, cheese, and eggs. VII. SPICES & SEASONINGS: olive oil, sesame oil, vinegar, fish sauce, honey, salt, peppercorns, myrtle berries, garlic, lovage, oregano, chervil, marjoram, bay leaf, thyme, mint, sage, rue, coriander, caraway seed, mustard seed, chervil, chives, cumin, dill, aniseed, fennel, parsley, saffron, rose petals, bay leaves, grape leaves, mastic and whatever takes my fancy.
