Marco Contextual En la presente investigación documental, se realizó una recopilación histórica del cacao y el chocolate. En donde se encontró que para las culturas prehispánicas el chocolate y el cacao era de gran importancia. El cacao era motivo de ceremonias religiosas, además se consideraba un producto medicinal, alimenticio y al mismo tiempo fue una moneda que se usaba para pagar tributos. A la llegada de los españoles al Nuevo Mundo, conocieron este producto, con el cual quedaron sorprendidos al ver el valor que tenía. Por esta razón Hernán Cortes decidió enviar al emperador Carlos V el tan preciado cacao. Al llegar a Europa, se le añadieron al chocolate diferentes ingredientes, que en el Nuevo Mundo no se conocían como el azúcar y la canela. De esta manera se fue difundiendo por toda Europa. México durante la época del virreinato exportaba grandes cantidades de cacao a Europa, pero a partir de la época de independencia la producción del cacao descendió de manera considerable, y en la actualidad no se ha podido restablecer la producción del cacao, ya que siempre ha estado ligado a las cuestiones políticas y económicas que sucedan en el país. 2 Introducción Actualmente Europa es el principal productor de chocolate, obteniendo la materia prima de África, este es considerado el principal exportador de cacao en el mundo.
