Unlike the trajectory of Western music—where the Catholic Church facilitated a linear, centralized, and well-chronicled musicological evolution—ancient Chinese music history is fragmented and incomplete. Dynastic cycles often led to hostile transitions of power and the destruction of the cultural vestiges from the preceding fallen dynasty. As a consequence, the elegant Yanyue twenty-eight-mode system of the Tang dynasty is scarcely known or understood in the West. The musicological history of the Yanyue modal system is disjunct and imprecise. This document will reconstruct the theoretical architecture of the Yanyue twenty-eight modes and unveil them for a Western audience. The Sui and Tang dynasties (581-907) reflect an extended phase of political stability and economic prosperity. The Tang dynasty in particular was a period of renaissance and artistic cultivation. It embraced migration and the blending of disparate cultural traditions. This document will reveal the Yanyue twenty-eight modes to be not merely a musicological artifact, but a sonically ornate and remarkably diverse tonal system whose structural organization reflects the heterogeneity of Tang itself and colors our image of life in ancient China.

    10 Chinese Food during COVID-19 in China and the United States A Tale of Two Countries Yong Chen and Clare Gordon Bettencourt “Remember this day forever,” reads a WeChat message posted by someone living in Wuhan on January 23, just one day before the Chinese Lunar New Year’s Eve. The solemnly succinct message has a short but shocking title: “Wuhan, sealed off.” Beginning at 10:00 a.m., all bus, subway, and ferry services in the city, as well as long-distance passenger trains and flights, were suspended. Another friend in her early fifties exclaimed, “I have never experienced this in my life.” No one has. The lockdown of a megacity of more than ten million people is unprecedented. During the fourteenth century, Venice ordered ships arriving from ports struck by the bubonic plague to remain in isolation for forty days, or quaranta giorni. The quarantine—a word derived from the previous Italian words1—in Wuhan would last for seventy-six days. When the citywide quarantine ended, the novel coronavirus had become a devastating global pandemic, resulting in 7,553,182 confirmed infections and 423,349 deaths and causing much more severe and widespread disruptions as of June 13. The ongoing pandemic has raised people’s awareness of the significance of food, generating enormous anxiety about various aspects of the food chain, from production to consumption. Klein School of Oriental and African Studies [email protected] Abstract To what extent do regional cuisines provide a set of principles through which ``outside'' flavours, foodstuffs and techniques may be safely incorporated? This question is explored through an ethnographic account of Cantonese cuisine in Guangzhou (Canton) at the turn of the twenty-first century. I focus on a historic restaurant in the city, where managers and cooks sought to innovate with the help of ``outside'' tastes, but without the restaurant losing its status as a ``traditional'' establishment. I argue that the incorporation of ``outside'' flavours onto local menus was not done on the basis of culinary principles alone, but that considerations of social hierarchy and cultural identity were equally important factors. Indeed, many of the dishes and techniques introduced contradicted the alleged principles of Cantonese cuisine. Such contradictions were down- played, however, through essentialized representations of Cantonese cuisine and its relationship to specific localities. Introduction The rapid proliferation of restaurants, teahouses and snack shops in Guangzhou (Canton) during the reform era of the 1980s and 1990s was hailed by local food scholars (e.g. Gao and Gong 1999) as a ``revival'' of the city's Cantonese cuisine and a ``restoration'' of the gastronomic reputation the city had enjoyed during the late Qing (1644±1911) and Republican (1912±49) years.2 This view was shared by people I met in Guangzhou in 1 This article draws primarily on my PhD research (Klein 2004), which was supported by an ESRC postgraduate research fellowship.
