Trails of the Cocktail Few cities can boast more historic significance in their cocktail culture than the Crescent City: birthplace of the Sazerac, Ramos Gin Fizz, the Grasshopper, the Hurricane, and (backed by one of the best apocryphal origin stories ever concocted) even the cocktail itself. In 1769 Spanish Colonial Governor of Louisiana Alejandro O‟Reilly issued a proclamation allowing one limonadier (lemonade seller), twelve taverns and six billiard halls to dispense alcoholic beverages. Closing time was ordained to be 8 pm, but bribes to the necessary officials extended the hours over the years. Rum came into the port of New Orleans and was taxed by the Spanish colonial government. Pat O‟s, Home of “The Hurricane” The “Hurricane”, the most popular drink at Pat O‟Brien‟s in the French Quarter, was created during World War II when liquor such as whiskey was in short supply. In order to purchase just one case of these preferred liquors, liquor salesmen compelled bar owners to purchase as many as 50 cases of rum, which was plentiful. In an effort to utilize the excess of rum, Pat O‟Brien's famous recipe emerged. The name came along soon after when a glass (shaped like a hurricane lamp chimney) was used to serve the popular rum cocktail. Don the Beachcomber (1907 — 1989), founding father of Tiki culture (Tiki bars, restaurants and nightclubs), enjoyed great popularity in the United States — mostly from the late 1940s through the mid-1960s. He and his friendly rival “Trader Vic” Bergeron are still remembered for their cultural influence.

  • Sazerac for Both of Us
“SAZERAC FOR BOTH OF US. WITH WHISKEY, NOT BRANDY.” — The Curious Case of Benjamin Button, 2008 THE FIRST COCKTAIL The oldest known American cocktail is credited to an enterprising pharmacist, Antoine Amédée Peychaud, who devised Peychaud’s bitters. Not surprisingly, it became an ingredient in his 1870s concoction. The French native established a pharmacy in the Vieux Carré, serving his libations in a coquetier, a French egg cup. Localization of the word resulted in mispronunciation — cocktail. This tale could be true, perhaps not. The word cock-tail was noted for prior to 1870 in a newspaper north of the Mason-Dixon line. Earlier it had been used in a different context, and rudely so, in London. It didn’t refer to our spirited coquetier. There, it was simply a word. Here it’s a tradition. A coffee bar down the block from Peychaud’s pharmacy was quickly renamed The Sazerac House to toast the cocktail. On everyone’s lips, the new drink was wildly popular, creating new Sazerac bars around the city and grins. While the Sazerac was our first, it was certainly not the last in an ever-evolving array of fancy mixed drinks and cocktails. We’re still smiling. These recipes demonstrate how the low, the high, and the mighty co-exist, sharing libations from absinthe to zombies. ~ Kit Wohl | 9 B I G E A S Y SPECIALTIES The close relationship between New Orleans and the cocktail hasn’t always been without conflict. Since the first cocktail and before, New Orleans’ pharmacists, bartenders and mixologists have had their creative way with alcohol, magically crafting and combining ingredients to amplify what we now call the cocktail, at times under strained circumstances.

  • Absinthe Minded
NEW ORLEANS NOSTALGIA Remembering New Orleans History, Culture and Traditions By Ned Hémard Absinthe Minded In the last decade of the eighteenth century, Dr. Pierre Ordinaire, a Frenchman living in Switzerland, created a digestive tonic containing medicinal herbs such as artemisia absinthium (wormwood), anise and melissa. Absinthium is Latin-French for wormwood (via the original Greek apsinthion, meaning undrinkable), hence the name absinthe (vermouth also comes from the French form of the German wermut, meaning wormwood). Even more incredible is that wormwood in Russian is chernobyl, a name made famous by nuclear meltdown. A business deal brought Ordinaire’s recipe into the hands of Major Dubied and his son-in-law, Henri-Louis Pernod, who opened the first absinthe distillery in Couvet, Switzerland, in 1797. In 1805, Maison Pernod Fils was established in Pontarlier, France. By 1888, additional financing came from Arthur Veil-Picard, an important banker from Besançon, France. The Pernod Fils brand name was retained, but the business name became Société Veil-Picard & Compagnie. Pernod Fils Posters through the years In 1871, Ariste Hémard, of Eure-et-Loir, France, founded Distillerie Hémard with the purchase of a distillery and the creation of a liqueur factory near Paris. By 1900, the enterprise produced various liqueurs, absinthes, spirits, syrups and preserved fruits. La Maison Hémard earned a gold medal at the Exposition Universelle (1900 World’s Fair in Paris) for its pale absinthe, and Hémard was chosen Mayor of Montreuil that same year. In 1915, a French national ban on absinthe crippled Pernod Fils and in 1917 Veil-Picard sold the plant at Pontarlier to Nestlé (after more than 110 years of operation).

AbsintheGREEN is back–better than ever Story by Paul Clarke Photographs by Stuart Mullenberg It’s a hot, muggy night in New Orleans, and in a restaurant near the French Quarter, a group of nearly 20 absinthe enthusiasts have gathered in a back room. Lou Rawls gently croons from the sound system as waiters bring in plates of hors d’oeuvres and a wine steward uncorks a black bottle of French absinthe. At the front of the room is a well-iced absinthe fountain, its glass bowl dewy with condensation.
