LEE A thesis submitted to the Graduate School-New Brunswick Rutgers, The State University of New Jersey in partial fulfillment of the requirements for the degree of Masters in Science Graduate Program in Food Science Written under the direction of Qingrong Huang and approved by ________________________ ________________________ ________________________ New Brunswick, New Jersey [May, 2010] ABSTRACT OF THE THESIS Effects of drying methods on the stability of 2,4-decadienal encapsulated in an o/w nanoemulsion By DIANA Y. LEE Thesis Director: Qingrong Huang The flavor industry has utilized many encapsulation methods in order to provide customers with stable flavors that maintain their integrity during various processing procedures. Savory flavors in particular have a unique hurdle to overcome, as they are subject to extreme temperature abuse, such as frying, baking, sautéing, and boiling. Highly sensitive compounds such as 2,4-Decadienal, that provide distinct characteristics to savory foods such as french fries and chicken, are particularly susceptible to change during these processes. Using oil in water nanoemulstions of diameters between 20-800 nanometers as well as various drying methods to encapsulate volatile compounds have been an exciting avenue for flavor encapsulation. The present research will focus on the stability of 2,4- Decadienal using oil in water nanoparticles of medium chain triglycerides (Neobee) in addition to multilayer encapsulation; spray drying and freeze drying. ii A slurry of 2,4-decadienal, maltodextrin, gum, Neobee and water were homogenized via high speed at 13,500 rpm and high pressure under 1500 bar to create a stable nanoemulsion. -
Mass Spectrometric Investigation of the Aging Processes of Ballpoint Ink for the Examination of Questioned Documents
MASS SPECTROMETRIC INVESTIGATION OF THE AGING PROCESSES OF BALLPOINT INK FOR THE EXAMINATION OF QUESTIONED DOCUMENTS INAUGURAL DISSERTATION For the degree of Doktor rer. nat. submitted to Justus-Liebig-University Giessen (Faculty of Biology and Chemistry) Céline Weyermann born on 13.03.1978 in La Chaux-de Fonds Switzerland.

These are the first measurements for two of the systems. We also present the earliest measurements of relative position for 17 others. We include orbits for six of the systems, two revised and four reported for the first time. For one of 0.1175 0.0079 the systems with a new orbit, G 161-7, we determine masses of 0.156 ± 0.011 and for the A and B components, respectively. All six of these new calculated orbits have short periods (between fiveand38years) and hold the promise of deriving accurate masses in the near future. -

I hope ya’ll’ve remembered your favorite coping mechanism for dealing with the long hot summers we have down here in the bayou state, or, at the very least, are making peace with the short nights that keep us from enjoying both a good night’s sleep and a productive observing/imaging session (as if we ever could get a long enough break from the rain for that to happen anyway). At any rate, we figured now would be as good a time as any to get the gang back together for a good old fashioned potluck style barbecue: to that end, we’ve moved the July meeting to the Sunday, 11 July at 4PM at HRPO. -
