Joseph Beuys (1921-1986), along with his contemporary, Dieter Roth (1930 –1998), pioneered this practice, probing concepts of energy, warmth, and transformation through the intelligent use of organic materials such as fat. But unlike Roth, who consistently advocated the unconstrained decomposition of his work, Beuys’ position on decay, change, and damage varied from statement to statement, and from piece to piece. As one conservator familiar with the artist’s work noted, in order to understand Beuys’ personal philosophy regarding conservation, ‘it would be necessary to read all his interviews and statements ... and even after this, one still might be restricted to speculation as to what he ... meant in this special case.’1 Unsurprisingly, museums housing Beuys sculptures and installations generally lack consistent counsel from the artist pertaining to preventive conservation, intervention, and restoration of his work. Together with codified conservation principles, artists’ statements and documentation (ideally, recorded at the time of acquisition, and at vital points in the work’s lifespan) greatly inform conservation decision- making. -

� � �� Cooking Terms and Techniques You may see these words in recipes you try. If you don’t know what a word means, you can use this list to fi nd out. Words are listed alphabetically. Some important ways of cooking have been printed in traffi c-light colors. RED tells you to stop and think before you use this method. It could make your food a RED food. Baking sweets, like cake or brownies, almost always makes a food RED. But baking a chicken breast could be YELLOW. Or even GREEN. It would depend on the sauce you use. The same is true for baking a potato. Or roasting vegetables. YELLOW cooking methods are healthier than RED. They use less fats, oils, or sugar. If you are careful, you could make a YELLOW cooking method GREEN. GREEN cooking-methods like poaching and steaming are the healthiest. They do not use fats, oils, or sugars. Ethan’s Scout Stew Recipe Ingredients 1/4 lb. - lean beef per Scout (Beef stew meat, hamburger, etc.) 1 - medium-large potato per Scout (chopped to bite size) 1 - chopped large onion (yellow, Spanish, white, red - you choose) 1-2 - chopped carrots per Scout 1-2 - chopped celery stalks per Scout 1 - packet of Onion soup mix or beef stew mix 4-6 strips of bacon cut up or a few Table Spoon's of any cooking oil Various spices to taste (Season salt, salt, celery salt, pepper, paprika, bay leave, etc.) Equipment Dutch oven or Large mess kit pot Instructions 1.) Heat pot or Dutch oven. 2.) Add bacon and cook until done. Leave the bacon in the pan. This is now the oil needed to brown the beef and keep everything from sticking (Alternately use a few Table Spoon's of any cooking oil). 3.) Add beef and cook until brown on all sides. 4.) Add about a 1/4 of the potatoes and briefly brown. (The potatoes contain starches that will help naturally thicken the sauce). 5.) Add packet of onion soup mix or beef stew mix and just enough water to cover ingredients. 6.) Cover and boil (simmer if possible) for 30 minutes. 7.) Check flavor and season as required. 8.) Add remaining ingredients and a cup of water. 9.) Cover and boil (simmer if possible) for 30 minutes. 10.) Remove cover and check consistency. If it is watery leave cover off and boil for another 15 minutes or add a little flour or Bisquick to thicken the sauce. -
