INTRODUCING Bubble waffles A popular treat from Hong Kong, bubble waffles are also called eggettes or egg puffs. The waffle batter is cooked in a special mould, and the honeycomb-like structure results in crispy edges and soft, chewy ‘bubbles’. A little custard powder is added to the batter to make them taste sweeter.
