    1 MOM’S AMERICAN CHOP SUEY Serves 6 to 8 By Dennis W. Viau; my mother’s recipe. One of my relatives asked me to document my mother’s recipes because she died more than 20 years ago. Her recipes would be lost if not written down. She was not a great cook, but this is one of my favorites. It is not a sensational recipe, but it is delicious comfort food. I grew up with my mother’s American Chop Suey. It is probably made throughout the United States with different variations and called by different names. One person from Cajun country said it is called goulash there. A friend from Texas said his mother made it with bell peppers and called it s’ghetti and beef. Yet another person says it’s beef-a-roni. In New England we called it American Chop Suey. The origin is obviously Italian, being made with macaroni and ragu. How it gained the name chop suey, which is an American creation of cooked vegetables sort of Chinese in style, is beyond me. My Italian mother made it often and it wasn’t until I figured out she caramelized the onions that I was able to duplicate her recipe. Ingredients: 2 tablespoons olive oil for frying ½ large or 1 medium (10 to 11 oz./280 to 310 g) onion; chopped 1 pound (454g) lean ground beef 2 cups (527g) marinara sauce Salt and pepper to taste Optional: 1 bell pepper; chopped 1 pound (454g) elbow macaroni or other small dry pasta Parmesan or Romano cheese for garnish Directions: Heat the oil in a large skillet and sauté chopped onion until it changes to a rich golden color, 20 to 30 minutes, reducing the heat to low if necessary toward the end of caramelization.

    Reminiscences - My Life’s Adventures By James Baur INTRODUCTION People tell me I should write about my sailing adventures all the time. I don’t think they are especially noteworthy and I also don’t think I’m a very good writer but I’ll give it a try and let people see for themselves. I figure I’ll write for a half hour a day and see what happens. I’m now in George Town on Great Exuma Island and I’m stuck here for the winter. I could think of many places that are a lot worse to spend 5 or 6 months. This might be a good place to add that I never wished to risk my life doing all the things I did. Each adventure was read about, carefully planned and I felt relatively safe. In reading a book about Teddy Roosevelt exploring the River of Doubt he said: “I have already lived and enjoyed as much life as any nine other men I know; I have had my full share, and if it is necessary for me to leave my bones in South America, I am quite ready to do so.” I would never make such a statement. A kid in class (I was a 6, 7 and 8 th grade teacher in a Staten Island public school) once asked how we knew the Bible was true.     \>o?~7 i The book is finally done. Yippee! January 2011 I hope whoever has a copy of this edition enjoys all the recipes. There are plenty of family recipes and many fond memories. Included are recipes from my beautiful Grandma Lococo. An excellent cook and baker. Losing her recipes is what inspired me to put this book together. There are also my mother’s (Mom LaFranca’s) recipes, another excellent cook. Try these dishes out. I am sure you will agree they are delicious. We have many friends’ recipes that are equally delicious and I encourage you to try those too. I will forever be grateful to my wonderful friend Meryl for putting up with the ongoing editing. Meryl, without you this book would still be in the beginning stages. It is close to ten years now and she happily made the corrections and adding more recipes over and over throughout the years. She is a special lady. Thank you Meryl and thank you Garry for not getting irritated when Meryl spent so much of her time on the book. I appreciated you sharing her with me. Much love to all. Mangia!
