While surrounded by all of this glorious food, Yann loved practicing the fine arts of painting and sculpting. It was eventually suggested by his family that pastry would be a wonderful way to express his artistic talents and desires and be in keeping with the family tradition of fine cuisine. So…by integrating a passion for food and creativity, the family’s first (and only) Pastry Chef was “born.” In the beginning of his career as a Pastry Chef, Yann worked at and with some of the top names in French Pastry including Lenotre, considered to be the best pastry shop in France. Yann flourished in his art and decided to give America a taste of his creativity. He arrived in New York City in Opus #208 F a n t a s i a # 0 2 6 Chocolate Raspberry Dome #224 1973, worked at Dumas and with Chef Maurice Bonté. He then made his way to Denver, Colorado and began a six year run at Le Petit Gourmet Catering, the premier caterer in Denver. He returned to New York as Pastry Chef Silky chocolate praline sabayon with two Almond dacquoise filled with raspberry Chocolate sabayon filled with raspberry layers of sprinkled hazelnut chocolate coulis topped with exotic mousse. coulis topped with bittersweet chocolate for the world-famous Tavern on the Green restaurant, delighting patrons for the next four years. However, during dacquoise. sabayon. this time, Yann saw an emerging need for quality, wholesale French Pastry as fewer and fewer culinary students were choosing pastry. Symphony Pastry fills a growing industry need… Out of a desire to assist restaurant pastry chefs in providing quality French pastry to patrons, Yann opened Symphony Pastry. He decided to inspire these chefs with the delicious foundations for their creative expression with his top-quality ingredients, combined in mouthwatering and visually pleasing ways! The chefs could then creatively “finish” these pastries and present them to their patrons plated in extraordinary fashion. Yann loves the creativity of his trade, and loves helping Pastry Chefs by bringing them to an even higher level. You’ll find only the absolute best ingredients in Symphony Pastry products: imported chocolate with a minimum of 68% “cocoaliquor,” Tahitian vanilla beans, imported fruit purées, heavy cream and pure butter. Yann will also create custom pastry upon request -- if you can envision it and “taste” it, Yann will make it for you! • Baker's Dozen Guide
Facilitator Guide 1 Get ready! As the game facilitator, you have 5 easy tasks to get the most out of your game. You can play the game too, but keep in mind, this may expose you to hints as you give them to other players. 1. Reserve a space to play and decide on teams beforehand. 2. Set up the game materials. 3. Start the game. 4. Be the hint master. 5. Lead the post-game discussion. 2 Reserve a place to play the game. This game can be played in one large room or in multiple smaller rooms with table space for each team. Just make sure each team has a laptop with internet or a cell phone so they can access the game site to enter their final answer. If you’re playing with all of your teams in one large room, seperate teams as much as possible to avoid eavesdropping. Split teams into 3-5 members each. Ideally, each team will have 5 people. We recommend splitting up friends, office teams, or departments so people can work with others they don’t interact with day-to-day. Pro Tip: Assign the teams in advance so the game runs more smoothly right away. 3 Set up the game materials. Give each team one of the pink Baker’s Dozen boxes, some pens, and make sure each team can access the game site. Website link is below and is given in each box. When you're ready to start, set an 80 minute timer. If you don’t have access to the game site: At the end of 80 minutes, read the correct suspect and victim located at the back of this guide.

Food Baking desserts without flour TEXT BY LlNDSY VAN GELDER PHOTOGRAPHS BY EARL CARTER JUST AS CRANBERRIES taste good when it's not Thanksgiving and Fourth of July lemonade can soothe the palate year-round, flourless desserts can per form not only at Passover but also long after the seder. They're a category of sweets unto themselves, distinctly dif ferent but definitely able to hold their own against their starchier cousins. Perhaps part of their lack of four season popularity is semantic. The phrase flourless dessert reminds us not of what's in the dish, but of what's missing. Even if it doesn't sound quite as sad as Oliver Twist's bowl of gruel, it also doesn't necessarily set taste buds atingle. And yet flour-less can be more. Whether it's a cake, cookies, a tart, or a dacquoise, a seder dessert can be chockablock with seductive flavors such as dink chocolate, honey, espresso, apricot, berries, coconut, va nilla, or cinnamon.
