It is fairly simple to make, but without some basic understanding of the ingredients and the process, things can go wrong. Ask my students— they sometimes experience anger and frustration when they are learning to make ganache. But ganache is so delicious that it should never be the cause of stress. Follow these instructions and you should not have any problems. BEFORE YOU BEGIN Get out the following equipment and allow all of the ingredients to come to room temperature: Digital scale, set to metric weights 1 large chef’s knife 1 small microwave-safe bowl or ramekin 1 small rubber spatula 1 medium microwave-safe bowl 1 paring knife 1 medium saucepan Plastic wrap 1 medium rubber spatula 1 digital thermometer 1 small stainless steel hand whisk 1 immersion blender Read this recipe through twice from start to finish. NOTE: For this small amount of ganache I like to use a rubber spatula. For anything larger a whisk is your tool of choice.

Understand and Demonstrate: 1. The different mixing methods of breads and rolls, cakes and cookies, short dough’s. 2. Rolled-in doughs (Danish, Puff Pastry, Croissant, ect.) 3. Custard cookery (Creme Brulee, Pastry Cream, ect.) 4. Pate a choux (Cream puffs, Eclairs) 5. Basic cake decorating techniques Each student will rotate during the term to each of the following stations: 1. Bread 2. Laminated Pastry Doughs 3. Cakes 4. Short dough/Gluten Free Dietary Needs 5. Custards 6. Rounds The amount of total time in each station will vary by the number of weeks per term. On average, 1 to 1 ½ weeks per station each term. Students must execute the daily production in an efficient manner making sure to have bread and desserts ready for lunch service, 11:00 a.m. Santiam Restaurant; and 10:30 to Cafeteria. Students are responsible for cleaning the Bakery on a daily basis. They are also responsible for minimizing waste by finding uses for leftovers and products found in the walk-in and reach-in. BAKERY CLEAN-UP Will be expected to go through daily cleaning requirements to ensure quality of our establishment and sanitary conditions of the bakery. You can play the game too, but keep in mind, this may expose you to hints as you give them to other players. 1. Reserve a space to play and decide on teams beforehand. 2. Set up the game materials. 3. Start the game. 4. Be the hint master. 5. Lead the post-game discussion. 2 Reserve a place to play the game. This game can be played in one large room or in multiple smaller rooms with table space for each team. Just make sure each team has a laptop with internet or a cell phone so they can access the game site to enter their final answer. If you’re playing with all of your teams in one large room, seperate teams as much as possible to avoid eavesdropping. Split teams into 3-5 members each. Ideally, each team will have 5 people. We recommend splitting up friends, office teams, or departments so people can work with others they don’t interact with day-to-day.
