Spicy Bacon Chicken Romaine Lettuce Wraps

Ingredients
Spicy Mayo Sauce:
● ¼ cup mayo ● ¼ cup sour cream ● 2 Tablespoons hot sauce
● apple cider vinegar
Seared Marinated Springer Mountain Farms © Chicken Thighs:
● 5 Tablespoons Spicy Mayo Sauce ● ½ - ¾ teaspoon salt (to your taste) ● 4 each Springer Mountain Farms © chicken thighs, boneless/skinless
Plating:
Option A
● 4 each large romaine lettuce leaves ● 5 Tablespoons Spicy Mayo Sauce ● 2 each bacon strips, 1” cubed ● ⅜ cup red onion, julienned ● ¼ cup cheddar cheese
Option B
● 4 each flour wraps (optional) ● 1 each head of romaine, cut into ¼” strips ● 2 each bacon strips, 1” cubed ● ⅜ cup red onion, julienned ● ¼ cup cheddar cheese
Preparation
For the Spicy Mayo Sauce: 1. In a small mixing bowl, combine all ingredients and mix until well integrated 2. Set aside temporarily
For the Seared Marinated Springer Mountain Farms © Chicken Thighs: 1. Next, in another mixing bowl, add thighs, Spicy Mayo Sauce, and salt (as needed). Mix well.
2. With the grill pan over high heat, grill marinated chicken for 10-12 minutes on each side or until the internal temperature hits 165F. Using tongs, place onto a clean cutting board and allow chicken to rest for 3-5 minutes. 3. Now with a clean knife, slice chicken into strips and set aside for Plating
For Plating: 1. In a skillet, render bacon out until they are crispy, remove them from the pan and allow it to cool. 2. Once bacon is cool to the touch, use a chef knife or a pair of scissors and cut the bacon into 1” chunks and set aside until Plating 3. Now choose your own adventure: 4. Romaine Lettuce Wrap - Option A (steps 9-13): 5. On a large plate, lay the romaine lettuce leaves flat where the leaves are curving upwards 6. Place a 3-4 chicken strips on top 7. Top with cheese, bacon, and red onions as desired 8. Now drizzle Spicy Mayo Sauce and additional hot sauce (optional) 9. Flour Tortilla Wrap - Option B (steps 14-18): 10.On a large plate, lay the romaine lettuce leaves flat where the leaves are curving upwards 11.Place a 3-4 chicken strips on top 12.Top with cheese, bacon, and red onions as desired 13.Now drizzle Spicy Mayo Sauce and additional hot sauce (optional) 14.Serve and enjoy!
