Vin Santo Pg - Real Nice Wines - There has always been an Italian way and then the other way. For an Italian immigrant in America in the 1950s the community was self-sufficient. There was a bread man, a coal man, an ice man, a fruit and vegetable man that serviced the neighborhoods. It wasn’t about going to the store it was about the goods coming to you. The wine program at Formento’s is based on that same ideal of personal service. We want our wine stewards and sommeliers to be your wine men and women, helping you make your way through more than 300 selections available.     Sangiovese, Malvasia Bianca and Trebbiano. Golden amber color. Intense and persistent aromas. Villa di Vetrice Vin Santo del Chianti Rufina Riserva starts its history in the specially designed “Vinsantaia,” a space under the roof where the grapes are hung from rafters to dry from the harvest until December. The Vin Santo is then sealed into small barrels (“caratelli”) for a minimum of ten years. The wine that is left after the long aging time (typically only 2/3) is then carefully separated from the lees and bottled. Long overshadowed by its sister appellation, Chianti Classico, Chianti Rufina is now emerging as the top subzone for the production of Sangiovese. As one Italian wine writer put it recently, Chianti Rufina is “Chianti in montagna” or “mountain Chianti.” In other words, Chianti Rufina is the highest point in the entire Chianti appellation. Altitudes there allow winemakers to create wines with remarkable aging potential, wines that will retain their freshness for decades. The Grati family have been growing grapes and olives in the Rufina hills for five generations. Their two estates, Vetrice and Galiga, cover an astounding 1,389 acres, of which 247 acres are under vine. Only 15 miles from Florence, the landscape is classically Tuscan, though considerably cooler than the plain.

Massa è una città della Toscana nord-occidentale, situata allo sbocco della valle del Frigido, a 65 m sul livello del mare alle falde occidentali delle Alpi Apuane, a circa 5 km dal mare (mar Tirreno). La città è sovrastata da un colle sulla cui sommità si erge il castello Malaspina che domina tutta la piana circostante. Il territorio comunale ha un'altitudine minima pari al livello del mare ed un'altitudine massima di 1 891 m sul Monte Tambura. Massa si estende su una pianura alluvionale ma la parte più estesa del territorio è montana. Le Alpi Apuane fanno da padrone in questa parte di territorio boscoso che nelle vette più alte diventa roccioso. Dopo la chiusura delle principali fabbriche operanti nella zona industriale, l'economia locale si basa principalmente sul "terziario". Pubblica Amministrazione, Commercio e Servizi garantiscono le principali fonti di reddito della popolazione locale. L'assenza di opportunità occupazionali per i più giovani, ha originato un flusso migratorio verso le principali città italiane. Il settore del turismo rappresenta una buona opportunità di lavoro, anche se limitatamente al periodo estivo. This agreement between Canada and the European Community is the result of bilateral negotiations which took place from 7 November 2001 to 24 April 2003 on the basis of a negotiating mandate adopted by the Council on 1 August 2001 (Doc. 11170/01). The agreement comprises arrangements for the reciprocal trade in wines and spirit drinks with a view to creating favourable conditions for its harmonious development. 2. The agreement specifies oenological practices which may be used by producers of wine exported to the other Party, as well as a procedure for accepting new oenological practices. The Community's simplified system of certification will be applied to imported wines originating in Canada. Canada will not introduce import certification for Community wines and will simplify the extent of such testing requirements as are currently applied by provinces, within a year of entry into force. Production standards are agreed for wine made from grapes frozen on the vine. Concerning production standards for spirit drinks, the agreement provides that Canada will adhere to Community standards for its exports of whisky to the Community. 3. Procedures whereby geographical indications relating to wines and spirit drinks of either Party may be protected in the territory of the other Party are agreed. The current "generic" status in Canada of 21 wine names will be ended by the following dates: 31 December 2013 for Chablis, Champagne, Port and Porto, and Sherry; 31 December 2008 for Bourgogne and Burgundy, Rhin and Rhine, and Sauterne and Sauternes; the date of entry into force of the agreement for Bordeaux, Chianti, Claret, Madeira, Malaga, Marsala, Medoc and Médoc, and Mosel and Moselle.

The bunches are then hung to dry for at least three months. They are then pressed, and the must is fermented and aged in contact with oxygen in small oak and chestnut barrels (25l and 50l) called caratelli for at least five years. Ageing Five years in small oak and chestnut barrels that hold 25 litres In the glass An amber coloured dessert wine with aromas of honey, hazelnuts, dried figs, and apricots. The wine is sweet with a nicely retained acidity for a balanced complexity. Combined with food A wine that goes well with desserts such as vanilla ice cream with warm cloudberries and the typical Tuscan almond biscuits, cantuccini. The wine is also perfect with a piece of blue cheese. About the winery Terreno is located in the heart of the Chianti Classico, just outside the village of Greve in Chianti.     The farmers you will meet in our list make their wines with a deep respect for the soil where their grapes come from, and the living biodiversity of their vineyards. They work to preserve and pass along the traditions and culture of their local land and communities where the wine is produced, keeping them alive. They care about their vines and grapes, only following natural ways of farming, because a “healthy wine” comes first from “healthy agriculture”. All use at least organic practices (although many winegrowers are even stricter in their methods than what is permitted with organic labeling), and follow biodynamic principles, which is a deep connection between the winegrower and nature. The same respect they apply in the vineyard is then continued into the cellar. These wines are made with natural fermentation, using native yeasts, and adding little to no Sulphites at all. They are un-fined, and un-filtered. As a result, our wines are vibrant, alive, and memorable difficult to forget! The Farmers’ wines you are about to relish are not simply made by winemakers that respect. They are made by nonconformist, defiant mavericks that we are proud to call “artists”, apostates and rebels for whom “respect for Earth” is not a marketing claim, but a way of life.
