Malic Acid Test Kit , the secondary fermentation of wine, is a method of reducing total titratable acidity by adjusting the relative concentration of L-malic and L-lactic acids, softening the wine and allowing it to develop mellowness and full-body. This process also results in enhanced microbiological stability. Residual Test Kit The Accuvin Residual Sugar Tests test only the reduced in primary fermentation, and . Reducing sugars in wine consist of hexoses (mainly glucose and fructose) and pentoses (mainly and ). Pentoses are not fermentable by wine yeast. T Noirot/Liquor Quik Update T Noirot in Nancy, France closed their doors for renovation last fall with a scheduled reopening of January 2005. Well, they haven't reopened yet. Therefore, we are transitioning our cordial extract line from T Noirot to Liquor Quik.

Liquor making is as old as civilization itself. In fact, the recipes and techniques haven't changed much since the Middle Ages. Carefully selected seeds, herbs, fruit and essential oils are macerated or distilled and then fortified with alcohol and sweetened. Winemakeri Inc., producers of Liquor Quik, has sourced the best essences from Northern Europe, where the 'old world' style of extraction is still very much a treasured are. These natural ingredients are then blended and bottled in an old-fashioned glass collector's bottle. Because no artificial preservatives are used, some ingredients separation or settling may occur. Most Liquor Quik essences have a shelf life of five years or longer under cool storage conditions.

2005 Vinifera Wine Grapes from the Lodi Region Bacchus & Barleycorn, Ltd. is once again excited to announce the availability of California Vinifera wine grapes. Participation in this program allows you the opportunity to produce premium wines from fresh vinifera grapes for less than the price of typical table grapes. The grapes are picked, chilled and shipped immediately by refrigerated truck to Bacchus & Barleycorn. These select grapes are available by the ‘lug’, approximately 33-36 pounds per ‘lug’, or in six gallon pails of field crushed and pressed juice which is ready to ferment. The date of delivery to Bacchus & Barleycorn is determined by weather and field conditions. The grapes this year look wonderful, but the crop is not as abundant as in resent years. At this time it appears that the grapes may mature a week later than usual this year. Grape orders must be placed by noon September 23. We are anticipating a late September delivery. Please remember we are working with Mother Nature so availability and dates are subject to change. We need as much notice as possible, so place your orders now.
