The downside, at least for me, is that some of these ingredients are about impossible for me to find here in my small town in the US - I'd have to drive a couple of hours to the city to find some of the ingredients if I wanted to cook them. Welcome to my website. It's a beautifully laid out book that is a pleasure just to look at and read. If you want to use it as a recipe book, the recipes by chef are listed at the back. The panna cotta turned out very well--the recipe stated lavender could be used, which I did as heather is not readily available in the US. Yet, the potato came to Ireland relatively late, only becoming a staple for the poor in the 18th and 19th centuries. After that you can not help but looking through the cookbook to see exactly what makes this one special. The photography in this book was gorgeous, the recipes all sounded incredible, and I loved getting a tour of Ireland through different restaurants, and their dishes. They are simple to follow and the photographs make a yummy accompaniment that will warm the heart of even the pickiest of foodies. Search Search.     Irish Cuisine 1 Corned Beef & Cabbage Ingredients: • 5 lb Corned-Beef brisket • 2 Whole cloves • 2 Bay Leaves • 8 Medium Potatoes, pared • 1 Medium cabbage, cut in wedges • Chopped parsley • 1 Clove Garlic • 10 Whole black Peppers • 8 Medium Carrots, Pared • 8 Medium yellow onions, peeled • 2 lb Butter Directions: Wipe corned beef with damp paper towels. Place in large pan, cover with water. Add garlic, cloves, black peppercorns, and bay leaves. Bring to boiling. Reduce heat; simmer 5 minutes. Skim surface. Cover pan; simmer 3 to 4 hours, or until corned beef is fork-tender. Add carrots, potatoes, and onions during last 25 minutes. Add cabbage wedges during last 15 minutes. Cook vegetables just till tender. Slice across the grain. Arrange slices on platter with cabbage. Brush potatoes with butter, sprinkle with chopped parsley. 2 3 Irish Chocolate Cake The "Irishness" of this lovely chocolate cake is thanks not only to the wonderful liqueur used in the filling, but also to a certain, very Irish, ingredient in the cake mixture itself, which contributes to its moistness. The paper will explore the pig in Irish cuisine and culture from ancient times to the present. The paper will discuss the pig in Irish literature and mythology; outline the role the emergence of the potato had on domestic pig keeping, and trace the rise of commercial processing in the nineteenth century to the present day.
