Torcolato Breganze DOC 2011 W I N E D E S C R I P T I O N Torcolato is made entirely from handpicked Vespaiola grapes that have been slightly affected by botrytis, a noble rot that adds complexity to this luscious dessert wine. Before fermentation, the grapes are dried for four months in a traditional method that involves winding the bunches around twine and hanging them from the ceiling. These hanging clusters form a twisted rope; thus explaining the wine name "torcolato" which, in local dialect, loosely translates as "twisted." T A S T I N G N O T E S Brilliant gold in color, Torcolato offers rich, spicy aromas of baked pears with hints of honey, vanilla, cinnamon, nutmeg, and hazelnuts. On the palate, it is sweet, without being cloying, and full-bodied with vibrant acidity. F O O D P A I R I N G Torcolato is perfectly enjoyable on its own but also pairs well with desserts like the crispy oversized cookies from the Veneto called “fregolata,” and aged cheeses like the local specialty Asiago Stravecchio.
