Soul is more important than anything, and soul is expressed as a trinity of family, soil and artisanality. i “Within every effort there has to be calm,” she recites for him. “Always, in every pose, you have to stop just before the effort becomes pain.” “Sometimes I think…a bird, for example,” he says. “Yes, what about it?” “To fly, it has to keep flapping its wings, right?” “Definitely,” she agrees gravely. “I’m not talking about gliding,” he says fussily, and her ear opens a little at the sound of the new word. “There are birds that glide without making any effort, but I’m talking about a bird that has to make an effort to fly up.” “Okay.” Nili shrugs, wondering where he himself is flying with this. “And a bird that lives, say, for a year? Two?” “Let’s say.” “And all that time it has to make an effort with its wings, otherwise it’ll fall?” “Definitely.” “But maybe once, like one time in its whole life, it happens that it can fly up high, the highest — for maybe a whole minute — without making any effort at all with its wings?” She leans forward, shrinking the crease between her eyes, sensing something approaching. “And how exactly does that happen?” He takes on a mysterious expression. “It gets it from the air.” “I don’t get it.” “Like once in every bird’s life, the air lets it fly up without making any effort.” She blinks. What is it with these aerodynamic theories all of a sudden? But he’s very serious and focused. “It’s like . .” He searches for an example, his fin- gers moving, pulling something from the air. “It’s like, say . a holiday bonus, like the air is giving it a bonus. A discount. Once in a lifetime.” “Oh.” Nili laughs with sudden comprehension. “And does it know, the bird? Does it understand?” He falters. “That’s what I keep wondering. `Cause if it doesn’t understand, then it’s like the air’s efforts are wasted on it, no?” “I guess so,” she answers, delighted. “And if it does understand, then . No, that can’t be . No. It must not understand, `cause it’s just a bird, with a bird brain. Sure.” He gets excited; now that he’s made up his mind, his face lights up. “It’s something the air does just for fun!” From the great relief on his face she guesses how long the question has preoccupied him. “It doesn’t even realize it at all! Just that suddenly it feels light, but it’s the air that decides: Okay, now you. Playing with its birds, you see?” Do I see? It’s easy! We write the order, you take the wine, we cash the check. What’s not to like? In all seriousness, I have spent the past several years actually writing about 15% of all the D.I. orders I receive, so I thought I’d formalize it. This is for peo- ple who want the wines but don’t have the time to hack through my Amazonian jungle of quivering prose. Here’s what you do: • Give me a budget, and/or the number of cases you wish to receive. • Tell me how to proportion the order; Rhines vs. Mosels, what proportions at which price points, how much Kabinett vs. Spätlese vs. Auslese, etc. • Tell me if you want any Liter wines for floor-stack, any sparkling wines, in fact tell me generally if you want a conservative order or a high-wire order filled with lots of weirdo wines. • Tell me if there are wineries which have done well for you in the past, or which have not. And away I go. I will create an order proposal for you, you’ll look it over and tweak and twiddle it, and send it back in the form that you wish . I promise this: knowing that you’ve bought on trust from me, I will make DAMN sure that every wine I send to you is KILLER WINE. I can’t risk your being anything less than really impressed with every cork you pull. The last thing I want is for you to think I fobbed something off on you. I will write the HIPPEST possible order within your guidelines. We call this the E-Z method of flash-buying. It works. If you’d like my help, I’m standing by to give it. If not, I shall pout, and taunt you for the pitiable order you wrote yourself. Who needs that kind of trouble? vi I felt like Charlemagne. Dan Fishman is the winemaker, who in 2007 worked at Calvert Woodley Fine Wine & Spirits in DC. He makes some of the most interesting California wines we have tasted in a long time. Production ranges from 25-115 cases so there is not much to go around, but they are worth seeking out. Vineyard: Mokelumne Glen Vineyard in Lodi, CA. Viticultural ​ ​ practices include cane pruning (seldom used in the Lodi area) and expanded vertical trellis, and a dual irrigation system utilizing the most favorable benefits of both drip and sprinkler. Grapes harvested prior to full maturity for fresh rose acidity. Vinification: Clusters were pressed directly after harvest, ​ squeezed very gently, only using about 60% of the total potential juice to ensure light color and delicate flavors. The wine was then fermented with native yeast in old oak barrels, and ultimately transferred to a used 500L puncheon for aging. Malolactic fermentation was prevented in order to preserve the beautiful, fresh acidity. Ageing: Aged 3 months in barrel. ​ ​ Everything else you want to know about this wine: The wine was bottled without fining or filtration. For this ​ reason it often throws a sediment, or even so-called “wine-diamonds,” the crystals of tartaric acid that form when the wine is chilled.

    2013 Dornfelder Unconventional and Iconoclastic Cambiata is not your average California winery. We are a little more unconventional and iconoclastic than our compatriots around the Golden State. I launched Cambiata in 2002 after making wines for other people for nearly two decades. My intention was to produce distinctive bottlings that go beyond the Franco triumvirate of Bordeaux, Burgundy and Rhone. Today, we are vinifying a handful of compelling wines from some of California’s scarcest grape varieties including Albariño, Tannat and Dornfelder. We also make limited quantities of Pinot Noir and Chardonnay from the Santa Lucia Highlands. Enjoy. What The Hell? Walk past the rows of meticulously manicured Pinot Noir and Chardonnay to the top of the McIntyre Estate Vineyard and you’ll find a single acre of strange-looking vines bearing long, loose clusters of pitch black berries. “What the hell?” you mumble to the wind. “What vintner would have the cajones to plant Dornfelder in the Santa Lucia Highlands?” Turns out, we would. We figured if the grape loves Germany so much, it should thrive in the cold, windy climate of the Salinas Valley. Kissing Cousins Dornfelder, related by marriage to Pinot Noir, is the second-most planted red grape in Germany. When grown in the right location and made with labor-intensive, artisan practices, it can produce a rich, age worthy, red wine that offers incredibly juicy aromatics and luscious flavors. Just like our Pinot Noir, the wine was fermented in open top fermenters with frequent punch downs of the cap. It spent approximately 14 months in 100% French oak barrels (40% new) prior to bottling.

He had to take over the “reigns” at an early age in 1967 after his apprenticeship at the Langwerth von Simmern estate, and even in those early days, he realized that only healthy soils could allow the cultivation of fine wines, and began with interrow crops while modernizing from horse to special light trac- tor. The estate has been owned by the Schneider family for 7 generations, and today at vintage time, three gen- erations are at work. Certain varietals from Germany, Austria Russia, Hungary, and Armenia, as well as some common French varieties such as Pinot Noir and Pinot Gris can produce excellent fruity wines in western Washington. Selection of the right clone is important and knowing the heat units of your site will greatly aid in the selection of which varieties to grow. The cool maritime region of western Washington is on the very low end of the spectrum with respect to the number of growing degree days (GDD) needed for ripening the more common wine grape cultivars. Although the Puget Sound region has a long growing season in terms of frost free days, mesoclimates within the area range from below 1200 GDD to 2200 GDD. The Washington State University Mount Vernon Northwestern Washington Research and Extension Center (WSU Mount Vernon NWREC) research site is located at 12 feet above sea level in the Skagit Valley floodplain, 3 miles from the Puget Sound. Since 2002, annual GDD averaged 1693; in 2003 there was a spike in GDD of 1965.
